- In a medium saucepan, heat oil over medium heat. Add onion, jalapeno, garlic, oregano, and cumin; season with salt and pepper. Cook, stirring occasionally, until vegetables begin to soften, 3 to 4 minutes.

- Cook wild rice according to package directions..
- Meanwhile, heat oil over medium heat in a large pot.
- Add onion and saute for 3-4 minutes, until softened. Add garlic and saute an additional minute, until fragrant.

- In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
- In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.

WHITE BEAN TURKEY CHILI

- Heat a large heavy pot or Dutch oven over medium flame. When hot, spray with oil.
- Add onions and garlic, saute until soft, about 4 to 5 minutes.
- Add the meat and cook, breaking it up until white and cooked through, about 5 minutes.
- Add diced green chilies, salt, cumin, oregano, chili powder, red pepper flakes and cook for 2 minutes.
- Pure 1 can of beans in the blender with 1 cup of the broth. Add to the pot with the remaining beans, broth and bay leaf and bring to a boil.
- Cover and reduce to a simmer, about 30 to 35 minutes mixing occasionally, until thickened and the flavors meld.
- Stir in sour cream and cook 4 to 5 minutes. Adjust seasoning and salt to taste.

HEALTHY WHITE BEAN TURKEY CHILI
I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions.

- Heat the Instant Pot to the SAUTE function. Add the olive oil, onion, and carrot. Cook, stirring occasionally, until the vegetables are soft (about 5 minutes).
- Add the garlic and ground turkey and cook, stirring occasionally, until the turkey has browned (5 minutes).
- Add the chicken broth or stock and scrape any browned bits from the bottom of the pan. Important before the pressure cooking cycle to avoid a burn warning.
- Add the diced tomatoes, great northern beans, chili powder, cumin, paprika, and Italian seasoning. Stir to combine.
- Seal the lid and set the pressure release valve to the "sealing" position. Select Manual - High Pressure for 8 minutes.
- When the cooking cycle is completed allow a NATURAL RELEASE for 5 minutes followed by a MANUAL RELEASE to release any remaining pressure.
- Season salt and black pepper to taste.
- Enjoy warm, topped with your favorite garnishes. Store any leftover chili in an airtight container in the refrigerator for up to 5 days.

- In a large heavy-duty bottom dutch oven, heat olive oil over medium heat. Add onion and poblano pepper with a pinch of salt. Cook, stirring occasionally until softened, about 5-7 minutes.
- Add turkey and cook until crumbled and no longer pink, about 5 minutes. When turkey meat begins to brown, season with salt and pepper to taste.
- Stir in garlic, chili powder, cumin, oregano, and brown sugar. Cook until fragrant, while stirring constantly, about 30 seconds.
- Add crushed tomatoes, tomato paste, green chilies, beans, and stock. Season wtih salt salt and pepper to taste. Bring to a simmer. Reduce heat and simmer, partially covered, for 30 minutes, stirring occassionally. Taste for salt and pepper halfway through. Serve with toppings of choice.

- Set oven to medium broil. Place whole poblanos, jalapeno (if using), and garlic cloves (still in skin) on a foil-lined baking sheet. Place under the broiler until the skin starts to blister and turn black, turning occasionally with tongs. **Note: the garlic will be finished first, in about 10 minutes.
