From Kraft -- great meal to throw together using stuff I always have in the pantry!! Original recipe says that this makes 10 servings (1 cup each), but when using this as a main meal, there is no way my family could get 10 servings out of it!! I have reduced it to six servings, but judge accordingly :)

1 (24 ounce) package Velveeta shells and cheese dinner
2 (14 1/3 ounce) cans chili with beans
1 large green pepper, chopped
1 large red pepper, chopped
1 (8 1/2 ounce) package cornbread mix

Steps:

  • PREHEAT oven to 375°F Prepare shells and cheese dinner as directed on package.
  • Stir in chili and peppers. Spread into 13x9-inch baking dish.
  • Prepare the cornbread batter as directed on package; spoon evenly over chili mixture to within 1/2 inch of edges.
  • Bake 25 to 30 minutes in preheated 375 degree oven, or until top of cornbread is golden brown and wooden pick inserted in center comes out clean.
  • Serving Suggestion -- a little extra shredded cheese, or some sour cream! If you like it a little spicy, use hot chili with beans.

This is a variation of a chili recipe in which I use Chicken instead of ground beef. I usually make two batchs and freeze individual servings in 1 cup containers. I usually use them up in lunches.

2 large onions, coarsely chopped
1 green pepper, cut in 1/2-inch pcs
2 -3 chicken breasts, cut to 1-inch pcs
1 lb ground chicken
4 stalks chopped celery
4 garlic cloves, chopped
3 tablespoons olive oil
1 tablespoon chili powder
1 (28 ounce) can crushed tomatoes
2 (14 ounce) cans red kidney beans
3/4 cup tomato paste
1/2 cup water
1 tablespoon Tabasco sauce
1 teaspoon salt
2 tablespoons parsley
2 cups sliced mushrooms

Steps:

  • In large pan, over medium heat, cook meat in 2 tbsp olive oil until browned on all sides and ground meat is cooked thru.
  • Add onion and green pepper and cook until soft.
  • Add remaining ingredients, except the mushrooms, stir and bring to a boil.
  • Reduce heat and simmer for 90 minutes
  • Add mushrooms after 1 hour.
  • After 90 minutes remove from heat and place in single serving containers and freeze.

Yum! Lots of ingredients but LOTS of flavor is the result! I must love chili...I think this is the third or fourth recipe I have posted!

3 tablespoons corn oil
2 lbs skirt steaks, cut into 1/2 inch cubes
2 lbs pork sausage
10 garlic cloves, minced
4 jalapeno peppers, seeded and finely diced
2 medium onions, coarsely chopped
2 tablespoons ground cumin
1 tablespoon ground coriander
2 bay leaves
5 tablespoons chili powder
1 tablespoon paprika
2 teaspoons oregano
1 teaspoon sage
1 bell pepper, diced
2 stalks celery, diced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can roasted chilies, finely chopped
2 cups black beans, fully cooked and drained
2 cups pinto beans, fully cooked and drained
2 cups kidney beans, fully cooked and drained
2 (12 ounce) cans beer
2 cups beef stock
2 tablespoons fine cornmeal or 2 tablespoons masa harina

Steps:

  • Place a large cast iron skillet over medium high heat until hot but not smoking. Add the oil and lightly brown the meat. To avoid overcrowding the skillet, brown the meat in 3-4 batches.) Transfer the browned meat to a large dutch oven. Discard all but 3 tbsp of fat from the skillet.
  • Reduce the heat under the skillet to medium and add the garlic, onion and diced jalapeno pepper. Saute for 2 minutes stirring often.
  • Add the cumin, bay leaf, coriander, chili powder, paprika, oregano and sage to the skillet, stirring well to coat the onions etc with the spices. Continue cooking for another minute, stirring frequently for avoid scorching.
  • Add the bell peppers, celery, crushed tomatoes and roasted chiles. Stir well with a wooden spoon, scraping the bottom and sides to loosen bits stuck to skillet. Transfer contents to the dutch oven.
  • On medium high heat, add the beans, beer and beef stock, stir well and bring to a boil. Reduce the heat to low and simmer anywhere from 20 minutes to 2 hours. To thicken the chili, stir in corn meal or masa harina and simmer.
