Steps:

  • Heat the olive oil in a large skillet over medium heat, and cook the chicken 5 minutes.
  • Gradually stir the apples into the skillet, and continue cooking 15 minutes, or until chicken juices run clear and apples are tender. Thoroughly mix in the garlic salt, pepper, pumpkin pie spice, and tarragon.

1 tablespoon butter
1 small onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained

Kosher salt and freshly ground pepper
All-purpose flour, for dredging
2 to 3 tablespoons vegetable oil
1 large red onion, cut into large pieces
1 sweet cooking apple, cored and cut into large pieces
3 tablespoons apple cider vinegar
1 1/2 cups low-sodium chicken broth
2 tablespoons cold unsalted butter
1 handful fresh parsley, roughly chopped

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Heat a large skillet over medium-high heat. Season the chicken breasts with salt and pepper and dredge in the flour, shaking off the excess. Add 2 tablespoons oil to the pan. Place the chicken in the skillet smooth-side down and cook until golden, about 5 minutes per side. Transfer to a baking dish and bake until cooked through, about 8 minutes.
  • Meanwhile, add the onion and apple to the skillet, along with 1 tablespoon oil, if the pan is dry, and increase the heat to high. Cook, tossing, until the onion has wilted slightly and the apple is golden brown, about 2 minutes. Add the vinegar and use a wooden spoon to scrape up the browned bits from the pan. 2 golden delicious apples, unpeeled,thinly sliced (it's important to use Golden Delicious apples, because they will hold their shape during cooking)
1 onion, sliced
1/2 teaspoon dried thyme
4 boneless skinless chicken breasts
1 cup apple juice
1 tablespoon cider vinegar
1 tablespoon cornstarch
salt and pepper

Steps:

  • Sauté apples, onion and thyme in 2 tsp of the oil in skillet over medium-high heat, just until tender crisp; about 4 minutes.
  • Remove from skillet and set aside.
  • Cook chicken in remaining 2 tsp oil in skillet for 2 to 3 minutes or until golden brown, turning once during cooking.
  • Reduce heat to medium-low.
  • Set aside 1 tbsp apple juice; pour remaining apple juice into skillet along with vinegar.
  • Cover and simmer until chicken is no longer pink inside; about 6 to 8 minutes.
  • With slotted spoon, remove chicken from skillet and keep warm.

6 skinless, boneless chicken thighs
1 teaspoon salt
2 tablespoons olive oil
6 slices bacon
1 onion, sliced
2 cups chicken broth, divided
2 cups apple cider, divided
2 apples - peeled, cored, and sliced
4 sage leaves
2 sprigs fresh thyme
4 tablespoons butter

Steps:

  • Season chicken thighs with salt and set aside.
  • Heat oil in a large skillet over medium heat. Add chicken and cook until browned on both sides, 7 to 10 minutes. Transfer to a plate and set aside.
  • Place bacon into the skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and drain excess grease from the skillet.
  • Add onion to the skillet and cook over medium heat until soft, 5 to 7 minutes. Pour in 1 cup chicken broth and 1 cup apple cider. Cook until reduced by 1/2, about 10 minutes. Add cooked bacon, apples, sage, and thyme; let simmer for 2 minutes. Add remaining chicken broth and cider.

I found this while idly perusing a cookbook at my sister's house--I'm not sure which book (doh!). This is fairly unique to me, and I think the flavors just work together beautifully. It was just okay as written, but for us mixing in the rice (instead of serving separately) and the addition of 1/2 t salt really made the meal.

3/4 cup brown rice
1/4 cup wild rice
1 lb chicken breast
8 ounces mushrooms
1 teaspoon oil
1 tablespoon butter
1/2 cup onion
2 granny smith apples
1/2 cup white wine
1 1/2 teaspoons sugar
1 chicken bouillon cube
1/2 teaspoon salt (or more to taste)
1 tablespoon Dijon mustard
1/4 cup 2% low-fat milk

Steps:

  • Cook rice in about 3 c water (drain excess).
  • Heat oil and butter then slowly add onion.
  • Cut the chicken into pieces while the veggies cook and add to pan.
