BROWN BUTTER TOFFEE COOKIES
With crisp, caramelized edges and rich, chewy centers, these Toffee Cookies are irresistible! Made with nutty brown butter and filled with chocolate covered toffee bits.

Steps:
- Brown the butter: Heat the butter in a light colored skillet over medium-high heat. It will come to a boil. Continue cooking, stirring occasionally, until the solid particles at the bottom turn golden brown. Keep an eye on it carefully towards the end, it can burn quickly. Immediately pour into a large mixing bowl to stop the browning. Let cool about 10 minutes so the sugars don't melt when mixed into it.
- Whisk together the flour, cornstarch, baking soda, and salt in a bowl.
- Whisk sugars into cooled browned butter. Whisk in vanilla and eggs until thoroughly combined.
- Pour dry ingredients into bowl and stir until no streaks of flour remain.
- Stir in toffee bits.
- Cover with plastic wrap, pressing the plastic down on the surface of the dough. Chill for at least 3 hours and up to 3 days. If you chill longer than 3 hours, let dough sit at room temperature for about 30 minutes so the dough is easier to scoop.

FOOL'S TOFFEE
This is a recipe passed to my from my Great Auntie Mike (Margaret) this makes a unique candy because it involves saltine crackers not typically found in candy recipes you may omit the nuts if you desire

Steps:
- Line a cookie sheet with aluminum foil and spray with non stick cooking spray.
- Place the saltines side by side but not over lapping each other.
- In a sauce pan melt the 2 sticks of butter and add the cup of brown sugar bring to a slow boil stirring constantly for about 3 minutes.
- Immediately pour over the crackers try to coat as evenly as possible.
- Bake in the oven at 350°F for 12-14 minutes immediately remove from oven and pour the entire bag or morsels over the toffee and spread evenly with a spatula. Sprinkle the chopped nuts over the candy and press down lightly.
- Refrigerate till cool (at least an hour) then remove and break into pieces and serve!

- Line a baking sheet with foil. If you'd like to have nuts in your toffee, toss a handful of almonds onto the baking sheet. Set aside.
- Heat all of your ingredients (except for the nuts and chocolate) in a nice sturdy saucepan on med heat until butter is melted. Turn temp up to med-high and stir constantly until mixture comes to a boil.
- Set your timer for 5 minutes and DO NOT let ANYTHING disturb you while you stir. You must keep stirring your butter/sugar mixture so that it does not burn. And you must use a WOODEN spoon.
- Keep stirring until your timer goes off. It may even smoke a tiny bit and that is ok. If you are really concerned, lift you pan off of the burner (while you are still stirring) to remove it from the heat, but still stir until your timer goes off.
