This soup recipe celebrates seafood in all its glory. Luscious mussels and clams, cooked in white wine, finished with croutons and garlic mayonaise

200g mussels , washed, scrubbed and debearded
200g clams , washed
200ml dry white wine
1 tbsp olive oil
1 medium onion , diced
½ fennel bulb , finely sliced
1 carrot , sliced
6 garlic cloves , crushed
pinch of saffron strands
1 tbsp Pernod
400g can chopped tomatoes
1 ½ tbsp brandy
1 tsp Tabasco
juice 1 lemon
drizzle of olive oil , to serve
1 ½ tsp Dijon mustard
1 ½ tsp white wine vinegar
1 egg yolk
1 large garlic clove , grated
50ml good-quality olive oil
50ml vegetable oil
½ baguette
drizzle of good-quality olive oil

Steps:

  • First, throw out any mussels and clams with broken or open shells. Heat a large saucepan over a high heat and, once smoking, add the mussels, clams and white wine. Cover with a tight-fitting lid and rapidly steam for 3 mins. Once the shells have opened, tip the shellfish into a colander lined with muslin cloth, with a bowl underneath to catch the full- flavoured shellfish stock. Discard any mussels or clams that have not opened.
  • Heat the oil in the saucepan and add the onion, fennel, carrot and garlic. Cook until softened and browned, about 12 mins, then add the saffron and shellfish stock. Simmer for 5 mins to infuse the saffron. Add the Pernod, tomatoes and 100ml water, and simmer for 5 mins more.
  • Heat oven to 180C/160C fan/gas 4. Pick the clams and mussels from the shells, reserving some for presentation, and set aside.
  • To make the mayonnaise, put the mustard, vinegar, egg yolk and garlic in a bowl. Use a stick blender to blitz while slowly drizzling in both oils until thick and glossy. This will take about 5 mins. Chill until needed.
  • For the croutons, thinly slice the baguette and lay on a large baking tray. Drizzle with a little olive oil and a pinch of flaky sea salt. Bake in the oven for 12-14 mins until golden and crisp.
  • Once the soup has thickened, transfer to a blender and blitz until very smooth, then pass through a fine sieve. Finish with the brandy, Tabasco and lemon juice. Taste and adjust the seasoning.
  • To serve, return the soup to the heat to warm through, then drop in the mussels and clams for 1 min. Ladle the soup into two large bowls, drizzle with a little olive oil, and serve the croutons and garlic mayonnaise on the side.

3 dozen mussels, well cleaned
1 tablespoon minced shallots
1 cup dry white wine
8 cups fish stock (see recipe)
1/8 teaspoon loosely packed saffron threads
2/3 cup thinly sliced carrots
1 cup finely chopped celery
2 ounces fresh angel hair pasta or cellophane noodles, cut into 2-inch lengths
10 dried shiitake mushrooms (or mushrooms of your choice), stemmed, rinsed and soaked for 30 minutes
1 pound monkfish fillet, cut into bite-sized cubes
3/4 pound medium-sized shrimp, shelled and deveined
1/3 cup chopped scallions

Steps:

  • In a large pot over medium-high heat, combine the mussels, shallots and white wine, and steam, covered, until all the mussels open, about five minutes. Strain the mussels, discarding any that remain closed. Remove the mussel meat from the shells, reserving 12 mussels on the half shell for garnish, and set aside. Reserve the cooking liquid. There should be about two and one-half cups.
  • In a large pot over high heat, combine the fish stock with two cups of mussel broth. Add the saffron, carrots, celery, pasta and mushrooms, and bring to a boil. Reduce the heat and simmer for three minutes.
  • Add the monkfish to the broth, return to a boil, and lower the heat to simmer for one minute. Add the shrimp, scallions and mussel meat, and cook for one minute.
  • Place two mussels on the half shell in each of six bowls. Ladle equal portions of the soup over the mussels and serve immediately.

3 (8-ounce) bottles clam juice
4 scallions, thinly sliced, white and green parts separated
2 stalks lemongrass, tops trimmed, tender stalks cut into 2-inch pieces and smashed
1-inch piece fresh ginger, peeled and minced (2 tablespoons)
1 clove garlic, minced
1 teaspoon Asian chili paste, such as sambal oelek
1 tablespoon fish sauce
1 1/2 pounds red snapper fillet, or other white fleshed fish, skin removed
4 white mushrooms, sliced
2 carrots, shredded
1 cup cilantro leaves and stems, roughly chopped
Kosher salt
Lime wedges, for serving

Steps:

  • Bring the water and clam juice to a boil over high heat in a large soup pot with the scallion whites, lemongrass, ginger, garlic, and chili paste. Cover and adjust the heat to maintain a simmer, and cook for 10 minutes. Add the fish sauce.
  • Slice the fish into large chunks and add to the broth with the mushrooms and carrots. Cook over medium heat, uncovered, until the fish is opaque and cooked through, about 4 minutes. (Remove and discard lemongrass.) Stir in the cilantro and scallion greens and season with salt. Spoon into warm bowls and serve with lime wedges.

8 dried shiitake mushrooms
2 cups water
1/4 cup oil
1 medium onion, thinly sliced
1 large carrot, julienned
2 celery ribs, diagonally sliced
1/4 head white cabbage, thinly sliced
1/2 teaspoon salt
8 cups vegetable broth
1 1/2 lbs fish, cut in cubes (I used tilapia)
4 tablespoons soy sauce
2 tablespoons dry sherry
1 tablespoon dark sesame oil
1/2 lb snow peas, stemmed
3 scallions, diagonally sliced

Steps:

  • Simmer the shiitakes in 2 cups water for 15 minutes. Drain, but reserve the cooking liquid.
  • Trim and discard the mushroom stems. Slice the caps.
  • Sauté the onion in the oil, in a large soup pot for a few minutes.
  • Add the carrot, celery, and cabbage, and continue to simmer for a few more minutes.
  • Add the broth with the reserved mushroom liquid and simmer until the veggies are barely tender.
  • Add the fish and mushrooms, simmering for 5-7 more minutes.
  • Mix the soy sauce, sherry, and sesame oil together. Add it to the stew when the fish is finished cooking.
  • Add the snow peas and scallions, and serve.

Be sure to use clear full flavored broth. Personally I like to add the carrots & mushrooms into the bowl of steaming broth without simmering them first , personal preference. This is such an attractive, easy to make, light soup that is just perfect for the start of an Oriental meal or with any meal. Substitute strands of cooked Chicken instead of the seafood. See footnore at bottom of recipe for clarifying broth

6 cups clear chicken broth
2 tablespoons fresh lemon juice
3 tablespoons light soy sauce (or use the Japanese Soy)
5 tablespoons med dry sherry (or Madeira wine)
6 green onions, cleaned,white part with 1 inch of green left on
6 mushrooms, cleaned thinly sliced,stems removed (Use 1" mushrooms)
1/2 cup carrot, thinly sliced on the diagonal (slices apprx 1" across)
6 slices lemons
12 medium prawns
12 small scallops or 6 large scallops, cut in half

Steps:

  • Bring your broth to a boil.
  • Add Mushrooms& Carrots simmer for 2 minutes.
  • Add raw prawns& Scallops, simmer until the prawns are just pink.
  • Stir in the lemon juice, Soy& Sherry.
  • Strain the broth into 6 soup bowls and artistically arrange some carrots, mushrooms, 2 prawns, 2 scallops.
  • a slice of lemon and a green onion in each bowl- Serve.
  • N.B ***To clarify Broth:Whisk an egg white into one cup cool broth, Whisk this mixture into the rest of the cooled broth, heat to boiling whisking the entire time. When the broth comes to a boil remove from heat and let it rest 20 minutes. then scoop off the frothy top and you will have beautiful clear broth.

1/4 teaspoon red chili paste
1 teaspoon tomato puree
2 tablespoons breadcrumbs, fresh
2 tablespoons olive oil
6 tablespoons mayonnaise
1/2 lemon, juice only
sea salt
cracked pepper
8 mussels
8 pipis
150 g fish, cubed
2 (400 g) cans tomatoes, whole peeled and chopped
1 onion, sliced
1 leek, sliced
1 chili, red, sliced
2 garlic cloves, sliced
1 bay leaf
1 potato, agria, diced
100 ml white wine
150 ml white wine
600 ml fish stock
1 lemon, juice only
1/4 bunch parsley
ciabatta
1/4 cup provolone cheese, grated

Steps:

  • Firstly make the Rouilly. Mix the chilli paste with tomato puree and breadcrumbs. Fold in the olive oil, then mayonnaise. Finish with the lemon juice and season with salt and pepper.
  • Now make the soup. Heat a large heavy based saucepan to a high heat, add mussels and pipis and the first measure of wine. Cover with a lid and steam until the shellfish are open. Remove from pan, pass the cooking juices through a fine sieve and place to one side. Cover the shellfish with cling-film while they are cooling to prevent them drying out.
  • Wipe the saucepan clean and heat to medium. Drizzle with a little olive oil and gently sweat the onions, garlic, leeks, chilli and bayleaf until soft. Add the second measure of white wine and reduce until all the liquid has evaporated, then add the chopped tomatoes and juice. Bring to a simmer and cook for 25 minutes. Add the fish stock, saved cooking liquid and diced potatoes. Simmer until the potatoes are cooked. Season with salt, pepper and lemon juice.
  • Bring the soup back to the boil, add the white fish and cook for 2 minutes. Place 2 mussels and 2 pips, in the shell, in each bowl, then ladle the soup over the top of the shellfish. Sprinkle with parsley.
  • Serve with toasted ciabatta, rouilly, grated provolone, either on the soup or on the side.
