I have been working on making healthier meals to keep my blood sugar in check. I have been buying canned beans to try and coming up with creative soups for my lunches.

1 large yellow onion, finely diced
1/2 lb baby carrots, finely diced
3 tablespoons olive oil
1 (16 ounce) package jimmy dean 97% fat-free breakfast sausage, crumbled
1 tomatoes, 1 inch chunks
1/4 head savoy cabbage, julienne sliced
2 (15 1/2 ounce) cans cannellini beans
32 ounces chicken broth

Steps:

  • First: In a large soup pot or dutch kettle, saute the carrots and onions in the olive oil.
  • Second: When the onions have turned translucent and the carrots have softened, add the sausage.
  • Third: Once the sausage is cooked through, add the tomato, cabbage, beans, and broth.
  • Let the soup simmer for 30 minutes.
  • FYI- This soup is even better served the following day.
  • A French baguette, Brie cheese and Bosc pears round out the meal for a continental flair.
  • Or try, Cornbread, Cheddar Cheese and a Gala Apple for a hearty American meal.

My Ethiopian friend brought this dish to a potluck and I've been making it ever since. It is healthy and delicious. Do not add liquid. The cabbage and potatoes release enough moisture on their own.

4 carrots, thinly sliced
1 onion, thinly sliced
1 teaspoon sea salt
½ teaspoon ground black pepper
½ teaspoon ground cumin
¼ teaspoon ground turmeric
½ head cabbage, shredded
5 potatoes, peeled and cut into 1-inch cubes

Steps:

  • Heat the olive oil in a skillet over medium heat. Cook the carrots and onion in the hot oil about 5 minutes. Stir in the salt, pepper, cumin, turmeric, and cabbage and cook another 15 to 20 minutes. Add the potatoes; cover. Reduce heat to medium-low and cook until potatoes are soft, 20 to 30 minutes.

This Italian sausage soup with cannellini beans is a family favorite and perfect for a cold winter day.

1 tablespoon olive oil
2 pounds mild Italian sausage links, casings removed
1 small onion, chopped
2 tablespoons garlic, minced
1 (32 ounce) carton beef stock
2 cups water
4 cubes beef bouillon
1 (16 ounce) can tomato sauce
1 (15.5 ounce) can cannellini beans, drained and rinsed
1 (15.5 ounce) can dark red kidney beans, drained and rinsed
1 (15.5 ounce) can garbanzo beans, drained and rinsed
1 (14.5 ounce) can cut green beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 (14.5 ounce) can sliced carrots, drained
½ (6 ounce) can tomato paste
1 (1.25 ounce) package beefy onion soup mix
1 ½ cups shredded cabbage
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 teaspoon ground black pepper, or to taste
1 teaspoon salt, or to taste
1 cup shell pasta
¼ cup shredded Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, onion, and garlic; cook and stir until sausage is browned and crumbly and onion is translucent, 8 to 10 minutes.
  • Pour beef stock into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add water and bouillon cubes.
  • Add tomato sauce, cannellini beans, kidney beans, garbanzo beans, green beans, diced tomatoes with juice, carrots, tomato paste, soup mix, cabbage, garlic powder, Italian seasoning, pepper, and salt. Reduce heat to medium and simmer for 40 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain.
  • After soup has cooked for 40 minutes, add cooked shells. Simmer for another 5 minutes. Ladle into bowls and top with shredded Parmesan cheese.

2 carrots, peeled, diced
1 onion, finely chopped
1 garlic clove, finely chopped
4 cups vegetable stock
1 (800 g) can diced tomatoes
1 (400 g) can brown lentils, drained and rinsed
1 (400 g) can cannellini beans, drained and rinsed
parmesan cheese, to serve or crispy bacon
salt and pepper

Steps:

  • Heat oil in large pot.
  • Add carrot, onion and garlic.
  • Cook 3 minutes till soft.
  • Add stock and tomatoes, bring to boil.
  • Reduce heat and simmer 20 minutes.
  • Add lentils and beans, cook further 10 minutes.
  • Or keep simmering till desired thickness.
  • Season to taste, serve with bacon or parmesan.

1 c water
1/4 c tomatoe paste
2 can(s) 15 oz. each cannelline beans,rinsed drained

Steps:

  • 1. 1. In a large pot, heat olive oil over high heat. Add cabbage, carrots, garlic, thyme, and pepper; cook 2 to 3 minutes.
