This festive white chocolate cranberry tart is so incredibly smooth and creamy, you're gonna be in heaven. It's decadent filling is so delicious with no baking required.

⅔ cup coconut milk (sub with cashew milk)
1 cup raw cashews (soaked*)
¾ cup cacao butter (sub with vegan white chocolate), melted and cooled
1/3 cup maple syrup
Pinch of salt
4 tbsp vegan white chocolate, melted and cooled
2 cups cranberries (fresh or frozen)
1 cup water
1/4 cup maple syrup
1 tsp agar agar (substitute with gelatin powder 1:1 ratio)
1 1/2 cups gluten-free oats
1/2 cup raw almonds
5 tbsp coconut oil (melted)**
2 tbsp maple syrup

Steps:

  • For the crust add oats and almonds into a food processor. Pulse until combined and add maple syrup and coconut oil. Process into a moist mixture. Firmly press dough into the tart and press up on the sides as well. Bake at 350F for about 10-15 minutes until crust appears golden brown. Let sit for about 5-10 minutes and then transfer onto a cooling rack. In a small saucepan add cranberries, water and maple syrup. Simmer for about 10-15 minutes over low-medium heat until cranberries have broken down. With a hand mixer puree cranberries and add a little bit of water if sauce is too thick. Add 1 tsp of agar agar powder (or gelatin powder) and simmer for another 5 minutes over low-medium heat. Set aside to cool for a couple minutes, then spread cranberry jam/sauce into the crust (½ way full) and let set in the fridge for another 15 minutes. In the meantime prepare the white chocolate layer. Melt white chocolate and cacao butter in a small saucepan over low heat and set aside. In a food processor or high speed blender add cashews, maple syrup and coconut milk. Process until completely smooth. Add melted chocolate/cacao butter and process until combined. Pour white chocolate mixture into the tart and let set in the refrigerator for about 2-3 hours. Garnish with sugar coated cranberries and white chocolate chips and serve immediately. Store leftovers in the refrigerator for up to 3 days.

1 cup all-purpose flour
1/4 cup toasted ground almonds
1 tablespoon sugar
Dash salt
1/2 cup cold unsalted butter
2 to 4 tablespoons ice water
FILLING:
1-1/2 cups slivered almonds, toasted
2 tablespoons unsalted butter
1 ounce unsweetened chocolate, chopped
2 large eggs, room temperature
1/2 cup sugar
1/3 cup golden syrup or light corn syrup
1-1/2 tablespoons Armagnac or Cognac
1/4 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • In a large bowl, mix flour, ground almonds, sugar and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap in plastic wrap. Refrigerate 1 hour or overnight., Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; press onto bottom and up sides of an ungreased 9-in. tart pan with removable bottom. Place on a baking sheet. For filling, sprinkle slivered almonds over crust. In top of a double boiler or a metal bowl over hot water, melt butter and chocolate; stir until smooth. Remove from heat. In a large bowl, beat eggs and sugar until thick and lemon-colored. Beat in golden syrup, Armagnac, vanilla and salt until well blended. Gradually beat in chocolate mixture. Slowly spoon filling over almonds. Bake until set, 35-40 minutes. Cool completely on a wire rack.,

Cranberry Sauce:
1 1/2 cup cranberries
1/2 cup sugar
1/2 cup water
Tart Crust:
(Makes two 10-inch tarts - we will only need one (1) for this recipe)
2 cups all-purpose flour
1/3 cup sugar
½ teaspoon baking powder
¼ teaspoon salt
8 tablespoons butter, cold, cut into 10 pieces
2 whole eggs
Beans for pie weights
White Chocolate Filling:
12 ounces white chocolate chips, chopped
1 ½ cups whipping cream
Garnish:
2 tablespoons chopped pistachios
fresh cranberries

Steps:

  • Cranberry Sauce: Place the cranberries, sugar, and water in a small saucepan and bring to a simmer. Continue to simmer for 10 minutes. Let completely cool and put in the fridge until ready to use. Tart Crust: Combine the flour, sugar, baking powder, and salt in a food processor and pulse a few times to mix. Add the butter and pulse until the butter is completely mixed in. Add the eggs and process until the dough forms a ball. Transfer the dough to a lightly floured work surface, divide the dough in half, and flatten each half into a disk. Cover with plastic wrap and let sit in the refrigerator for 30 minutes. Preheat oven to 350. Prepare the crust by taking one of the pieces of dough from the refrigerator. Let sit at room temperature for 5 minutes. Flour your work surface and roll out the dough to about a 13-inch diameter disk. Line the tart pan with the dough, making sure it's flat against the bottom and the sides of the pan. Prick the bottom and sides of the dough with a fork and place uncooked beans on bottom of crust. Bake for 20 minutes, or until edges of crust are golden brown. Remove from oven and cool completely. Discard beans. In the meantime, prepare the filling. White Chocolate Filling: Combine white chocolate and cream in a microwavable bowl. Microwave on high for 1 minute. Stir. Continue to microwave for 1 more minute; stir until chocolate is completely melted and mixture is smooth. Set aside and let completely cool. Assemble the tart. Drain the cranberries of any excess juice. Spread the cranberry sauce on the bottom of the tart crust. Pour the white chocolate ganache over the cranberry sauce. Garnish with fresh cranberries and chopped pistachios. Refrigerate for 3 hours. Serve.

1 cup finely chopped slivered almonds, toasted
1 cup all-purpose flour
1/2 cup butter
1 egg
1 teaspoon vanilla extract
1 envelope unflavored gelatin
1/4 cup water
1 package (12 ounces) fresh or frozen cranberries
1/2 cup red currant jelly
Whipped cream and additional chopped almonds, optional

Steps:

  • In a large bowl, combine 1/4 cup sugar, almonds and flour; cut in the butter until crumbly. Beat egg and vanilla; add to flour mixture and stir until moistened. Cover and refrigerate for 30 minutes. , Coat fingers with flour and press pastry mixture into the bottom and 1-1/2 in. up the sides of a greased 9-in. springform pan. P;lace on a baking sheet. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. , Meanwhile, soften gelatin over cold water; let stand for 1 minute. Set aside. In a saucepan, combine the cranberries, jelly and remaining sugar. Cook over medium heat until berries pop. Remove from the heat; stir in gelatin until dissolved and cool. Pour into crust. Refrigerate at least 4 hours. Garnish with whipped cream and almonds if desired. Refrigerate leftovers.

White Chocolate-Raspberry Tart, With Almonds and Pistachios image

Ok, this is my new favourite dessert! Crisp pastry with a layer of lush fresh raspberries and nuts, covered in creamy white chocolate - I'm in love! This has been adapted from 'The Chef's Table' and is really easy to put together. You can make the tart case in advance and then fill it 4-5 hours before serving. The recipe makes a 10" tart, but I have made a smaller one (8") by halving the filling, I made an extra tart case with the left over pastry and saved it for another day. Please see additional notes at end.

2 cups plain flour (all-purpose flour)
3/4 cup butter, cut into small pieces
1 tablespoon caster sugar (fine granulated)
1 egg, beaten
2 -4 tablespoons cold water
1 lb good quality white chocolate, broken into pieces
6 tablespoons butter
2/3 cup whipping cream
1/2 teaspoon vanilla or 1/2 teaspoon almond extract
2 cups fresh raspberries, must be fresh, not frozen
1/4 cup sliced almonds, toasted
1/4 cup unsalted pistachios, toasted and roughly chopped
icing sugar, for dusting (powdered sugar)

Steps:

  • You will need a tart pan with a removable bottom that has been lined with baking parchment.
  • Roast the nuts by popping them into a medium oven for 10 minutes or so, until they are just going brown - keep a close eye on them. Put to one side.
  • For the tart crust, put the flour, sugar and butter into a food processor and pulse until you have fine crumbs. Add the egg and 2 tablespoons of the water and pulse until a dough ball starts to come together, add the rest of the water gradually until you have a smooth dough. (you may need more or less water).
  • Shape the dough into a disk, pop into a plastic bag and let it rest in the fridge for 30 minutes.
  • When rested, place the dough onto a floured surface and roll it out to fit the tart pan. Trim excess pastry and chill for 20 minutes.
  • Heat the oven to 350ºF while the pastry is chilling. After removing the case from the fridge, pop a piece of foil or baking parchment onto the crust and fill with baking beans or pie weights. Bake for about 15-20 minutes, edges should be just tuning brown, remove the weights and cook for 5-10 minutes more, or until golden. Remove from oven and cool completely on a wire rack.
  • For the tart filling:.
  • Spread the raspberries evenly over the tart crust, sprinkle half the almonds and pistachios over the raspberries.
  • In a double boiler, over a gentle heat, melt the chocolate and butter. Stir gently and remove from heat, add the vanilla/almond extract and the cream and stir gently until mixed.
  • Pour the chocolate cream over the raspberries and nuts, work quickly as the chocolate will begin to set, smooth top with a spatula or spoon.
  • Immediately sprinkle with remaining nuts.
  • Refrigerate for 4-5 hours and remove from fridge 30 minutes before serving, dust with icing sugar.
  • Notes: If you prefer you can omit the pistachios and another variation is to replace the raspberries with blueberries, although I have not tried it this way. You must use fresh fruit, not frozen. Time does not include refrigeration time.

Pastry for single-crust pie (9 inches)
1 cup fresh or frozen cranberries
1 cup pecan halves
1 cup white baking chips
3 large eggs
3/4 cup packed brown sugar
3/4 cup light corn syrup

1 teaspoon grated orange zest
Whipped cream, optional

Steps:

  • Preheat oven to 350°. Roll out pastry to fit an 11-in. tart pan with removable bottom; trim edges. Sprinkle with the cranberries, pecans and chips. In a small bowl, whisk the eggs, brown sugar, corn syrup, flour and orange zest; pour over chips., Bake 40-45 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack.
