1 cup whole wheat flour
1 1/2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup buttermilk, plus 2 Tablespoons
1 tablespoon canola oil
2 egg whites
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
3/4 cup rhubarb, chopped
1 tablespoon honey
1 lemon, zest of
2 tablespoons fresh lemon juice
1 cup strawberry, cut into quartered pieces

Steps:

  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside.
  • In a medium bowl, whisk together buttermilk, canola oil, egg whites,vanilla extract, lemon zest, and lemon juice.
  • Pour wet ingredients over the dry ingredients. Stir gently with a spatula until combined. Don't over mix. The batter will be thick.
  • Heat a griddle pan or non stick skillet over medium heat. Spray with cooking spray. Pour about 1/4 of a cup of pancake batter onto the hot griddle pan, spacing out the pancakes a few inches from each other. When the pancakes start to bubble up, flip and cook until pancakes are lightly browned.
  • To make the compote: Spray a medium skillet with cooking spray. Add the rhubarb and cook for 2-3 minutes over medium heat, until rhubarb is soft. Add in the honey, lemon zest, and lemon juice. Stir and cook for 2 minutes. Stir in the strawberries and cook for another two minutes.
  • Serve strawberry rhubarb compote over hot pancakes.

450g rhubarb , cut into 4cm pieces
85g caster sugar
3 tbsp honey
finely grated zest and juice 1 lemon
2 vanilla pods
pieces stem ginger , cut into thin shards
1 tsp icing sugar
200ml crème fraîche
pancake - see 'Goes well with' below

Steps:

  • Heat oven to 140C/fan 120C/gas 1. Put the rhubarb pieces into a bowl and add the sugar, honey, a squeeze of lemon juice and 3 tbsp water. Mix well, then lay the pieces flat in a roasting tray. Split the vanilla pods in half, then scrape out the seeds and reserve for the vanilla crème fraîche. Add the vanilla pods to the rhubarb, then bake in the oven for 30 mins.
  • Meanwhile, stir the vanilla seeds and icing sugar into the crème fraîche. When the rhubarb is cooked, drain the juices into a pan, then boil to thicken slightly. Mix the rhubarb with the stem ginger and juices, then spoon over pancakes. Top with a spoonful of vanilla crème fraîche and a sprinkling of lemon zest.

½ cup wheat germ
2 cups whole wheat flour
1 teaspoon baking soda
½ teaspoon salt
3 cups buttermilk
2 eggs, lightly beaten
1 tablespoon canola oil
cooking spray

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread wheat germ over a baking sheet.
  • Bake in the preheated oven until toasted, about 5 minutes. Cool slightly, then transfer wheat germ to a large bowl.
  • Stir flour, baking soda, and salt into wheat germ. Beat buttermilk, eggs, and oil in another bowl until smooth; pour egg mixture into flour mixture and stir until batter is just blended.
  • Heat griddle over medium-high heat and coat with cooking spray. Pour 1/4 cup portions of batter onto the griddle and cook until bubbles form and the edges are dry, about 2 minutes. Flip and cook until browned on the other side, about 3 minutes more. Repeat with remaining batter.

1 cup whole wheat flour
⅔ cup all-purpose flour
⅓ cup wheat germ
1 ½ teaspoons baking powder
½ teaspoon baking soda
2 tablespoons brown sugar
1 teaspoon salt
5 ⅓ tablespoons unsalted butter
2 ½ cups buttermilk
2 eggs, beaten
3 tablespoons unsalted butter

Steps:

  • In a food processor or in a large bowl, combine the whole wheat flour, white flour, wheat germ or oats, baking powder, baking soda, brown sugar, and salt.
  • Cut the butter into small pieces with a knife, and add the butter to the flour-mixture. Mix until the mixture has a sand-like consistency.
  • Make a well in the center of the flour-butter mixture, and add the buttermilk and eggs. Stir until the liquids are fully incorporated.
  • Heat a frying pan over medium heat and grease the surface with 1 tablespoon of butter or oil. Ladle the batter onto the surface to form 4 inch pancakes. Once bubbles form on the top of the pancakes, flip them over, and cook them on the other side for about 2 minutes.
