ZUCCHINI BANANA BREAD
The BEST healthy Zucchini Banana Bread. Super easy, moist, and lightly spiced with cinnamon. Made from wholesome ingredients and so delicious!

- Preheat the oven to 350 degrees F. Lightly grease a 9x5-inch loaf pan with nonstick spray. Line with parchment paper so that the paper overhangs two sides like handles, then lightly grease again.
- Thoroughly squeeze the shredded zucchini with a paper towel to remove as much excess water as possible. Repeat as needed.
- In the bowl of a standing mixer or a large mixing bowl, beat the mashed banana with the honey, coconut sugar, coconut oil, and vanilla extract until smooth. (You can also use a whisk and some elbow grease and mix the batter by hand.) Add the eggs (make sure they are room temperature or the coconut oil may resolidify), then mix again until smoothly combined. If the coconut oil does resolidify, microwave the bowl in 10-second bursts, just until the coconut oil reliquifies.
- Sprinkle the cinnamon, nutmeg, baking soda, baking powder, and salt over the top of the batter. Mix to combine. Sprinkle the flour evenly over the top, then mix on very low speed, just until the flour disappears. By hand, fold in the zucchini and the nuts or chocolate chips (if using), stopping as soon as it's mostly evenly blended. Do not overmix. The batter will be thick.
- Scrape the batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes, until a toothpick or thin, sharp knife such as a paring knife inserted in the center comes out clean two tests in a row. (You want to test for a clean knife more than once, as moist quick breads can be tricky to tell; if in doubt, take the bread's temperature on an instant-read thermometer. It's done when it reaches 195 degrees F.). I like to check the bread at the 30-minute mark and tent it with aluminum foil if the bread is browning too quickly at the corners, then continue baking as directed.
- Once the bread is baked, place the pan on a wire rack and let cool for 15 minutes. Lift the bread from the pan using the parchment paper, and place the loaf on the rack to finish cooling completely. Slice and enjoy!

- Preheat the oven to 350.
- In a medium bowl, combine the flour, cinnamon, baking powder, baking soda and salt and mix well.
- In a separate large bowl, mash the bananas and then add the honey, egg, Greek yogurt, milk, vanilla and zucchini and mix well.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Pour the batter in a well-greased 9x5 bread pan.
- Bake at 350 for 45-50 minutes, until a toothpick in the center comes out clean.
- Let cool in the pan for 5-10 minutes, then turn out and cool completely on a wire rack.
- Store leftovers in the fridge after two days. This bread also freezes great and can be kept 3-5 months in the freezer.

WHOLE WHEAT ZUCCHINI BREAD
I took an old favorite and juiced it up by cutting the white sugar completely, replacing with honey and brown sugar to reduce the total sweetener by half. I also cut the oil back to 25 percent and introduced one-third whole wheat flour. The results are in; it's even better than the original! I like to use the huge zucchini that didn't get picked on time, as long as it's still green and healthy. This is a large batch recipe, but you can easily cut it in half.

I actually abandoned my "family" banana bread in favor of this one... It's more a like a cake than a bread. I have increased the bananas from the original recipe, and I prefer to omit the nuts. I like mine warm with butter on top. Yummy!

- Melt butter.
- Put the butter, sugar, bananas and eggs in a blender. Blend until nice and smooth.
- Now transfer to a mixing bowl.
- In a separate bowl, stir together flours, salt, and baking soda.
- Add dry ingredients to banana mixture alternately with hot water.
- Stir in chopped nuts.
- Cut a piece of waxed or parchment paper the size of the bottom of your loaf pan.
- (This helps the loaf come out in one piece while still warm).
- Put the paper in the loaf pan and spray the pan well with non-stick spray.
- Scoop the batter into the pan.
- Bake in a preheated 325 degree F oven for one hour and 10 minutes.
- Test with a cake tester to make to make sure it's done.
- Sometimes it takes a little bit longer.
- If the top gets too brown, cover it with a piece of aluminum foil so it doesn't get too much darker.

WHOLE WHEAT ZUCCHINI BREAD
This is very different from the usual zucchini loaves. First of all, it bakes into a round loaf and contains wheat. This is one of my favorites. - Spray a 9" round baking tin with nonstick spray and preheat the oven to 350°F.
- Stir together both types of flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a large bowl.
- Make a well in the center of this mixture.
- In another bowl, beat egg whites until foamy (not too much- just foamy, NOT to make a meringue).
- To the egg whites, add applesauce, buttermilk, and vanilla and stir using a wooden spoon.
- Stir in the zucchini until well combined.
- Pour this wet mixture into the"well" you made in the flour mixture and stir just until ingredients are all moistened and gently combined- press out any large lumps with your spoon, but don't overmix.
- Gently fold in the nuts, if using,- don't overmix or you will have tough bread.
- Pour into the prepared pan and bake for about 40-50 minutes or until a toothpick tests clean.
- Cool bread in pan for 10 minutes, then remove to a wire rack to cool completely.

WHOLE-GRAIN ZUCCHINI BANANA BREAD
This is adapted from a recipe I found in a pregnancy book. It is WONDERFUL! It's good hot, cold or room temperature. It's good plain or with butter. The original recipe doesn't use any sugar but I didn't think I'd like it without it.

- Prepare loaf pan or muffin tins with cooking spray.

100% WHOLE WHEAT ZUCCHINI BREAD
This is a zucchini bread made only with whole wheat flour, I'm sure you could make it 1/2 with whole wheat flour and 1/2 with all purpose. It is really easy and delicious! It turns out quite sweet with 1 1/2 cups of sugar so if you're trying to cut back on sugar I think only 1 cup would be enough --> this recipe makes 2 loaves

- With the rack in the center position, preheat the oven to 350°F. Generously grease an 8-by-4-inch loaf pan (I prefer using softened butter).
- Place the grated zucchini in a colander set over a bowl. Sprinkle with the sugar and toss to coat. While you work on the batter, the sugar will draw the moisture out of the zucchini. Press down on the zucchini occasionally to squeeze the liquid into the bowl, removing as much liquid as possible before adding the zucchini to the batter.
- In a medium bowl, whisk together the whole wheat pastry flour, baking powder, baking soda, and salt; set aside. In a large bowl, combine the drained shredded zucchini, mashed banana, honey, coconut oil, egg, and vanilla. Add half of the flour mixture to the wet ingredients; stir. Add the yogurt; stir. Add the remaining flour mixture and chocolate chips, if using. Stir until just blended.
- Transfer the batter to the prepared loaf pan. Bake for 50 to 60 minutes, or until the center of the bread tests done with a toothpick (my loaf required 55 minutes). Check the bread between 20 and 30 minutes and lay a sheet of foil over the top if it's getting too brown (I covered at 25 minutes). Once the bread is done, remove from the oven, carefully run a knife or thin spatula around the edge of the pan, and cool in the pan for 10 minutes. Run the knife around the edges again and then turn the loaf out onto a cooling rack to finish cooling.
