AUTHENTIC HOMEMADE INDIAN CHAI
An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

Steps:
- Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

Steps:
- In a medium saucepan, combine fennel seed, cardamom, cloves, cinnamon stick, ginger root, peppercorns and water. Boil for 5 minutes. Remove from the heat and steep for 10 minutes. Add the tea, bring to a boil, reduce the heat, and simmer 5 minutes.
- Strain mixture, discard spices and return the tea to the saucepan. Stir in the brown sugar and milk. Serve immediately.
HONEY VANILLA WHITE TEA CHAI
This is the tastiest way I've found to make honey white tea chai. You can change it up however you like.

WHITE CHAI TEA
This is a chai tea with a lighter creamier flavor. The flavor sort of reminds me of a cup of white hot chocolate. In fact, I'd much rather have a cup of chai over hot chocolate any day! So, anyway, here's the recipe! It makes about 1 really big mug, or two small mugs.

Steps:
- Put water and spices (except for the white tea) into a small pot.
- Add water and cook on medium for 6 minutes, then add white tea.
- Place lid on pot and cook for 6 minutes.
- Add in milk and stir, then turn off the stove burner.
- Add sugar and stir until completely dissolved.
- Strain spices out and enjoy!

WHITE CHOCOLATE CHAI LATTE
This is made with green tea, not with black. Not exactly a very classical chai, but made out of a sudden green tea - cardamom - latte - craving. It turned out much better than I ever hoped it would! I used rice milk, but will post it just with "milk", use what matches your needings.

Steps:
- Put all ingredients except the white chocolate in a blender and mix on high.
- Pour mixture into a sauce pan, add white chocolate, bring to a slight simmer and simmer for 4 minutes.
- Put hot mixture back into blender, blend again on high until creamy.
- Strain through a sieve.
- Serve hot.
- Enjoy!

Steps:
- Heat the milk in a saucepan over a very low heat. Empty the contents of the tea bags into the pan, then add the cracked cardamom pods, cinnamon stick, nutmeg and cloves.
- Sweeten with light brown soft sugar to taste (chai tea should be sweet, but use less if you like), then leave to infuse, but not boil, for 10 mins. Strain into mugs and enjoy.
