2 cloves garlic, finely chopped
4 scallions, sliced
2 cups broccoli florets
2 cups shredded rotisserie chicken (skin removed)
1 cup medium-grain white rice
1 plum tomato, chopped
Kosher salt and freshly ground pepper
2 cups low-sodium chicken broth
1/4 cup sour cream
1 cup diced dill havarti cheese (about 4 ounces)
1/4 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. Add the broccoli, chicken, rice, tomato, 1 teaspoon salt, and pepper to taste; stir to combine.
  • Whisk the chicken broth and sour cream in a bowl, pour into the skillet and bring to a simmer. Stir in half each of the havarti and parmesan. Cover tightly with a lid or aluminum foil, transfer to the oven and bake until the rice is tender and most of the liquid is absorbed, about 20 minutes.
  • Turn on the broiler. Uncover the skillet and sprinkle with the remaining havarti and parmesan, then broil until golden, about 2 minutes. Sprinkle with the reserved scallions.

2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
1 teaspoon Italian Seasoning
Salt/Pepper (to taste)
2 1/2 cups chicken broth
1 Tablespoon olive oil
1 1/4 cups white long grain rice (uncooked)
2 cups fresh broccoli florets (uncooked)
10.5 oz. Condensed Cream of Chicken Soup
½ cup milk
½ cup sour cream
2 cups shredded cheddar cheese (separated)
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1 cup Ritz crackers (crushed)
2 Tablespoons melted butter

Steps:

  • Note: This recipe is designed to allow you to prepare all of the casserole ingredients in one pot before transferring to a casserole dish for baking. Before you begin, refer to your rice package for the amount of liquid (we'll use chicken broth) and cooking time. I use white long grain rice and the cooking time/liquid amount below works perfectly.
  • Preheat the oven to 350 degrees.
  • Cut chicken into bite-sized pieces and season with Italian seasoning and desired amount of salt and pepper.
  • Heat butter in a large pot over medium heat until melted. Add the chicken and cook until golden brown on all sides, about 5 minutes. Remove and set aside. Note: This step is not needed if using a cooked rotisserie chicken.
  • Add the chicken broth, olive oil, and rice to the pot and bring to a boil, then reduce heat to a simmer.
  • Cover tightly and cook for 7 minutes.
  • Add the broccoli and replace the cover. Cook for 8 more minutes. Refrain from stirring.
  • Turn off the heat and leave the cover on. Let the rice stand for 10 minutes, do not stir. Any rice on the bottom of the pot will release.
  • Add the cooked chicken, soup, milk, sour cream, optional seasonings, and half of the cheddar cheese.
  • Add to a lightly greased 9 x 13 casserole dish and top with remaining cheese.
  • Cover and bake for 15 minutes.

1 1/2 lbs cooked chicken, shredded
1 (1 lb) bag frozen broccoli florets or 1 (1 lb) bag frozen broccoli cuts
1 1/2 cups raw white rice
salt
paprika
3 tablespoons flour
3 tablespoons butter
2 cups half-and-half
8 ounces sharp cheddar cheese or 8 ounces cracker barrel white cheddar cheese, grated
1 (10 1/2 ounce) can cream of mushroom soup

Steps:

  • Preheat oven to 350.
  • Start the broccoli and rice:.
  • Cook broccoli and rice as per the package instructions.
  • When broccoli is done, drain, let cool and dice.
  • Mix chicken, broccoli, and rice in a greased 9 x 13 pan.
  • For the sauce:.
  • Heat half and half in microwave til bubbles appear around sides of bowl, but it does not boil. Set aside.
  • Melt butter in small saucepan.
  • Add flour and stir crazily til incorporated but not browned.
  • Add half and half.
  • Bring mixture to a boil, whisking continuously.
  • Reduce heat, and gradually add cheese, whisking to incorporate, til melted.
  • Add cream of mushroom soup gradually, whisking til incorporated.
  • Pour sauce over the dry ingredients and combine well.
  • Season to taste with salt.
  • Cover casserole with foil and bake for 45 minutes.
  • Uncover and let bake 15 minutes.
  • Garnish with paprika.

2 tbsp (30g ) unsalted butter
1 tbsp olive oil
1 onion (, finely chopped)
2 garlic cloves (, minced)
500g (1 lb) chicken thigh (, cut into bite size pieces (Note 1))
2.5 tbsp flour ((or 1 ½ tbsp. cornflour / cornstarch))
2 cups (500 ml) milk ((any, I use low fat))
2 cups (500 ml) chicken broth
1 1/4 cups (225g) long grain white rice (, uncooked (Note 2))
1 tsp dried thyme (or other herb of choice)
Salt and pepper
1 large head of broccoli, broken / cut into small florets (~400 - 500g / 14 oz - 1 lb) ((Note 3))
2 cups (200g) shredded mozzarella or cheddar ((or other cheese of choice) (Note 4))
Finely chopped parsley (, optional garnish)

Steps:

  • Melt butter and heat oil in a pot over high heat. Add onion and garlic, cook for 1 minute. Add chicken and cook until it changes from pink to white. (Note 5)
  • Turn stove DOWN to medium. Add flour and stir for 1 minute.
  • Add half the milk, stirring as you go, and once incorporated into the flour add the rest of the milk and stir.
  • Add broth, rice, thyme and a just pinch of salt and pepper.
  • Stir, bring to simmer, then cover. Turn down to medium low and cook for 12 minutes.
  • Remove lid - there should still be liquid on the surface. Working quickly, add broccoli, push down so it's partly submerged, cover and cook for a further 3 minutes until broccoli is just cooked.
  • Preheat grill/broiler. Remove lid and stir through half the cheese - don't worry if it looks a bit too saucy, excess liquid gets sucked up in minutes (see video). Smooth surface, top with remaining cheese. Grill/broil until melted (or just put lid on and allow to melt with residual heat on turned off stove).
  • Serve immediately, garnished with parsley if desired.

4 bone in chicken thighs, 2 large breast can also be used
1 medium head broccoli, florets removed
1 pkg boil in bag rice, or 1 1/2 c. cooked rice
10 1/2 oz cream of chicken soup
1/4 c milk
2 Tbsp butter or margarine, melted
2 c shredded extra sharp cheddar cheese
3/4 c french fried onions
good pinch salt and pepper

Steps:

  • 1. Place the chicken in a pot and cover with water cook over med. high heat until chicken is cooked through (about 25-30 min.). Remove the chicken from the pot and set aside to cool.
  • 2. Using the same pot, add the broccoli florets to the water the chicken cooked in, cook for 7-8 minutes or until tender. Remove the florets with a slotted spoon to a mixing bowl. Place the bag of rice in the same pot of water and cook for 10 minutes.
  • 3. When the chicken has cooled, remove it from the bone and shred. Cut the broccoli up into smaller pieces if some of the florets are large. Add the rice and chicken to the broccoli, stir to combine. Add in the soup, milk, melted butter, 1 1/2 C. cheese, French fried onions, salt and pepper. Stir to combine well. Pour into a 2.5 quart lightly greased casserole dish. Top with remaining cheese. Bake, uncovered in a 375 degree oven for 20-25 minutes or until nice and bubbly.

2 teaspoons chicken bouillon
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
1 tsp EACH garlic powder, dried parsley
1/2 teaspoon ground cumin
1 1/2 cups freshly grated sharp cheddar cheese (divided)
1/2 cup freshly grated Parmesan cheese
1/2 cup sour cream
3 cups cooked basmati rice ((measure cooked))
3/4 cup panko breadcrumbs (preferably Italian panko)

  • Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray.
  • While the chicken is still on the cutting board, dab it with paper towels and season with 1/2 teaspoon salt, 1/4 teaspoon pepper and 1/4 teaspoon paprika; set aside.

  • Panko topping: Melt butter in olive oil over medium heat in a medium skillet. Add panko and stir to coat. Continue cooking until crumbs become golden brown. Evenly sprinkle over cheese.

4 cups frozen broccoli florets, thawed and drained
1-1/2 cups cubed cooked chicken breast
1 cup cubed fully cooked lean ham
1/2 cup shredded reduced-fat cheddar cheese
1 cup sliced fresh mushrooms
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
2/3 cup reduced-fat plain yogurt
1/3 cup reduced-fat mayonnaise
1 teaspoon prepared mustard
1/4 teaspoon curry powder
2 tablespoons grated Parmesan cheese

Steps:

  • Prepare rice according to package directions, omitting the butter. In a 13-in. x 9-in. baking dish coated with cooking spray, layer the rice, broccoli, chicken, ham, cheddar cheese and mushrooms., In a small bowl, combine the soup, yogurt, mayonnaise, mustard and curry powder. Spread evenly over top of casserole; sprinkle with Parmesan cheese. , Bake, uncovered, at 350° for 40-45 minutes or until heated through.

1 small onion (chopped)
4 cups fresh broccoli florets
2 cups rice (cooked)
1 cup cheddar cheese
1 can cream of chicken soup OR homemade cream of chicken soup
1/2 cup sour cream
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
2 cups cooked chicken ((rotisserie chicken works great))
1/2 cup Panko
2 Tablespoons parmesan
3 Tablespoons butter (melted)

Steps:

  • Preheat oven to 350 degrees. In a medium-sized saucepan add the butter and onion and sauté over medium-high heat until almost tender. Add in the broccoli and sauté until they start to soften about 3-4 minutes.
  • In a large bowl combine the broccoli and onion, rice, cream of chicken soup, sour cream, milk, salt, pepper, garlic powder, and chicken.
  • Spread evenly into a 9x13 inch casserole dish.

Chicken Broccoli Rice Casserole made completely in one skillet on your stovetop! Make this yummy chicken casserole in less than 45 minutes.

1 lb. chicken breast
2.5 tablespoons all-purpose chicken seasoning
2 tablespoons olive oil
½ large white onion (minced)
1 tablespoon minced garlic
1 cup uncooked long-grain white rice
3 cups chicken broth
½ teaspoon salt
4 cups chopped broccoli florets
¼ cup shredded parmesan cheese
¼ cup shredded asiago cheese
1/4 cup mozzarella cheese

Steps:

  • Cut the chicken breast into 1-inch chunks and toss the chicken with 1.5 tablespoons of all purpose chicken seasoning. Be sure the chicken is covered in chicken seasoning. Set aside.
  • Heat a large skillet (that has a cover) over medium/high heat. Add olive oil.
  • When the olive oil is fragrant add the onion to the skillet and saute for 2-3 minutes.
  • Add the garlic to the onion and saute for another minute.
  • Next, put the coated chicken pieces to the skillet pan and brown the chicken for 2 minutes on each side.
  • Move the chicken pieces to one side of the skillet and add the rice to the cleared side of the skillet. Toast the rice in the skillet for 3 minutes.
  • Toss the toasted rice with the chicken breast, onion, and garlic and then add the broth, salt, and remaining 1 tablespoon of chicken seasoning to the skillet and mix.
  • Bring the broth to a boil, stir, and turn heat to low. Cover the skillet and let the rice mixture simmer for 10 minutes.
  • Uncover the skillet and add the broccoli florets. Fold the broccoli into the mixture and cover.
  • Cook everything together for an additional 10 minutes.
  • Finally, remove the cover one last time and sprinkle the cheese over the top of the rice, chicken, and broccoli.
  • Cover and let the cheese melt for 1-2 minutes.
