This speedy candy recipe can be varied depending on the type of fruit or nuts you have on hand. Since we have a walnut tree, I use walnuts, but pecans could also be substituted, as well as dried cherries in place of the cranberries. -Marcia Snyder, Grand Junction, Colorado

1 tablespoon butter, melted
2 packages (10 to 12 ounces each) white baking chips
1-1/2 cups walnut halves
1 cup dried cranberries
1/4 teaspoon ground nutmeg

Steps:

  • Line a 15x10x1-in. baking pan with foil. Brush with butter. Microwave white chips on high until melted; stir until smooth. Stir in walnuts, cranberries and nutmeg. Spread into prepared pan. Chill until firm. Break into pieces.

4-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (18 oz.), chopped
1 can (6 oz.) mixed nuts
1/2 cup dried cranberries
1/2 tsp. vanilla
1/4 tsp. ground nutmeg

Steps:

  • Microwave chocolate in large microwaveable bowl on HIGH 2 min. or until almost melted, stirring every 30 sec. Stir until chocolate is completely melted.
  • Stir in remaining ingredients until blended; spread immediately onto foil-covered baking sheet.
  • Refrigerate 4 hours or until firm. Break into pieces.

Adapted from and inspired by recipe # 48582, butterscotch blondies. The store was out of butterscotch chips, and this came to mind when I saw the cinnamon chips.

3/4 cup butter or 3/4 cup margarine, softened
3/4 cup light brown sugar, firmly packed
1/2 cup sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon nutmeg
1 cup cinnamon baking chips
1 cup white chocolate chips
3/4 cup walnuts

Steps:

  • Preheat oven to 350°.
  • Grease 13 x 9 inch baking pan (I like to use the wrapper from the butter to do this).
  • Beat butter and sugars in a large mixing bowl until creamy.
  • Add eggs and beat well.
  • Sift together flour, baking soda, salt and nutmeg; gradually add to butter mixture, blending well.
  • Stir in cinnamon chips, white chocolate chips and nuts.
  • Spread into prepared pan. The batter will be very thick.
  • Bake 30 to 35 minutes or until top is golden brown and center is set.
  • Cool completely in pan on wire rack.
  • Cut into bars.
