2 Tbsp. olive oil
2 Tbsp. unsalted butter
1 yellow onion, finely chopped
3/4 cup finely chopped carrots
1/2 cup finely chopped celery
8 oz. baby bella (cremini) mushrooms, sliced
4 garlic cloves, minced
1 cup dry wild rice blend (such as Lundberg brand)
1 Tbsp. poultry seasoning ((sub Herbs De Provence))
1 tsp. kosher salt
1/2 tsp. black pepper
4 cups (1 quart) lower sodium vegetable broth
2/3 cup heavy cream ((sub cashew cream*))
1/3 cup finely grated Parmesan cheese

Steps:

  • Measure out heavy cream and let it sit at room temperature while you prepare soup. Or, prepare cashew cream, if using (see notes for instructions). Heat oil and butter in a large stockpot or Dutch oven over medium-high heat. Once hot, add the onion, carrots, and celery, and cook for 8 minutes, or until softened.
  • Add mushrooms and garlic, and stir to combine. Cook for 6 to 8 minutes, stirring only occasionally, until the mushrooms are soft and slightly golden.
  • Add rice and stir to coat. Let the rice cook for 1 to 2 minutes to lightly toast the grains. Stir in poultry seasoning, salt, and pepper.
  • Add broth and 1 cup of water; stir well. Bring the mixture to a low boil, cover, reduce heat to medium-low, and simmer for 45 to 60 minutes, or until the rice is tender.
  • Remove the lid and stir in the heavy cream (or cashew cream). Gradually sprinkle in the Parmesan cheese, stirring continuously to avoid clumping, until all is combined. Remove from heat and ladle into bowls.

3 tablespoons unsalted butter
1/2 medium onion, diced
2 1/2 cups wild rice
5 cups chicken broth
1 tablespoon olive oil
8 ounces white button mushrooms, sliced
8 ounces shiitake mushrooms, sliced with tough stems removed
2 teaspoons fresh thyme leaves
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh parsley

Steps:

  • Heat 2 tablespoons of the butter in a large saucepot over medium heat. Add the onion and saute until translucent, about 10 minutes. Add the rice and toast while stirring until it begins to smell nutty, about 1 minute. Add the chicken stock and bring to a boil, then reduce to a simmer, cover and cook on low until the water is absorbed, about 40 minutes.
  • While the rice is cooking, heat the remaining 1 tablespoon butter along with the oil in a large skillet over medium-high heat. Add the button mushrooms, shiitake mushrooms and thyme and cook, stirring often until they begin to brown, about 10 minutes. Add the garlic, season with salt and pepper and cook until the garlic is fragrant, about 1 minute more.
  • When the rice is cooked, fluff with a fork and gently fold in the mushrooms. Add to a serving bowl and sprinkle with the parsley before serving.

5 ounces fresh shiitake mushrooms
5 ounces fresh portobello mushrooms
5 ounces fresh cremini (or porcini) mushrooms
1 tablespoon good olive oil
1/4 pound (1 stick) plus 1 tablespoon unsalted butter, divided
1 cup chopped yellow onion
1 carrot, chopped
1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided
Kosher salt
Freshly ground black pepper
2 cups chopped leeks, white and light green parts (2 leeks)
1/4 cup all-purpose flour
1 cup dry white wine
1 cup half-and-half
1 cup heavy cream
1/2 cup minced fresh flat-leaf parsley

Steps:

  • Clean the mushrooms by wiping them with a dry paper towel. Don't wash them! Separate the stems, trim off any bad parts, and coarsely chop the stems. Slice the mushroom caps 1/4-inch thick and, if they are big, cut them into bite-sized pieces. Set aside.
  • To make the stock, heat the olive oil and 1 tablespoon of the butter in a large pot. Add the chopped mushroom stems, the onion, carrot, the sprig of thyme, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, until the vegetables are soft. Add 6 cups water, bring to a boil, reduce the heat, and simmer uncovered for 30 minutes. Strain, reserving the liquid. You should have about 4 1/2 cups of stock. If not, add some water.
  • Meanwhile, in another large pot, heat the remaining 1/4 pound of butter and add the leeks. Cook over low heat for 15 to 20 minutes, until the leeks begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until they are browned and tender. Add the flour and cook for 1 minute. Add the white wine and stir for another minute, scraping the bottom of the pot. Add the mushroom stock, minced thyme leaves, 1 1/2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the half-and-half, cream, and parsley, season with salt and pepper, to taste, and heat through but do not boil. Serve hot.

¾ oz (20 g) dried porcini mushrooms
12 oz (350 g) dark-gilled mushrooms
1 x 350 g tub fresh wild mushroom sauce
1½ oz (40 g) butter
1 small onion, finely chopped
5 fl oz (150 ml) dry Sercial Madeira
1 tablespoon fresh cream
2 small mushrooms, very thinly sliced, to garnish
salt and freshly milled black pepper
½ x 60 g pack Merchant Gourmet toasted garlic croûtons
1 tablespoon olive oil
½ clove garlic
1 heaped teaspoon chopped fresh parsley

Steps:

  • Start off by pouring 1 pint (570 ml) boiling water over the porcini and leave them to soak for about 20 minutes. Meanwhile, chop the 12 oz (350 g) of fresh mushrooms quite small in a food processor (or by hand). Then take a medium-sized saucepan, melt the butter over a gentle heat, cook the onion for about 5 minutes, then stir in the fresh chopped mushrooms, giving them a good coating of butter. Keep the heat turned as low as possible and let the mushrooms and onion cook gently, without a lid, for about 20 minutes, giving them a stir now and then. After that, strain the porcini mushrooms through a sieve lined with a sheet of kitchen paper, and reserve the liquid. Chop the soaked porcini, then add them to the rest of the mushrooms along with the strained soaking water and the fresh mushroom sauce. Season well, whisking to amalgamate everything, then add the Madeira. Bring everything up to a gentle simmer and leave to simmer, without a lid, for 40 minutes. All this can be done several hours in advance and then re-heated. The croûtons can also be prepared in advance. Heat up the oil in a frying pan, add the garlic and the croûtons, toss everything together until the croûtons are a rich, golden brown colour and drain on kitchen paper. Just before serving, stir the cream into the soup and garnish each bowl with thin slices of raw mushroom and the croûtons, sprinkled with the chopped parsley.

12 ounces mixed mushrooms, such as cremini, shiitake and oyster, stemmed and chopped
Kosher salt and freshly ground black pepper
4 cups chicken broth
1 1/2 teaspoons Marsala, optional
About 1/4 cup creme fraiche, for serving
1 tablespoon sliced chives (1/2-inch pieces)
Olive oil, for drizzling

Steps:

  • Melt the butter in a small Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened, about 12 minutes. Increase the heat to medium high, add the mushrooms, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring often, until the mushrooms release their liquid but do not brown, about 8 minutes. Add the chicken broth and bring to a simmer. Simmer, partially covered, for 30 minutes.
  • Transfer to a blender and puree until smooth (be careful when blending hot liquids). Add the Marsala if using and season with salt and pepper.
  • Pour the soup into 4 bowls. Dollop with the creme fraiche and sprinkle with the chives. Drizzle a tiny bit of olive oil over top.

Add garlic; cook 1 minute longer., Stir in broth, rice mix with contents of seasoning packet, reserved dried mushrooms and soaking liquid, salt and pepper. Bring to a boil. 1/2 cup wild rice
1 ounce dried shiitake mushrooms
1 1/2 cups hot water
2 tablespoons butter
1 onion, chopped
2 garlic cloves, chopped
1/4 teaspoon dried rosemary, crumbled
1/4 teaspoon dried thyme, crumbled
1 8-ounce russet potato, peeled, diced
2 cups beef stock or canned beef broth
3/4 cup (about) milk
2 tablespoons Madeira

Steps:

  • Combine chicken broth and rice in small saucepan. Cover and simmer over medium-low heat until rice is tender and liquid is absorbed, about 50 minutes.
  • Meanwhile, soak mushrooms in 1 1/2 cups hot water until soft, about 20 minutes. Drain mushrooms, reserving soaking liquid. Cut off mushroom stems and discard. Thinly slice mushrooms.
  • Melt 1 tablespoon butter in heavy large saucepan over medium-high heat. Add mushrooms and sauté until tender and golden brown, about 5 minutes. Transfer to small bowl. Melt remaining 1 tablespoon butter in same pan. Add onion, garlic, rosemary and thyme and sauté until onion is very tender, about 10 minutes. Mix in potato, beef stock and reserved mushroom soaking liquid. Cover and simmer until potato is very tender, about 15 minutes.
  • Transfer soup to blender in batches and puree until smooth. Return to saucepan. Stir in wild rice, mushrooms, 3/4 cup milk and Madeira. Cover and simmer 15 minutes to blend flavors. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Return soup to simmer.) Thin with additional milk if desired.

1 1/2 cups warm water
1 ounce dried japanese shiitake mushroom
1 lb fresh cultivated mushroom
4 tablespoons butter
1/3 cup coarsely chopped shallot (about 2 oz.)
1 small carrot, diced (1/2 c.)
1 large stalk celery, diced (1/2 c.)
1/4 lb peeled diced potato (2/3 c.)
3/4 teaspoon dried thyme
1/2 teaspoon dried marjoram
2 cups cooked wild rice
4 cups chicken stock, preferably homemade
salt, pepper to taste
1 tablespoon tomato paste
1 cup light cream
3 drops Tabasco sauce
3 tablespoons madeira wine
snipped fresh chives (to garnish) (optional)

Steps:

  • In a small bowl, pour the warm water over the dried mushrooms, weighting them down so that they are completely submerged and can soak for 30 minutes. Do not discard the soaking liquid! When soaking time is up, cut off and discard the tough stems (or freeze them for making stock). Squeeze the excess liquid from the mushrooms back into the soaking liquid, then strain the liquid through a dampened coffee filter to remove any fine grit. Slice the shiitake caps into thin shreds and set them aside.
  • Wipe the cultivated mushrooms with a damp towel, trim off the stems (save for stock), and slice the mushrooms thickly. Set aside.
  • Melt the butter in a 7-qt. Dutch oven and saute the shallots in it over medium heat, stirring frequently, for 2 minutes. Add the carrots through the marjoram and cook, stirring, 2 minutes longer. Add both the mushrooms and saute, stirring, for 5 minutes (shiitake should never be eaten uncooked).
  • Add the cooked rice, the reserved mushroom soaking liquid, and the chicken stock. Bring to a boil, then lower heat, season with salt and pepper, and stir in the tomato paste. Cover and simmer 30 minutes, then let cool slightly.
  • Puree the soup in several batches in a blender or food processor. The soup should NOT be too smooth. Return pureed soup to the pot, stir in the cream, and reheat gently on low heat. Stir in the Tabasco and the Madeira, and taste to adjust seasonings. Serve hot, garnished with a few chives.

Steps:

  • In a large saucepan over medium heat, heat the olive oil and butter until the oil is shimmering and the butter is melted, about 2 minutes. Add the onion and carrots and saute until the onions are tender, 5 to 8 minutes. Add the mushrooms and rice and cook for 5 minutes more, toasting the rice. Add the garlic.
  • Add the stock. Bring the mixture to a boil, then reduce the heat to low. Add the kale and kohlrabi, cover and simmer until the wild rice is tender, about 20 minutes. Season with salt and pepper to taste.

PRESSURE COOKER MUSHROOM AND WILD RICE SOUP



Pressure Cooker Mushroom and Wild Rice Soup image

This comforting soup tastes long-simmered, but it's cooked in a pressure cooker, which makes it a weeknight possibility (though you could also make this recipe in a slow cooker). Use any variety of mushrooms you like: Cremini (also called baby bella) are affordable and easy to find and work well, or you can add shiitake or oyster mushrooms for a mix of texture and flavors. Don't worry about removing small, supple stems, but discard any that are tough or dried-out. Wild rice isn't a true rice at all but the seed of a grass that's native to North America. When it's cooked, it should be pleasantly chewy and nutty, not hard, and most of the grains should be slightly split open to reveal their creamy insides.

1 yellow or red onion, minced
2 pounds mixed mushrooms (such as cremini and shiitake), tough stems removed, mushrooms chopped into 1/2- to 1-inch pieces
Kosher salt and black pepper
2 celery stalks, chopped
1 large carrot, peeled and chopped
6 garlic cloves, smashed and chopped
3 sprigs fresh thyme or 1 teaspoon dried thyme
1 teaspoon garlic powder
1/4 cup all-purpose flour
5 cups vegetable or chicken stock
1/2 cup dry white wine (see Tip)
1 cup wild rice (about 6 ounces)
1/2 cup sour cream
Chopped scallions or chives and fresh dill, for topping

Steps:

  • Turn on the sauté setting on a 6- to 8-quart electric pressure cooker. Melt the butter, then add the onion. Cook, stirring occasionally, until translucent, about 5 minutes.
  • Add the mushrooms and 1 teaspoon salt, and cook, stirring occasionally, until the mushrooms have released their liquid and shrunk a bit, about 8 minutes. Add the celery, carrot, chopped garlic, thyme, garlic powder and several generous grinds of black pepper. Stir to combine. Add the flour and stir until the vegetables are evenly coated and no white spots remain.
  • Pour in the stock and wine, and turn off the heat. Scrape the bottom of the pot very well to incorporate flour and any browned bits that are stuck to the bottom. (This will add flavor and also prevent a burn warning later.) Stir in the wild rice.
  • Cook on high pressure for 10 to 12 minutes. Turn off the heat and let the pressure reduce naturally for 10 minutes, then release the remaining pressure manually.
  • Stir the soup and check the texture of the wild rice; if it needs a bit more time repeat the pressure cooking process for a cook time of 2 minutes and rapidly release the pressure. Check the texture of the soup; if you'd like it to be thicker, turn on the sauté function and let the soup simmer to reduce to desired consistency. Turn off the heat.
  • Put the sour cream in a small bowl and slowly whisk in a few spoonfuls of warm soup until smooth, then stir the mixture into the soup. (This prevents the sour cream from separating.) Taste the soup and add salt and pepper to taste.
  • Serve the soup in bowls topped with chopped scallions or chives and dill. Reheat any leftovers on low until warm. (Boiling can cause the sour cream to break.)
