GRILLED CORN ON THE COB

Grilled Corn on the Cob image

This Grilled Corn on the Cob is a tasty side to any summer supper. Buttery flavor with a hint of lime and cilantro give the sweet corn extra flavor.

Provided by Emily Walker

Categories     Side Dish

Time 40m

Number Of Ingredients 7

6 corn on the cob ((or as many as you are wanting to grill))
1 lime (fresh squeezed is best but you can use bottled as well)
1/2 bunch fresh cilantro (finely chopped )
kosher salt (to taste)
pepper (to taste)
1/4 cup butter
aluminum foil

Steps:

  • Remove husks from corn and thoroughly rinse each piece. Soak the corn cobs in cold water for 15 minutes.
  • Remove corn from water bath and pat completely dry with paper towels.
  • Cut large pieces of aluminum foil, one for each piece of corn, enough to completely wrap and cover each piece. Then place a piece of corn on each piece of foil.
  • Melt butter in the microwave on high for about 20 seconds, or until completely melted. Brush each piece of corn lightly with the melted butter. Then drizzle each piece with lime juice and sprinkle with cilantro, salt, and pepper. Wrap it up in the foil so all the excess juices are still closed in with the corn. (See picture below).
  • Grill over medium heat for about 20 minutes, turning occasionally, remove foil and serve hot.
  • Drizzle with a little extra melted butter just before serving.

8 ears corn
Kosher salt
BBQ Butter, recipe follows
Herb Butter, recipe follows
2 tablespoons canola oil
1/2 small red onion, chopped
2 cloves garlic, chopped
2 teaspoons Spanish paprika
1/2 teaspoon cayenne powder
1 teaspoon toasted cumin seeds
1 tablespoon ancho chili powder
1/2 cup water
1 1/2 sticks unsalted butter, slightly softened
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper

1/4 cup chopped fresh herbs (basil, chives or tarragon)
1 teaspoon kosher salt
Freshly ground black pepper

Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. • Combine in a food processor and process until smooth.

GRILLED CORN

Grilled Corn image

You can grill corn with the husks on. You can strip the husks partly off, remove the silks and re-wrap the ears, then grill. You can soak the corn in cool water before grilling. Or blanch it in hot. I blanch, occasionally following the lead of the celebrity chef Bobby Flay, who adds a cup of milk to his blanching liquid. "I have no idea why I do it," he said. "It's like adding corks to the liquid when you're poaching octopus. Who knows if it works? But it's a foolproof way to get perfect corn." Serve with butter, as in this recipe, or dab with mayonnaise and sprinkle with cotija cheese.

Provided by Sam Sifton

Categories     easy, vegetables, side dish

Time 30m

Yield 8 to 10 servings

Number Of Ingredients 4

10 ears fresh corn
1 cup whole milk, optional
1/2 cup unsalted butter, room temperature
Kosher salt, to taste

Steps:

  • Build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. (For a gas grill, turn all burners to high, lower cover and heat for 15 minutes, then turn burners to medium.)
  • Meanwhile, shuck the corn, removing both husks and silks.
  • Fill a large pot halfway with water and set over high heat to come to a simmer. Add the milk, if using.
  • Blanch the corn in the pot for about 3 minutes, then stack on a platter.
  • Apply just a little butter to each ear of corn, then place on grill. Cook, turning often, until the corn is tender and some of the kernels are beginning to darken, about 5 minutes. Serve immediately with remaining butter and salt.

GRILLED CORN

Grilled Corn image

this is the best way we like to have corn on the cob. the corn finishes cooking in the butter and seasoning, instead of adding them afterwards. it's also really easy to prepare as a side dish at a bbq, since you can do all the prep. ahead of time, and then just place them on the grill. we use greek seasoning, but i have used a variety of spices, be adventurous!

GRILLED CORN ON THE COB IN FOIL

Grilled Corn on the Cob in Foil image

Grilled Corn on the Cob in Foil is incredibly easy to make - and such a classic side dish for the summer months!

Provided by Nora from Savory Nothings

Categories     Side Dish

Time 30m

Number Of Ingredients 5

4 tablespoons butter (softened)
¼ teaspoon salt
½ teaspoon dried garlic powder (optional)
⅛ teaspoon ground black pepper (optional)
6 ears corn (shucked)

Steps:

  • Preheat grill to 400°F.
  • Mash butter with salt, garlic powder and pepper until smooth (works great with a small fork).
  • Rub each ear of corn with butter mixture, then place on large aluminium foil pieces (I do 2 ears of corn per foil packet, but can also do each individually). If using regular aluminium foil, use a double layer to protect corn from direct heat. Fold foil up and over ears of corn to create a foil packet, crimping to seal all edges.
  • Place corn in foil packets on grill, close lid and grill for 10 minutes.
  • Carefully remove packets from grill, very carefully open and flip each ear of corn. Carefully seal foil packets again and finish grilling corn for another 10-20 minutes, until cooked through and slightly starting to brown.
  • Carefully remove foil packets from grill, carefully open and serve corn with more butter and salt.

  • Using a pair of scissors, trim off the silks at the end of each cob, and trim away any leaves that are jutting sideways off the husk. Otherwise, they may catch fire in the grill.

From cooking.nytimes.com
  • Briquettes, the most common form of charcoal in the United States, are uniform pillows of crushed lump charcoal. They burn evenly and last quite a long time, and are a good choice for grilling food that will take a while to cook, and as a base for indirect-cooking fires. Adding a handful or two of water-soaked wood chips to a fire of charcoal briquettes is an excellent way to add smoke to a recipe that calls for indirect cooking. “Quick lighting” charcoal briquettes include a wax or accelerant that allows them to be lighted without a chimney or lighter fluid. Some feel they add an unpleasant flavor to food.
  • Cooking on a charcoal grill imparts an impossibly rich, smoky flavor. Nothing beats a good steak cooked into a deep sear on a charcoal grill. Bone-in meats fare best over the coals, but do not shy away from a whole fish or sliced zucchini, in a grill basket if you prefer. And don’t forget the joy of a fire-licked summer burger.
