SOUTHWESTERN PIZZA
I dreamed up this pizza for a New Year's Eve party at church. My craving for corn bread and black bean and corn salsa was the inspiration.-Caroline Grooms, Dickinson, North Dakota

Steps:
- In a large bowl, combine the flour, cornmeal, sugar, baking powder, cayenne, chili powder and salt. Combine the milk, oil and egg; stir into dry ingredients just until moistened. Stir in the cheeses. , Spread into a greased 15x10x1-in. baking pan. Bake at 400° for 10-12 minutes or until a toothpick comes out clean., In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in water and one envelope of taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Set aside., In a small bowl, combine the sour cream and remaining taco seasoning; mix well. Spread over crust. Sprinkle with the beef mixture and half of the cheeses. , Combine the corn, beans and salsa; spoon over cheese. Sprinkle with remaining cheese. Broil 5-10 minutes or until cheese is melted.

Steps:
- Combine dry ingredients for crust in a large bowl.
- Combine milk, oil& egg in a separate bowl; stir into dry ingredients just until moistened.
- Stir in the cheeses.
- Spread into a greased 15 x 10 x 1 inch baking pan and bake in a preheated 400F for 10- 12 minutes or until a toothpick comes out clean.
- Cook beef in a large skillet, over medium heat until no longer pink, about 10 minutes; drain off fat.
- Stir in water& 1 envelope of taco seasoning.
- Bring to a boil, reduce heat& simmer, uncovered, for 5 minutes.
- Set aside.
- Combine sour cream& 2nd package of taco seasoning in a small bowl; mix well.
- Spread over crust.
- Sprinkle beef mixture over top, followed by half of the cheese mixture.
- Combine the corn, beans& salsa in a small bowl; spoon over pizza top, followed by the other half of the cheese mixture.
- Broil 5- 6 inches from the heat for 5- 10 minutes or until the cheeses are melted.
- Watch Carefully!

- Trim the beef and cut into eight ½-inch thick medallions, about 6 ounces each.
- Season the medallions with Salt and Pepper and brush with Olive Oil; Cover and refrigerate until needed.
- Heat ½ Tablespoon of the Oil in a sauté pan over medium-high heat. Sauté the Garlic and Shallots until aromatic, 1-2 minutes; add Tomato Paste and cook until slightly browned, about 2 minutes; add the Mustard, Black Peppercorns, Chicken Broth, Maple Syrup, Vinegar, Salt and Pepper; Simmer until mixture reduces to a sauce consistency, about 10 minutes.
- Heat the Oil in a skillet on medium-high heat; sauté the medallions to the desired doneness, 1 ½ minutes for the first side and approximately 1 minute for the second side for medium.
- Finish the sauce with the Cilantro and serve over the Tenderloin.
- Garnish with the Jalapeno.

yum, and hearty! For the bean/corn mix, I'll roast an 11oz can of corn & 15oz can of black beans together and freeze half for future. I'm a big fan of Marg's Recipe #1005 pizza dough.

- Roast corn: Mix corn and beans on flat cookie sheet. Roast at 425 for 10-15 minutes, stirring every 5.
- Cook beef: cook ground beef & taco seasoning (to your preference) until beef is no longer pink.
- Mix corn/bean mixture, beef, and green chiles in medium bowl.
- Warm cream cheese in microwave until soft, mix in salsa until creamy.
- Prepare dough according to directions. I usually bake it for about 7-9 minutes at 425, then flip it and add toppings. This has been very successful for me, I never have soggy pizza.
- Spread sauce over pizza dough, top with 1/2 cup cheese. Spread meat mixture, top with cheese.
- Bake at 425 for 15-20 minutes until cheese on top is brown & bubbly.

- Top 4 flour tortillas evenly with 1 cup cheese; top with remaining flour tortillas. Divide picante sauce, Black Bean Salsa, chicken, and remaining 1 cup cheese over flour tortillas. Bake at 400° for 15 minutes, or until cheese is bubbly. Garnish, if desired.
- *2 (11.5-ounce) cans refrigerated corn sticks may be substituted for tortillas. Unroll and press perforations to seal into a lightly greased jellyroll pan to create a rectangular crust. Bake at 375° on lower oven rack 10 minutes. Add toppings, and bake 15 more minutes. Makes 8 pieces.

- Stir together all ingredients. Cover and chill until ready to serve.

- dont forget to add 1/2 cups Southwestern oil sauce.
- Top dough crust with oil sauce, cheese, dollops of sour cream, tomato, jalapenos, and pepper.
- Drizzle with oil.
- Bake in preheated 500° F oven on pizza stone for 8-10 minutes or until crust is golden brown and cheese is bubbly.
- Remove from oven and cool on a wire rack for 2-3 minutes before cutting into wedges and serving.
