WHOLE ROASTED CAULIFLOWER WITH WHIPPED CHEESE
This whole roasted cauliflower with a salty cheese sauce is the star of any meal!

- Fill a large pot with water, wine, 1/3 c olive oil, 1 T salt, lemon juice, butter, red pepper flakes, sugar and bay leaf. Bring to a boil over high heat.
- Trim cauliflower's stem, and add the head to the pot. Turn the heat down to medium and cook for 7 - 10 minutes, or until the bottom is approaching tenderness.
- Preheat oven to 475.
- Gently flip it in the pot and cook for another 5 -8 minutes or until the center is easily pierced with a knife. Gently life the cauliflower from the pot using two large spoons or spatulas. Discard the broth.
- Place the cauliflower in a cast iron skillet or on a rimmed baking sheet and roast for 30 - 40 minutes or until the top becomes golden brown with white cauliflower showing through. Do not let it overcook or it will droop!
- While the cauliflower is in the oven, place your cheeses in a 4 c measuring cup and using an immersion blender, with the heavy cream and 2 T of olive oil, process until the mixture is smooth and light. Stir in 1/2 t of salt or to taste. Set aside at room temperature. Stir in more heavy cream if you want more of a drizzle.
- When cauliflower is finished roasting drizzle with more olive oil and sprinkle with sea salt. Cheese can be placed on the cauliflower or cauliflower can be placed on the cheese. This is great scooped up with fresh bread.

- Preheat oven to 475°F. Bring wine, oil, kosher salt, juice, butter, red pepper flakes, sugar, bay leaf, and 8 cups water to a boil in a large pot. Add cauliflower, reduce heat, and simmer, turning occasionally, until a knife easily inserts into center, 15 to 20 minutes. Using 2 slotted spoons or a mesh spider, transfer cauliflower to a rimmed baking sheet, draining well. Roast, rotating sheet halfway through, until brown all over, 30 to 40 minutes. While cauliflower is roasting, blend goat cheese, cream cheese, feta, cream, and 2 tablespoons oil in a food processor until smooth; season with sea salt. Transfer whipped goat cheese to a serving bowl and drizzle with oil. Transfer cauliflower to a plate. Drizzle with oil; sprinkle with sea salt. Serve with whipped goat cheese. DO AHEAD: Whipped goat cheese can be made 1 day ahead. Cover; chill.
FIRE-ROASTED CAULIFLOWER WITH WHIPPED CHICKPEAS AND CILANTRO PISTOU

- Preheat the oven to 475 degrees F. Put a 14-inch cast-iron pan in the oven while it preheats.
- For the cilantro pistou: Combine the cilantro, parsley, lemon juice, 1 to 2 cloves garlic (depending on how spicy you like it), 1 teaspoon kosher salt and 1 teaspoon black pepper in a blender. Turn on medium speed and drizzle in the olive oil to combine. Blend until it has a smooth consistency. Adjust with olive oil for desired thickness, or flavor with more salt and lemon as needed. Add the chile flakes, if using.
- Add the cauliflower and blended oil to a large bowl. Generously season with salt and toss to combine. Carefully pour into the preheated cast-iron pan and put back in the oven. Roast on the middle rack until brown and tender, 10 to 15 minutes. Crank the heat to broil for last 2 minutes for added color, if desired. (It should have color and be tender but retain a bit of crunch.)
- For the whipped chickpeas: Meanwhile, strain the chickpeas, reserving the liquid in a separate bowl. In a food processor, combine the chickpeas, olive oil, tahini, garlic, lemon juice, 1 teaspoon salt and 1/4 cup reserved chickpea liquid (aquafaba) and blend on high for about 2 minutes, scraping down the sides as needed. Add a bit more aquafaba (approximately 2 tablespoons) if the machine is struggling, then add 1 tablespoon at a time of water (up to 1/4 cup) until smooth and light. Season with salt and pepper.
- For the dukkah spice: Preheat the oven to 350 degrees F.
- Add the hazelnuts, pumpkin seeds, sesame seeds, coriander seeds, cumin seeds, sunflower seeds and fennel seeds to a small food processor and pulse until just combined. (Do not overprocess.) Add to a cast-iron skillet and toast in the oven for 5 minutes. Transfer to a bowl and season with the olive oil, salt and pepper.
- Generously spread the pillowy chickpea mixture on a platter. Top with the roasted cauliflower, then drizzle over the cilantro pistou and sprinkle generously with the dukkah.
WHOLE BAKED CAULIFLOWER CHEESE

- Bring a large pan of salted water to the boil. Pull any large leaves off the cauliflower, but leave any smaller ones attached. Carefully lower the cauliflower into the water and boil for 15 mins, then drain and set aside.
- Heat the oven to 180C/160C fan/gas 4. Melt the butter in a medium pan over a medium heat, then stir in the flour and paprika, and cook for 1-2 mins. Remove from the heat and slowly whisk in the milk until smooth, then mix in the mustard. Return the pan to the heat and bring the mixture to the boil, whisking continuously. Add two-thirds of the cheese and whisk until the cheese has melted. Season to taste.
- Put the cauliflower in the middle of a deep baking dish and pour over the cheese sauce. Sprinkle with the remaining cheese. Bake uncovered for 30-35 mins until golden brown and bubbling. Scatter with the chives before serving.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

WHOLE ROASTED CAULIFLOWER WITH ROMESCO
In this recipe, a whole head of cauliflower is boiled and then roasted until gloriously browned. It is served with a rich romesco sauce, resulting in a dish that is meaty and filling. It could even command center stage, but it also makes a nice accompaniment.

- Fill a large pot 2/3 of the way with water, and set to boil; turn on the broiler, and put the rack about 4 inches from the heat source. Put the peppers on a foil-lined baking sheet, and broil, turning as each side browns, until they have darkened and collapsed, 15 to 20 minutes. Wrap the peppers in the same foil that lined the pan; when they are cool enough to handle, remove the skins, seeds and stems (this is easiest under running water). Set aside.
- Move oven rack to the lowest setting. Heat the oven to 450. Remove the leaves from the cauliflower. When the water boils, salt it generously. Submerge the head of cauliflower in the water, reduce the heat to a simmer and cook until you can easily insert a knife into the center, 15 minutes or more. Don't overcook.
- Using two spoons or a shallow strainer, transfer the cauliflower to a rimmed baking sheet, and pat dry with paper towels. Drizzle all over with olive oil, sprinkle with salt and roast until it's nicely browned all over, 40 to 50 minutes.
- Meanwhile, combine the roasted red peppers, almonds, garlic, vinegar and a sprinkle of salt and pepper in a food processor. Turn the machine on and stream in 1/4 cup olive oil; purée into a thick paste. Taste, and adjust the seasoning.
- When the cauliflower is browned, transfer it to a serving platter. Cut it into slices or wedges, and serve the romesco on the side for dipping.

- Preheat the oven to 400 degrees F. Prepare the cauliflower by carefully cutting off the bottom stalk and leaves without removing the core. You want the head to be firmly intact while roasting
- Flip the head of cauliflower upside down and pour half of the oil mixture into its nooks and crannies so that the sauce can evenly permeate the head. Turn it right-side up and place in a Dutch oven. Brush the remaining oil mixture on top of the cauliflower so that it is fully coated. Sprinkle with a little extra salt and black pepper to taste.
- Cover the Dutch oven with its lid, and place on the center rack of the oven. Bake for 35 minutes, remove from the oven, take off the lid, and sprinkle the top of the cauliflower with the cheese. Return the Dutch oven (with the lid off) to the oven. Roast for another 15 to 20 minutes, until the cauliflower is golden brown and at your desired level of crispiness and tenderness. Remove, let cool for 5 minutes, then slice into florets, and enjoy!
