- 1. Let the frog legs soak in the milk in the fridge for an hour (optional).
- 2. Rinse the legs and pat them dry with kitchen paper.
- 3. Add the olive oil and half of the garlic butter to a large wok or frying pan. Place it over high heat until the butter starts to foam. Don't let it burn.

Steps:
- Place the frog legs into a large bowl, add the milk or the buttermilk to the bowl. Then add the Old Bay Seasoning and Garlic Powder. Cover and place into the refrigerator for about an hour.
- In another bowl, mix the cornmeal, flour, and another 1 teaspoon of Old Bay Seasoning. Mix well.
- As you remove the frog legs from the milk/buttermilk marinate, let the milk drip off, and then place the frog legs into the cornmeal batter, repeat with the milk marinade and again in the cornmeal mixture.
- As you double coat them, place them into a greased air fryer basket, sprayed with cooking spray. Set the temperature to 400 degrees F, air fryer setting for 5 minutes, flip and air fry for another 3-5 minutes. Until fully cooked.
- If you really want them to crisp up, I would suggest spraying them generously with cooking spray.
- Plate, serve, and enjoy!

Steps:
- Place frog legs in a bowl and pour milk over the top. Cover and refrigerate for 1 hour.
- Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Meanwhile, combine cornmeal, flour, and seafood seasoning in a gallon-sized resealable plastic bag. Seal and shake to combine.
- Remove 1 pair of frog legs from the milk, letting excess drain back into the bowl. Place in the bag with the seasoned cornmeal mixture and shake to coat. Dip the frog legs back in the milk and return to the cornmeal mixture. Shake to coat once more and transfer to a plate. Repeat with remaining frog legs.
- Spray the air fryer basket with cooking spray and add as many frog legs as you can without overlapping. Spray the tops with cooking spray. Work in batches if needed.
- Air fry for 5 minutes. Spray any chalky spots with cooking spray. Continue cooking until crispy, about 3 minutes more. Transfer to a plate and repeat with remaining batches.

PEGGI'S FRIED FROG LEGS
I've been cleanin' & fryin' frog legs since I could reach high enough on the stove.Well, actually, I used a chair & stood on my knees. The first time my Daddy brought a mess home for me to clean & cook, he never told me that you had to cut the leader behind each knee, so to speak, so they didn't come back to life & start...

Steps:
- 1. Mix egg & buttermilk.
- 2. Add the frog legs & let set about 15 minutes or so while you get the other stuff ready.
- 3. Heat butter & canola oil in cast iron skillet on medium high heat until hot. Don't overheat as butter burns easily.
- 4. Take frog legs from buttermilk mix & dip in flour that salt & pepper have been added to, one at a time & press the flour onto them to stick on there. Lay on waxed paper until all of them are coated.
- 5. Starting with the first leg you floured, dip in flour again & press & shake of excess & place in ready frying pan. Don't crowd them in pan or they won't brown properly.
- 6. Turn heat to medium, so they don't burn. You want to brown them slowly.
- 7. Brown on one side slowly. Turn & sprinkle with the Garlic season. Brown the other side.
- 8. Transfer onto paper towels to drain. Enjoy!!

- Dip the frog's legs into the milk and egg, then dip into the cracker mixture until evenly coated. Carefully place them in the hot oil. SWAMPFIRE FROG LEGS
When I was growing up, my father exposed us to all types of food. One of my favorites was fried frog legs. My 14 year old niece, Dana visited me this weekend. I asked her if she had ever eaten frog logs before? Her reply was "yuck, auntie" I dont think I could eat those. Well needless to say, she tasted them and loved them....

- Turn on your instant pot and push the saute button, add olive oil and leave until hot. What the oil starts shimmering or instant pot reads hot, add the chicken legs skin side down and brown until the skin is browned and crispy repeat the same for the other side (about 3 minutes on each side). Please be careful as the chicken would splatter if it gets out of hand, reduce the saute function to less from more. Remove the chicken from the pan and set aside
- Reduce the oil in the pan, still continuing on the saute function, add chopped onions and saute until soft, add the chopped garlic and cook for a few seconds then add the butter and stir until it melts in the pan.
- Add lemon zest, Italian seasoning, lemon juice and broth and stir to combine whilst you deglaze the pot at the same time. Return the chicken legs into the pot, you can stack them if need be.

- Turn the pot to SAUTE. Add olive oil to the pot, then add the spinach. Saute until it wilts all the way down. Season with salt and pepper to taste. Then pour the spinach into a strainer to remove any extra liquid. Set aside.
- Turn the pot off of SAUTE. Add a splash of broth to the pot and use a wooden spoon to scrape up any bits of cooked spinach stuck to the bottom of the pot.
- In a bowl, make the filling by mixing ricotta, 1 cup mozzarella, parmesan, garlic, egg, salt, pepper, and spinach. Use a spoon to scoop into the uncooked shells.
- Once all shells are filled, spray the liner of the Instant Pot with nonstick spray. Add the broth into the pot. Then add the stuffed shells, stacking on top of one another if necessary.PLEASE NOTE: Some newer brands of the Instant Pot have a more sensitive burn notice and it doesn't always like cooking the noodles on the bottom of the pot. You can also place the shells on the trivet and fill the pot with enough water or broth to cover the bottom layer of shells halfway. Still top with marinara sauce. With this method, you may need a bit more sauce at the end to spoon over the hot shells.
