This Jalapeno Pomegranate Glazed Ham is a much-needed update on the traditional holiday ham. We can't celebrate Christmas without a spiral-cut ham, and this year I was determined to mix up the same old same old brown sugar glaze and go with something a little more punchy.

1 7-pound spiral cut smoked ham (bone in)
1 cup chicken stock
2 teaspoons whole cloves (about 20-25)
1 cup pomegranate juice
¾ cup white sugar
½ cup jalapenos (seeded and finely diced)
2 Tablespoons orange juice
2 Tablespoons dijon mustard
1 Tablespoon candied ginger
½ teaspoon cinnamon

Steps:

  • Preheat. Preheat your smoker (or oven) to 325 degrees F.
  • Make the glaze. In a medium saucepan, combine all of the ingredients for the glaze and simmer over medium heat for 15-20 minutes, or until the mixture reduces by about half.
  • Prep. Place your ham cut side down in a cast iron grill pan. Pour the chicken stock into the bottom of the pan and stud the ham all over with the cloves.
  • Glaze and smoke. Brush the ham with half of the thickened glaze and place it on the preheated smoker. Smoke for an hour and a half, basting the ham with the cooking liquid every 15-20 minutes.
  • Finish cooking. Turn the ham onto its side and use a fork to loosen some of the spiral slices. Drizzle the whole ham with the remaining glaze and cook for an additional 30 minutes, spooning the cooking liquid over the ham occasionally. The internal temperature of the ham should read 140 degrees F.
  • Enjoy. Remove the cloves before serving. Reserve the cooking liquid and serve alongside the ham for drizzling and dipping.

This is based on a recipe in Food and Wine. That recipe was adapted from a restaurant's recipe. The glaze is intended for a ham, but I think it would work with pork roast and chicken, as well. I'm posting just the glaze portion of the recipe, you would use it as any other glaze on your ham.

1 (10 ounce) jar jalapeno jelly (1 cup)
1 cup sweetened pomegranate juice
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Steps:

  • In a medium saucepan, bring the jelly and juices to a boil. Simmer over moderate heat until slightly thickened, about 10 minutes.
  • Whisk in the remaining ingredients and simmer until reduced to about 1 1/4 cup, about 5 minutes.
  • If using with ham, drizzle about half over the ham, cover and roast until about 30 minutes from finishing. Drizzle with remaining glaze and finish roasting.

One 8- to 10-pound bone-in, smoked, fully-cooked ham, butt or shank portion
2/3 cup fresh lemon juice (3 to 4 lemons)
1/3 cup fresh lime juice (about 4 limes)
1/2 cup hot pepper jelly
1 teaspoon Worcestershire sauce
1 jalapeno, halved, seeded and sliced

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, whisk together the lemon and lime juices, pepper jelly, Worcestershire sauce and jalapeno in a small saucepan. Bring to a simmer and reduce until thickened to about 3/4 cup, about 20 minutes.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush half of the glaze all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze until glossy, glazed and well browned, about 45 minutes more.

1 fully cooked bone-in ham, shank end (about 10 pounds), at room temperature 1 to 2 hours
1/2 cup honey
1/4 cup apricot jam
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
4 cloves garlic, smashed
2 jalapenos, seeded and diced small
Zest and juice of 1 orange
Freshly ground black pepper
Cheeses (such as Swiss and Cheddar), deli-sliced and cut into triangles
Hawaiian sweet rolls, split
Mustards (such as whole-grain mustard, Dijon, yellow mustard)
Mayonnaise
Sliced cornichons
Pickled Red Onions, recipe follows
3/4 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon kosher salt
1 bay leaf
Red pepper flakes
1 large red onion, halved and sliced into 1/4-inch-thick half-moons

Steps:

  • For the ham: Preheat the oven to 325 degrees F and adjust the oven rack to the lowest level.
  • Using a sharp paring knife or box cutter, score the entire fat layer of the ham with deep cuts (being careful to not cut into the meat) in a 1/2-inch-wide diamond pattern.
  • Place the ham cut side-down in a roasting pan fitted with a rack and add water to the bottom of the roasting pan about 1/2 inch deep. Cover loosely with foil and bake for 45 minutes.
  • Meanwhile, make the glaze: In a small saucepan over medium heat, stir together the honey, jam, mustard, vinegar, garlic, jalapeno, orange zest and juice and pepper to taste until combined. Bring to a gentle simmer over medium heat. Cook, stirring often, until the glaze is slightly thickened, 3 to 5 minutes. Remove from the heat and set aside.
  • Remove the foil from the ham and spoon the pan drippings over the top; then generously brush the glaze all over. Continue baking the ham, uncovered, and repeat the basting with juices and brushing with glaze every 20 minutes until the glaze is deep golden brown and caramelized or until the internal temperature reaches 130 degrees F, 10 to 12 minutes per pound, about 1 hour more.
  • Loosely cover the ham with foil and let rest 15 minutes before slicing. Serve warm or at room temperature as a main course, or prepare a sandwich bar.
  • For the ham sandwich bar: Arrange all the ingredients on the table or counter. I like to assemble my sandwich like this: Put cheese and then a couple of slices of ham on a bun bottom. On the bun top, dollop mustard and mayo, then top with cornichons and Pickled Red Onions. Close up the sandwich.
  • To a saucepan, add the vinegar, sugar, salt, bay leaf, red pepper flakes to taste and 1/2 cup water and bring to a boil. Put the onions in a heatproof container and pour the boiling pickling liquid over them. Let the onions sit for 30 minutes to let cool. Cover and refrigerate until ready to use.

1 cup chicken stock or low-sodium broth
20 whole cloves
One 10-ounce jar jalapeño jelly (1 cup)
1 cup sweetened pomegranate juice
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Steps:

  • Preheat the oven to 325°. Place the ham in a large roasting pan and add the chicken stock. Stud the ham all over with the cloves. In a medium saucepan, bring the jalapeño jelly, pomegranate juice and lemon juice to a boil. Simmer over moderate heat until slightly thickened, 10 minutes. Whisk in the mustard, cinnamon and ginger and simmer until reduced to about 1 1/4 cups, about 5 minutes. Drizzle half of the glaze over the ham and cover with foil. Roast for 1 1/2 hours, basting frequently, until a thermometer inserted in the thickest part of the ham registers 125°. Remove the foil and brush the ham with any remaining glaze. Roast for 30 minutes longer, until the top is lightly caramelized. Transfer to a platter. Discard the cloves. Pour the pan juices into a bowl and serve with the ham.

SPICED POMEGRANATE & ORANGE GLAZED HAM

1.5-2kg unsmoked boneless tied gammon joint
2 bay leaves, plus extra to serve (optional)
3 star anise
4 whole cloves, plus extra for studding the ham
8 allspice berries
10 whole peppercorns
1 litre pomegranate juice
2 small oranges, 1 halved, 1 sliced, plus 1 tsp juice
1 tbsp pomegranate molasses
1 tbsp Dijon mustard
2 tbsp brown sugar
1 tbsp honey
80g pomegranate seeds to serve (optional)

Steps:

  • Put the gammon in a large pan with the bay leaves, star anise, cloves, 6 allspice berries and 8 peppercorns. Pour over the pomegranate juice to cover the gammon (you may need to top up with water). Add one of the orange halves, then bring to a simmer and partially cover with a lid. Cook for 2 hrs 30 mins, topping up with water as needed to keep the gammon covered. Leave to cool in the liquid for 20 mins, then lift out and place on a baking tray lined with baking parchment.
  • Heat the oven to 200C/180C fan/gas 6. Cut the skin off the gammon, leaving a 1cm layer of fat. Score lines into the fat at ½cm intervals using knife. Bake for 15 mins until the fat is starting to crisp.
  • Meanwhile, crush the remaining allspice berries and peppercorns with a pestle and mortar. Combine the crushed spices with the molasses, mustard, sugar and 1 tsp orange juice. Remove the gammon from the oven and brush over the molasses mixture. Arrange the orange slices over the gammon, securing them with some cloves.
  • Turn the oven to 180C/160C fan/gas 4 and return the gammon to the oven for another 20 mins. Brush the honey over the orange slices and bake for another 5-10 mins, or until the glaze is bubbling. Leave to rest for at least 20 mins, then serve with bay leaves and pomegranate seeds scattered over, if you like.
