100% WHOLE WHEAT BREAD (1LB BREAD MACHINE)
I adapted this from a recipe found on the KAF website after finding out there's no good recipes out there for 1lb bread machines. I'm attempting to cut out all processed foods and refined grains and this makes a great everyday whole wheat bread with a light texture. Don't omit the gluten - it's essential if you want to make bread rather than a concrete block. I am at over 6000ft in elevation - you may need to add another .5tsp of yeast for proper rise at sea level.

Steps:
- Add ingredients in order listed to your bread machine. If your bread machine specifies dry ingredients should be added first, reverse the order in which ingredients are added. Use the basic (not the whole wheat) cycle on your bread machine.
- Try subbing 1/2c rye flour and adding 1tsp of caraway seeds for a delicious seeded rye!

BREAD MACHINE WHOLE WHEAT BREAD (LOW FAT)
You don't need a lot of ingredients for this bread and it always turns out the same, which is why I love it. From The Bread Machine Cookbook by Donna German, who always gives amounts for small, medium and large machine. I'm posting the large recipe.

- Set on whole wheat or basic cycle. On my very old Black and Decker machine I use the powdered milk/wheat setting.
- This is a high rising whole wheat bread, and the large recipe usually squashes at the top of my machine. I can give small and medium versions if you send a private message.

WHOLE WHEAT BREAD (BREAD MACHINE)
I am not a huge fan of whole wheat bread but this one doesn't taste like your typical whole wheat bread. This makes a 2 pound loaf. I use King Arthur Flour (all-purpose) in my machine -- not bread flour -- and it comes out perfect for all the doughs I make. I guessed on baking time since it's different depending on how you bake it.

- Add ingredients to your machine in the order the manufacturer suggests ~ with mine I start with liquids and end with yeast.
- Select whole grain cycle if you have one or the basic white bread cycle.
- I usually just make the dough in the machine (on the dough cycle), put it in a greased 9x5 bread pan, and bake at 350º until the loaf sounds hollow when tapped.

WHOLE WHEAT BREAD IN THE BREAD MACHINE
I am the official breadmaker in our household. I developed this recipe to meet Jenny's longing for 100% whole wheat bread that was not too brick-like. Gluten flour, Vitamin C powder (ascorbic acid) and lecithin granules can all be found at bulk or health food stores that cater to bakers. They are dough conditioners that allow organic or stone ground whole wheat flour to make a reasonably light loaf. Of course, it will still not be as light as commercial white loaves - you wouldn't want it to be! Be sure to use hard, or bread, flour, and not a soft pastry type flour.
