This down-home dessert takes on a touch of elegance when I serve it warm and drizzled with a thin orange custard sauce. It's so pretty that I often make it for dinner guests using either fresh or frozen cranberries. -Margery Richmond, Fort Collins, Colorado

16 slices bread, crusts removed, cubed
1-1/2 cups fresh or frozen cranberries, thawed
1 tablespoon grated orange zest
1/4 cup butter, melted
6 large eggs
4 cups whole milk
3/4 cup plus 1 tablespoon sugar, divided
1 teaspoon vanilla extract
ORANGE CUSTARD SAUCE:
3 large egg yolks
1/4 cup sugar
1 cup heavy whipping cream
1 orange zest strip (1/4 inch)
1/2 teaspoon orange extract

Steps:

  • Preheat oven to 375°. In a greased 13x9-in. baking dish, layer half of the bread cubes, cranberries and orange zest. Repeat layers. Drizzle with butter. , In a large bowl, beat the eggs, milk, 3/4 cup sugar and vanilla until blended; pour over bread mixture. Let stand for 15-30 minutes. Sprinkle with remaining sugar. , Bake, uncovered, for 65-75 minutes or until a knife inserted in the center comes out clean., For sauce, in a small heavy saucepan, whisk egg yolks and sugar. Stir in cream and orange zest strip. Cook over low heat about 15-20 minutes or until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly but gently. Do not allow to boil. Immediately transfer to a bowl., Place bowl in an ice-water bath for a few minutes, stirring occasionally. Stir in extract. Discard orange zest. Refrigerate until chilled. Serve with bread pudding.

This pudding, inspired by the highly delicious White Chocolate Bread Pudding at the Palace Cafe, has the soul of a New Orleans bread pudding. But it's gussied up for the season with cranberries, which add a wonderful tart contrast to the white chocolate in the butter and cream-rich custard, and a nice glug of bourbon, which certainly doesn't hurt anything. It's a perfectly decadent entrée into the Thanksgiving season.

1 loaf french bread (approximately 16 ounces)
3 cups (24 ounces) whipping cream
1 cup (8 ounces) milk
1/2 cup (about 3 1/2 ounces) granulated sugar
1/2 teaspoon salt
2 teaspoons cinnamon
8 ounces white chocolate
7 large eggs
1 cup (about 3 1/2 ounces) dried cranberries, divided (use fruit sweetened or unsweetened for best results)
3 ounces bourbon (optional)
For the Sauce:
4 ounces white chocolate
1 1/2 cups (12 ounces) milk
Confectioners' sugar, to finish (optional)

Steps:

  • Preheat oven to 350°F. Grease a 9- by 13-inch pan. Set to the side.
  • Cut the bread into 1-inch cubes.
  • In a large saucepan, heat the whipping cream, milk, and sugar over medium heat. Dash in the salt and cinnamon. When hot, take off the heat and add the white chocolate pieces; stir until melted.
  • Lightly beat the eggs in a large bowl. Slowly pour the hot cream mixture into the eggs in a steady stream, whipping the eggs as you pour. If you want, add that glug of bourbon now.
  • Bake for 40 to 50 minutes, or until set and golden on top. You don't want brown, just lightly golden.
  • While it bakes, prepare the sauce. Bring the milk to a boil in a small sauce pan. Take off the heat and add white chocolate; stir until smooth and completely melted. It's going to be a fairly liquid sauce.

1/2 cup butter flavor shortening
1 cup granulated sugar
3 large eggs
1/2 cup buttermilk
3 tablespoons orange juice
1 teaspoon lemon zest, minced
1 teaspoon vanilla extract
1/2 cup vanilla chip, melted, cooled
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups dried cranberries

Steps:

  • Preheat oven to 350 degrees F, then grease & flour a 9-inch loaf pan.
  • In large mixing bowl, cream shortening & sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in buttermilk, orange juice, lemon zest & vanilla.
  • Stir in melted chips.
  • In another bowl, whisk together flour, salt & baking soda, then gradually add to this to creamed mixture.
  • Stir in cranberries.
  • Pour into prepared loaf pan & bake 55-60 minutes or until a toothpick inserted near center comes out clean.
  • Cool 10 minutes before removing from pan & cooling completely on wire rack.

What's not to like, especially if you're a chocoholic who loves those tart little red berries AND bread pudding! Although the original of this recipe was found in the Pillsbury Holiday Baking 2008 cookbook, it has been considerably tweaked ! For the optional dark chocolate, I use half of a Hershey's Special Dark Mildly Sweet Chocolate bar, chopped.

4 large eggs
1 1/4 cups brown sugar, packed
1/2 cup unsweetened baking cocoa
3 cups half-and-half
1 lb whole wheat bread, cut into 1/2-inch cubes (or torn apart)
2 cups dried cranberries
3 1/2 ounces dark chocolate, coarsely chopped (optional)
1 -2 tablespoon orange zest, minced (optional)
1/2 cup granulated sugar
2 tablespoons unsalted butter
1 cup vanilla baking chips
1 cup whipping cream
1 teaspoon pure vanilla extract

Steps:

  • FOR THE BREAD PUDDING: Preheat oven to 350 degrees F, then coat the inside of a 13"x9" glass baking dish with cooking spray.
  • In a large bowl, whisk together the eggs, brown sugar, cocoa & half-and-half until well blended.
  • Add the bread pieces & stir gently with a large spoon to coat bread with the liquid. Let this bread mixture set for 10 minutes.
  • Add cranberries (along with the dark chocolate & orange zest, if using) & stir once again before pouring the entire mixture into the prepared baking dish, making sure that the cranberries are well-distributed.
  • Bake uncovered for 45 to 50 minutes or until a knife inserted in the center comes out clean.
  • FOR THE SAUCE: In a 1-quart saucepan, stir together the granulated sugar, butter, baking chips & whipping cream, then cook over medium heat for 3 or 4 minutes, stirring frequently, until slightly thickened & smooth.
  • Remove from heat & stir in the vanilla. Sauce will be thin.
  • Serve sauce over warm bread pudding.
