BREAD MACHINE WHOLE WHEAT PIZZA DOUGH WITH HONEY



Bread Machine Whole Wheat Pizza Dough with Honey image

Honey Whole Wheat Pizza Dough comes with directions and amounts appropriate for a bread machine.

1 cup warm water
3 tablespoons honey
2 tablespoons olive oil
1-1/2 teaspoons salt
1 cup 120 grams or 4-1/4 oz. whole wheat flour (I usually use Gold Medal)
2 cups 240 grams bread flour
2 teaspoons bread machine or instant yeast

Steps:

  • Put all ingredients into your bread machine in order listed. Set machine on the dough cycle and press start.
  • When the dough cycle completes, remove dough to a large bowl (cover tightly) or pop dough into a gallon zippered bag and refrigerate overnight.
  • Approximately 2 hours (less in my warm kitchen) before you plan to put together your pizza, remove the dough from the fridge.
  • Divide in half and form each half into a smooth, rounded ball. At this point, I place each ball into a well-oiled pizza pan and cover with plastic wrap.
  • When the dough has warmed and it looks puffy, preheat oven to 450˚ F.
  • Use your hands and fingers to flatten the ball until it is the thickness you prefer. I use a 13" pizza pan and try to press it to the edge. If you tear it or make a hole, patch it with your fingers.
  • Assemble pizza in this order: Sauce first, then cheese, then meat or other toppings. If I have enough, I usually sprinkle a little more cheese over the top.
  • Pop into the oven and turn the temperature back to 425 degrees. How long you bake the pizza will depend on how liberal you were with the toppings, and your specific oven so I hesitate to be specific about the time. My pizzas usually take around 12 minutes, but yours might be different, so watch carefully after the first 10 minutes.

This Bread Machine Whole Wheat Pizza Dough recipe is so simple, you'll want homemade pizza every night! Yield: 1 (14 inch) pizza

1 c water, (warmed to 100F)
1 Tbsp olive oil
1 tsp salt
1 Tbsp sugar
2 ½ c whole wheat flour
1 Tbsp vital wheat gluten ((optional, but it will make for a chewier and less dense crust))
2 ¼ tsp active dry yeast ((1 packet))
Olive oil
Pizza sauce
1 1/2 c mozzarella cheese
Toppings: (mushrooms, tomatoes, peppers, onions, and black olives, etc)

Steps:

  • Add crust ingredients (in the order listed) to the bread pan of your bread machine. Process according the manufacturer's instructions for the dough setting. (Don't be afraid to open the lid to check on it. The dough should come together to a nice, soft and slightly tacky ball after a little knead time. If the dough looks too moist, add more flour a teaspoon at a time. If it looks too dry, add warm water a bit at a time.)
  • When the dough is done, remove it from the bread machine.
  • Mix all ingredients well with a dough hook for 5-7 minutes, until a nice elastic ball forms. Cover and place in a warm place to rise until doubled (1 hour). Punch the dough down to deflate it and then let it rise, covered, a second time, until you are ready to make your pizza.
  • Preheat oven to 375F. Generously dust your pizza stone with cornmeal (or grease your pizza pan.
  • Roll out into a 14 inch circle. Place dough on your baking stone, prick the dough with a fork so that it doesn't bubble and brush lightly with olive oil. Cover and let rise 20 min.
  • Place in the oven and par-bake for 4- 5 minutes.
  • Remove from oven. Add sauce and toppings.
  • Bake for 10-15 minutes, until cheese is melted and crust is golden.

This is makes the best whole wheat pizza crust we have ever had. Feel free to tweak it to suit your owns tastes. It does tend to rise when cooking, so if you are wanting a thinner crust, roll it as thin as possible before baking. We hope you enjoy it as much as we do! *Please note that I have listed the ingredients in the order you put them into your bread maker, but if you are mixing with a mixer/by hand, mix the dry ingredients first and then add the liquids.

1 1/3 cups warm water
2 tablespoons olive oil (plus 1/2 TBSP to brush onto the crust)
1 tablespoon honey
2 cups whole wheat flour
2 cups white flour
1 teaspoon salt (or to taste)
1 tablespoon italian seasoning
2 1/2 teaspoons dry yeast

Steps:

  • If using a bread maker to mix & knead (on the dough setting), add the ingredients as listed in the recipe (unless your bread maker gives different instructions re: adding liquids first).
  • If mixing in a mixer/by hand, mix dry ingredients in a bowl, and gradually add the honey/oil/water mixture, mixing until completely smooth & lump free. Knead for 3 minutes. Let rise 30 minutes. Knead again for 3 - 5 minutes, let rise for about 1 hour in a greased bowl covered with a cloth and in a warm place.
  • When dough is ready, put in onto a floured surface & roll out to the size of your pizza / desired pan. Lightly flour/oil pan so dough will not bake on.
  • Lightly brush the dough with olive oil, and sprinkle with parmesan cheese and additional italian seasonings (if desired).
  • **If doing a thicker crust, pre-bake the dough for 4 to 5 minutes, then add toppings.
  • Bake at 450 for 10 - 14 minutes (depending on thickness of crust). If you partially baked it earlier, it will not take the full 10 minutes, so you will need to check it after 7 or 8 minutes.
  • Enjoy!

1 ¼ teaspoons instant yeast

¾ cup warm water

Steps:

  • Mix whole wheat flour, all-purpose flour, yeast, sugar, and salt in a large bowl using a spoon. Pour in water and oil; mix until dough no longer sticks to the bowl. Turn dough onto a lightly floured surface and knead for 5 to 8 minutes.

1 cup all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon salt
2 packets active dry yeast
2 tablespoons olive oil
1 teaspoon sugar
1 1/4 cups warm water, plus
1 tablespoon warm water (105 F to 115 F)

Steps:

  • In a large mixing bowl, combine all dry ingredients except sugar and yeast.
  • Stir together thoroughly and form a well in center.
  • Blend remaining ingredients and pour into well.
  • Brush flour into liquid with fingertips until all flour is incorporated, then gather dough into ball.
  • Knead on a floured work surface for about 10 minutes or until dough is smooth and elastic.
  • Shape into ball, place in lightly greased bowl and turn once to grease entire surface.
  • Cover bowl with clean towel, place in a warm, draft-free location and let rise until double.
  • Punch down dough, form into a small circle and place on floured work surface.
  • Let rest for 5 minutes, then press out dough until it is slightly larger than pan size (use a rolling pin if you like).
  • Fold dough in half and in half again.
  • Place"wedge" onto greased pizza pan that's been"dusted" with corn meal.
  • Unfold dough and crimp edges to form a crust.
  • Top with favorite sauce and toppings and bake in 500 F oven for about 20 minutes.
