WATERCRESS NAMUL
a simple side dish made with watercress

Steps:
- Snip off any thick, tough stem ends with a knife. Wash the watercress thoroughly in cold water by swishing around, and drain.
- Boil about 10 cups of water with 2 teaspoons of salt. Blanch the watercress until wilted, 30 - 40 seconds.
- Quickly remove it from the pot, and shock in cold water to stop the cooking.
- Drain, and gently squeeze out excess water. Run the knife through a couple of times to cut them into 2 to 3-inch lengths.
- Add the remaing ingredients and mix everything well, by hand. Let it sit for at least 10 minutes for the seasonings to seep into the watercress.

From "The Pacific Islands Cookbook". A lot of the stuff in this cookbook looks so cool but calls for ingredients that I'd have to scour the city high and low to find! This one though, has stuff I can find and looks like an interesting way to use watercress.

- Wash the watercress and remove any rotted leaves and tough stems. Cut into 1-inch lengths.
- Cook it in 1 1/2 cups boiling water for 3 minutes and drain thoroughly.
- Add the remaining ingredients, mix well, chill for 20-30 minutes, and serve.

Steps:
- Discard coarse stems from watercress and put watercress in a bowl. Lightly toast sesame seeds. In a small bowl whisk together vinegar, oils, and salt and pepper to taste until dressing is combined well. Drizzle dressing over watercress and toss with 2 teaspoons sesame seeds.
- Serve salad sprinkled with remaining teaspoon sesame seeds.
