2 large carrots , cut into batons
3 celery sticks, cut into batons
1 tbsp olive oil
½ tsp sugar
6 tbsp white wine vinegar
4 x 175g trout fillets
basil leaves
juice 1 lemon

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Put the carrots and celery in a pan with the oil, sugar, wine, salt and pepper. Bring to the boil, tightly cover, then cook for 10 mins until the vegetables are tender. Cool.
  • Cut four large sheets of baking parchment, about 35cm square. Divide the vegetables between them and top each with a trout fillet. Scatter a few basil leaves and a little lemon juice over each, then season the fish with a little salt and pepper. Fold the paper in half and double fold all round to seal in the fish, a bit like a pasty.
  • Put the parcels on two baking sheets and bake for 15-20 mins (depending on the thickness of the fish). Serve in their paper with some steamed new potatoes.

1/2 red onion, julienned
1 zucchini, julienned
1 large carrot, julienned
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 (4-ounce) sole fillets, hake, flounder or other white fish
1 lemon, thinly sliced, seeds removed
8 sprigs fresh thyme
4 pats butter
1/4 cup white wine

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together the onion, zucchini, carrot and garlic. Adds the oil, season with salt and pepper, to taste, and toss to combine. Put each fish fillet in a large square of parchment paper and season with salt and pepper, to taste. Arrange the vegetables on top, dividing evenly. Top the vegetables with 2 lemon slices, 2 sprigs thyme, a pat of butter and 1 tablespoon white wine, layering in order. Fold the parchment paper around the edges tightly in 1/4-inch folds to create a half moon shape. Make sure you press as you crimp and fold to seal the packets well, otherwise the steam will escape. Arrange the packets on a baking sheet. Bake until the fish is cooked through, about 12 minutes, depending on the thickness of the fish. To serve, cut open the packets and serve directly in the parchment on a plate or remove the fish to the plate using a spatula, being sure you don't leave the juices behind.

PLANK GRILLED WHOLE TROUT

2 (1 to 2 pound) whole trout, cleaned and gutted with heads, tails and fins removed
1 tablespoon olive oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Place the planks into cool water and allow to soak for at least 2 hours and up to overnight.
  • Preheat the grill to 375 to 400 degrees F.
  • Brush the trout, inside and out with olive oil. Season inside and out with salt and pepper. Place the trout onto the planks belly down and open. Place the planks over indirect heat and grill until the fish reaches an internal temperature of 120 degrees F on an instant-read thermometer, approximately 15 to 20 minutes. Remove from the grill and allow to sit for 5 to 10 minutes before serving as is or deboning and serving.

6 small whole trout, about 1 pound each, cleaned and scaled
6 pieces aluminum foil about 16 by 16-inches
1 cup plus 2 tablespoons olive oil, divided
Salt and freshly ground black pepper
3 lemons, sliced crosswise
12 cloves garlic, thinly sliced, divided
12 sprigs fresh rosemary, divided
12 sprigs fresh Italian parsley, divided
12 sprigs fresh mint, divided
12 sprigs fresh marjoram or oregano, divided
1 cup plus 2 tablespoons dry white wine, divided

Steps:

  • Preheat the oven to 375 degrees F.
  • Rinse fish well inside and out and pat dry with paper towels. Place 1 fish in the center of each square of aluminum foil. Rub each fish with 1 tablespoon of the olive oil on both sides, then season the fish both inside and out with salt and pepper. Stuff the cavities of each fish with lemon slices, 2 cloves of the sliced garlic, and 2 sprigs each of the rosemary, parsley, mint, and marjoram. Fold all of the edges of the foil upwards to create a bowl-shape, then drizzle each fish with 2 tablespoons of the remaining olive oil and 3 tablespoons each of the white wine. Fold the top and side edges together tightly so that the fish is completely enclosed in an airtight package. (Fold the edges downward so that the fish is tightly contained.)
  • Place the pouches on a large baking sheet and bake for 20 to 25 minutes, or until the fish is just cooked through and flakes easily when pierced with a fork.
  • Serve the fish immediately in shallow rimmed dinner plates or large shallow bowls, with the collected juices drizzled over the fish. Serve immediately.

GRILLED WHOLE TROUT

4 whole trout (about 1 pound each), cleaned, rinsed and patted dry
Kosher salt and freshly ground black pepper
8 sprigs fresh dill
8 sprigs fresh flat-leaf parsley
8 sprigs fresh tarragon
2 lemons, 1 sliced and 1 halved
Vegetable oil, for brushing

Steps:

  • Preheat a grill to medium-high heat.
  • Season the cavity of each trout with salt and pepper. Add 2 sprigs each of dill, parsley and tarragon along with enough lemon slices to line the cavity of each trout. Tie the trout in several places with kitchen twine so the herbs and lemon slices are secured inside.
  • Rub the grill grates with oil and lightly oil a fish grill basket. Place the fish in the basket and grill on 1 side until lightly charred, 7 to 8 minutes. Flip the basket and continue to cook the fish until lightly charred and the flesh is opaque, 6 to 8 minutes.
  • Meanwhile, add the halved lemon to the grill cut-side down and cook until charred, about 6 minutes. Gently remove the fish from the basket. Cut the strings, transfer to a serving platter and serve with the grilled lemon halves.

1 cup julienned fennel bulb
1/3 cup coarsely chopped Tomato Confit
1/4 cup coarsely chopped pitted Nicoise olives
2 teaspoons bottled capers, rinsed
1 large egg, separated
1 tablespoon heavy cream
4 (12-inch square) pieces of parchment paper
4 (6-ounce) portions turbot fillets, skin removed
1/2 cup dry vermouth
1/2 teaspoon fine sea salt mixed with 1/8 teaspoon freshly ground pepper
4 tablespoons vegetable oil
6 whole salted anchovies (about 1 1/2 ounces), available at Italian or Greek food stores
4 ounces (1 stick) unsalted butter, softened
1 teaspoon minced shallots
1 teaspoon chopped fresh thyme
1/2 teaspoon fine sea salt
1/2 teaspoon fresh lemon juice
1/8 teaspoon minced garlic
1/8 teaspoon freshly ground white peppe

Steps:

  • Bring a medium saucepan of lightly salted water to a boil and add the fennel. Cook for 1 minute. Drain, rinse under cold water, and drain again. Place in a bowl and add the Tomato Confit, olives, and capers. Mix well and set aside.
  • In a small bowl, beat the egg white until foamy. In another small bowl, beat the egg yolk and heavy cream. Set the two bowls aside.
  • Fold each piece of parchment paper in half. Using scissors, cut each folded piece of paper into a wide, plump heart shape (each opened heart should be about 12 inches across its widest point). Place a opened parchment heart on your work surface, with the fold running vertically. Leaving a 1-inch border, spread one side of the heart with 1 tablespoon anchovy butter. Top with 1 turbot fillet, one-fourth of the fennel mixture, 2 tablespoons vermouth, and 1 additional tablespoon of anchovy butter. Season with the salt and pepper mixture. Brush the outside edge of the heart with the beaten egg white. Fold the unbuttered side of the parchment heart over to cover the fish. Using tight interlocking folds, close the edges of the paper heart. Place on a baking sheet. Repeat with the remaining ingredients. Brush the tops of the papillotes with the egg yolk mixture. Refrigerate for 1 hour.
  • Preheat the oven to 375 degrees F. You will need 1 large skillet for each papillote. Place 1 tablespoons of oil in each skillet, and heat over medium heat. Add 1 papillote to each skillet and cook for 3 to 4 minutes, until the undersides are deeply browned. Transfer the skillets to the oven and bake until the top of the papillate is browned, about 5 minutes.
  • To serve, cut open each papillote and transfer the contents, including all the juices, to warmed dinner plates
  • Rinse the anchovies well to remove their salt. Run your thumbnail along the backbone of each anchovy to remove the fillets. Discard the bones and mince the fillets into a paste. Transfer the paste to a small bowl and mix in the remaining ingredients. (The anchovy butter can be prepared up to 1 day in advance, covered and refrigerated. Remove from the refrigerator and let stand until softened before using.);

  • Boil water for pasta. *Tip: for this small amount of pasta, use a deep, wide skillet for the job. The water will boil more quickly! Once water is boiling, salt water and add your pasta. Cook until al dente. Drain well and remove to a medium bowl. Add butter and stir until butter is melted and pasta is coated well. Add Parmesan, parsley, salt and pepper. Stir well to combine. Drizzle with lemon juice and stir to combine. Set aside.
  • While pasta is cooking, prepare your parchment hearts. Cut two pieces of parchment 15-inches x 12-inches. Fold in half to make a 7 1/2-inch x 12-inch rectangle. Starting from the bottom fold corner, cut the bottom of the heart shape to the open side. Leave a few inches of the open side flat, then cut the top curve back towards the top fold edge (see photo below). Open up your parchment hearts and lay flat on a work surface.
  • Place a pile of your pasta in the centre, just to the right of the centre fold. Keep it a couple of inches from the side edge. Top with a fillet of rainbow trout. Season trout with salt and pepper and a pat of butter. Top with a couple of thin slices of lemon. Tuck a couple of broccolini stalks next to it (on the centre fold side). Fold the unfilled parchment side over-top to enclose. Starting from the bottom heart point, begin folding the edges in, over-lapping and pinching as you go to keep the shape. Once you get to the top, work your way back down, folding over again and folding/pinching as you go. End with twisting the bottom point a bit to seal. Place packets on a baking sheet.
