2 tablespoons olive oil
8 tablespoons unsalted butter, 1 stick
4 cloves garlic, minced
1 teaspoon red pepper flakes
1 ¼ lb large shrimp
salt, to taste
pepper, to taste
1 teaspoon dried oregano
4 cups baby spinach
¼ cup parmesan cheese, grated
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice

Steps:

  • In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente.
  • Drain and set pasta aside.
  • In the same pan, heat olive oil and 2 tablespoons of butter. Add garlic and crushed red pepper, cook until fragrant.
  • Toss in shrimp, salt and pepper to taste, and stir until shrimp start to turn pink, but are not fully cooked.
  • Add oregano and spinach, cook until wilted.
  • Return cooked pasta to the pot, add remaining butter, parmesan, and parsley. Stir until well mixed and the butter is melted.
  • When the shrimp are cooked, add lemon juice, mix once more, then serve while hot.

1 pound shrimp, peeled and deveined

Steps:

  • Bring a large pot of lightly salted water to a boil.

Good olive oil
Kosher salt and freshly ground black pepper
1 pound angel hair pasta
4 tablespoons (1/2 stick) unsalted butter, melted
Zest and juice of 2 lemons

Steps:

  • Preheat the oven to 400 degrees F. Place the shrimp on a sheet pan with 1 tablespoon olive oil, 1/2 teaspoon salt and 1/2 teaspoon pepper.Toss well, spread them in one layer and roast for 6 to 8 minutes, just until they're pink and cooked through.
  • Meanwhile, drizzle some olive oil in a large pot of boiling salted water, add the angel hair and cook until al dente, about 3 minutes. Drain the pasta, reserving some of the cooking liquid. 1 pound spaghetti
3 tablespoons extra-virgin olive oil, 3 turns of the pan
4 cloves garlic, finely chopped
1/2 teaspoon crushed red pepper flakes
2 lemons, zested and juiced
1/2 to 3/4 cup heavy cream
1 cup grated Parmigiano Reggiano
Handful flat-leaf parsley, finely chopped
1/2 cup (10 or 12 leaves) fresh basil, very thinly sliced

Steps:

  • Bring a large pot of water to a boil. Salt the water and drop the spaghetti into the pot.
  • Heat a large deep skillet over low heat. Add extra-virgin olive oil and garlic and crushed red pepper flakes.
  • When the pasta has been cooking about 5 minutes, add lemon juice, a ladle of the cooking water from the pasta and the cream to the garlic and oil. Raise heat a bit to bring sauce to a bubble.
  • Drain pasta when it still has a good bite to it, al dente. Add lemon zest and half of the cheese to the cream sauce. Season the sauce with salt, to taste. Add pasta to pan and turn off heat. Toss the pasta with sauce a minute or 2, allowing it time to soak up the sauce.
  • Top the plates of pasta or platter with remaining cheese, parsley and basil.

  • For the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain the pasta, reserving the pasta water.
  • While the pasta is cooking, whisk together the olive oil, Parmesan, lemon zest and juice in a large bowl. Toss the drained pasta with the lemon sauce, the shrimp and some of the reserved pasta water; add 1/4 cup at a time as needed to moisten. Add the salt, pepper and basil and toss. Steps:

  • Gather the ingredients.
  • Bring a large pot of salted water to a boil. Add the pasta to the boiling water and cook according to the package directions, or until al dente . Before draining, reserve 1/3 cup of pasta cooking water.
  • While the pasta is cooking, heat 2 tablespoons of the oil in a large skillet over medium heat. Add the shrimp in a single layer. Sprinkle with salt and pepper.
  • Cook for 2 minutes, turn the shrimp over, add the remaining tablespoon of oil, the garlic, and red pepper flakes. Stir constantly for 1 to 2 minutes.
  • Add the lemon zest and white wine to the shrimp. Stir and let the wine reduce slightly. Stir in the lemon juice.

There are many interpretations of the classic Italian pasta dish, spaghetti al limone, or spaghetti with lemon. Some call for an Alfredo-like sauce made with heavy cream, butter and Parmesan, while others rely on just olive oil, lemon juice, Parmesan and starchy pasta water. This particular recipe, which adds sautéed shrimp, white wine and fresh tarragon to the mix, leans toward the simpler preparation. Without the addition of heavy cream, the sauce has a brighter lemon flavor, which works beautifully with the delicate brininess of the shrimp. Tarragon adds a fragrant note and a bit of complexity to an otherwise fairly straightforward dish. Finally, if there were a time to spring for freshly grated Parmigiano-Reggiano, this would be it. In an uncomplicated recipe like this one, the quality of each ingredient is paramount.

1 pound spaghetti
1 pound large shrimp (18 to 20 count), peeled and deveined, tails on or off
1/4 cup olive oil
2 lemons, zested (about 1 1/2 packed tablespoons), plus 3 tablespoons lemon juice
1 tablespoon chopped fresh tarragon, plus more for serving
1/2 cup dry white wine
3 tablespoons cold unsalted butter, diced
3/4 cup freshly grated Parmesan

Steps:

  • Bring a large pot of salted water to boil. Add the spaghetti and cook according to package directions until al dente. Scoop out 1 cup of the cooking liquid, then drain the pasta and set aside.
  • While the pasta cooks, pat the shrimp dry and season them with salt and black pepper. Combine the olive oil, lemon zest (setting a few pinches aside for serving) and tarragon in a large skillet set over medium heat. When the oil begins to sizzle, cook for 1 more minute, until the zest and tarragon are fragrant but not browned.
  • Add the shrimp to the skillet and spread into an even layer. Cook for about 90 seconds on each side, or until just cooked through. Transfer the shrimp to a plate and set aside.
  • Add the wine, 1 teaspoon salt and a few grinds of black pepper to the skillet, and bring to a simmer, scraping any browned bits from the pan. Cook until the wine has reduced by about half, then set aside, off the heat, until the pasta has finished cooking.
  • Add the cooked pasta and reserved pasta water to the skillet. Cook over medium-low heat for 2 to 3 minutes, tossing often, until the liquid that has collected at the bottom of the skillet has reduced slightly. (The sauce should still be fairly loose at this point.)
  • Off the heat, add the butter and 1/2 cup Parmesan, sprinkling the cheese evenly over the pasta. Toss until the butter and cheese are melted and the sauce is smooth. Add the lemon juice and remaining 1/4 cup Parmesan and toss until the sauce is thick and smooth.
  • Add the shrimp, toss, then season with more salt and black pepper to taste. Divide among shallow bowls and garnish with chopped fresh tarragon, lemon zest and black pepper.

1 pound large shrimp (21/25 count)
1/2 pound spaghetti
1/2 stick unsalted butter
1 large lemon juice and zest
1/4 cup olive oil
2 tablespoons extra virgin olive oil (for finishing)
1/4 cup fresh parsley (minced)
6 cloves garlic (sliced)
1 cup pasta water (reserved)
1/2 teaspoon baking soda
1/4 teaspoon black pepper
1/8 teaspoon crushed red pepper
1 teaspoon kosher salt

Steps:

  • Place cleaned and dry shrimp in a bowl with 1/2 tsp baking soda, 1/2 tsp kosher salt, 1/4 tsp black pepper and 1/8 tsp of crushed red pepper. Mix well.
  • Meanwhile cook pasta "al dente" in salted water (2 Tbsp kosher salt per gallon of water) and reserve at least 1 cup of pasta water before draining.
  • Heat a large pan to medium heat. Add in a 1/4 cup of olive oil and saute shrimp for about 4 minutes or until done (when the shrimp are firm and pink). Remove shrimp and set aside tented with foil to keep warm. To the same pan add the garlic. Saute garlic for 2-3 minutes until lightly golden.
  • Add a 1/2 cup of pasta water to the pan. Also, add the butter and the al dente pasta. Cook for 1 minute tossing to coat well so the sauce absorbs and clings to the pasta. Add the shrimp, parsley, lemon juice, lemon zest, and toss/mix again.
  • Turn off the heat and taste test. Make final adjustments to salt, pepper and crushed red pepper. If the pasta becomes too dry add a couple more ounces of pasta water. Serve with a healthy drizzle of extra virgin olive oil on each plate and lemon wedges on the side. Enjoy!

500 g/1lb tagliatelle (or pasta of your choice)
3 tbsp butter
500 g/1lb shrimp/prawns (deveined and shelled)
4 garlic cloves (crushed)
1 cup/250ml cream
2-3 tbsp fresh lemon juice
handful fresh parsley (finely chopped)
salt (to taste)
pepper (to taste)

Steps:

  • Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of cooking water.
  • In the meantime, melt 2 tablespoons of butter in a large skillet/frying pan and cook the prawns in batches until golden brown and opaque. Season the prawns to taste.
  • Remove from the pan and set aside.
  • Add the remaining butter and garlic and cook for a few seconds, until the garlic is fragrant then pour in the cream, lemon juice (start with 2 tablespoons and add more if you wish), parsley and season to taste.
  • Allow to simmer over gentle heat until the sauce coats the back of a spoon. Add the shrimp back in and adjust seasoning.
  • Add the pasta and a little of the cooking water and toss until the pasta is coated in the sauce.
  • Serve with lemon wedges and chopped parsley.

Steps:

  • Cook pasta according to package directions. Drain.
  • Melt butter in 10-inch nonstick skillet over medium-low heat until sizzling. Stir in lemon zest and pepper. Add shrimp; cook 5-7 minutes or until shrimp turn pink. Add spinach; continue cooking until wilted. Add pasta and cheese; toss until coated.

1/2 pound fettuccine
1/2 cup butter (separated)
4 cloves garlic (minced)
1 teaspoon red pepper (crushed)
3 tablespoons lemon juice (fresh squeezed)
1 pound shrimp (peeled and deveined)
to taste salt and pepper
2 cups baby spinach
1/2 cup parmesan (freshly grated)
2 tablespoons parsley (chopped fresh)

Steps:

  • Bring a large pot of salted water to a boil, cook the pasta to al dente - about one minute less than package directions. Drain it well and set aside. Do not rinse.
  • Melt half of the butter in a large, heavy bottomed skillet. Add the garlic and cook for a minute or two, then add the crushed red pepper and lemon juice. Stir until hot.
  • Add the shrimp, season generously with salt and pepper and cook, stirring, until pink - about 3 - 4 minutes.
  • Add the remaining butter, the cooked pasta and spinach, and stir with tongs to combine and wilt the spinach. Add the parmesan and stir more to combine.
  • Use the tongs to serve the pasta immediately and garnish with fresh chopped parsley.
