WHITE WINE MOJITO
I tend to prefer cocktails that follow classic recipes. But on a recent trip to southern Utah, I happily sipped a moderated mojito at Red Mountain Resort, which does not serve spirits, only beer and wine. The rum in this rendition had been swapped for sauvignon blanc. The general manager, Tracey Welsh, explained: "Our inspiration was to offer a lower alcohol content in cocktail favorites our guests love, allowing them to wake up feeling refreshed the next day, and ready to go for early morning hikes." That's providing you can drink just one.

Steps:
- Take 1/2 lime (cut crosswise) and cut off 1 thin slice and reserve. Cut the rest into 2 wedges. Place in shaker and muddle with 6 fresh mint leaves and 1 teaspoon agave syrup. Add 1/2 cup chilled sauvignon blanc and some ice, and shake well. Serve in a stemmed goblet, topped with 1/4 cup chilled club soda and garnished with reserved lime slice.

MOJITO (CUBAN RUM LIME SPRITZER)
Steps:
- Wash and stem the mint leaves, reserving 6 whole sprigs for garnish. Place the mint leaves in the bottom of a sturdy pitcher and add the sugar. Mash the mint leaves and sugar together, using the tip of a wooden spoon -- this extracts the mint oils. Add the lime juice and rum and stir until the sugar is dissolved. The recipe can be made several hours ahead to this stage. However, expect some discoloring in the mint leaves if you make the mojitos more than 20 minutes ahead.
- Just before serving, add the club soda and gently stir to mix. Partially fill 6 highball glasses with ice. Add the mojito mixture and garnish each glass with a sprig of fresh mint.

Mix this classic cocktail for a party using fresh mint, white rum, sugar, zesty lime and cooling soda water. Play with the quantities to suit your taste.

Steps:
- Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
- Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.
