White Bean Dip comprises white beans that have been blitzed together with olive oil, lemon and numerous herbs. Serve with crudités and pita chips.

480g (2 x tins) cannelini, butter beans, navy or white beans, drained and rinsed
1 lemon, juice and zest
125ml (½ cup) extra virgin olive oil
2 garlic cloves, peeled
10ml (2 tsp) ground cumin
12g (½ cup) fresh herbs, washed and finely chopped
salt and pepper, to taste

Steps:

  • Place the beans, lemon juice and zest, olive oil, garlic and cumin in a food processor and blend until smooth.
  • Add the herbs and give it a quick blitz to incorporate.
  • Season to taste then spoon into serving bowls.
  • Serve with vegetable crudités and crackers as a snack, starter or side dish. Enjoy!

Ultra creamy, lemony, and just enough garlicy white bean hummus! Serve it plain with a drizzle of good extra virgin olive oil with veggies and pita chips to dip. Or, dress it up with some nutty dukkah (highly recommended). The perfect bean dip!

1 15- ounce can white beans, ((I recommend butter beans), drained and rinsed)
1 garlic clove (minced)
1 ice cube
¼ cup tahini, (I used Soom Tahini, well-stirred)
1 teaspoon cumin
½ teaspoon coriander
1 teaspoon Aleppo pepper or 1/2 teaspoon crushed red pepper flakes, (more to your liking)
Kosher salt
Juice of ½ lemon, (more to your liking)
Extra virgin olive oil, (to serve)
Homemade Dukkah,

Steps:

  • Add the beans and minced garlic to the bowl of a food processor. Puree until a smooth mixture forms.
  • While the processor is running, add an ice cube, tahini, lemon juice, spices and a big dash of kosher salt. Blend for about 4 minutes or so. Check, and if the consistency is too thick, run processor and slowly add a drizzle of hot water. Blend until you reach your desired silky smooth consistency.
  • Taste and adjust seasoning and lemon juice to your liking. If you need more garlic, add another minced clove. And if you like the dip to be even more nutty, add a little more tahini. Make sure to run the processor again until everything is well combined.
  • Serve or chill the dip for a later time (chilling will thicken the white bean hummus some, which is recommended). When ready to serve, spread the hummus in a serving bowl and add a generous drizzle of extra virgin olive oil. Top with 2 to 3 teaspoons of dukkah, if using.

1 (15-ounce) can cannellini beans, drained and rinsed
2 cloves garlic
2 tablespoons fresh lemon juice
1/3 cup olive oil, plus 4 tablespoons
1/4 cup (loosely packed) fresh Italian parsley leaves
Salt
Freshly ground black pepper
6 pitas
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
  • Cut each pita in half and then into 8 wedges. Arrange the pita wedges on a large baking sheet. Pour the remaining oil over the pitas. Toss and spread out the wedges evenly. Sprinkle with the oregano, salt, and pepper. Bake for 8 to 12 minutes, or until toasted and golden in color.
  • Serve the pita toasts warm or at room temperature alongside the bean puree.

2 to 3 tablespoons fresh lemon juice
2 tablespoons olive oil
1 small garlic clove, chopped
1 teaspoon fresh rosemary, finely chopped, plus sprigs for garnish
1/4 teaspoon red-pepper flakes, plus more for garnish
Coarse salt and ground pepper
Store-bought veggie chips, for serving

Steps:

  • In a food processor, combine beans, lemon juice, oil, garlic, rosemary, red-pepper flakes, and 2 tablespoons water.
  • Process until very smooth, about 1 minute, scraping down bowl as needed. Season with salt and pepper. Transfer to a serving bowl, and garnish with rosemary and red-pepper flakes; serve with veggie chips alongside.

1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (15 ounce) can white corn
1 red pepper
1 green pepper
1 cup celery
1 small red onion
3/4 cup cider vinegar
1/4 cup vegetable oil
1 tablespoon water
1 cup sugar
1 teaspoon salt
fresh ground pepper
4 garlic cloves

Steps:

  • Drain and rinse the black eyed peas, black beans, pinto beans, white corn and put into a large bowl.
  • Finely dice the red pepper, green pepper, celery (enough for one cup) and red onion and add to bowl.
  • In a 2 quart sauce pan, combine the vinegar, oil, water, sugar, salt, pepper and garlic (finely minced) and bring to a boil.
  • Add boiling mix to bean mix and stir until well coated.
  • Cover and refrigerate overnight.
  • Drain liquid as you serve it and enjoy with your favorite corn chips!

3 tablespoons extra-virgin olive oil, plus more for drizzling
1 to 2 tablespoons red-wine vinegar
1/4 cup water
2 teaspoons finely chopped fresh rosemary
Coarse salt and ground pepper

Steps:

  • In a food processor, combine 2 cans (15.5 ounces each) rinsed and drained, 3 tablespoons 1 to 2 tablespoons and cup water. Process until smooth, adding more water if necessary. Add 2 teaspoons finely chopped and pulse until combined. Season with and Transfer to a serving bowl and drizzle with a little oil.

4 pita breads, split horizontally in half
2 tablespoons olive oil
1/3 cup olive oil
1 teaspoon dried oregano
1 1/2 teaspoons salt, plus more to taste
1 1/4 teaspoons fresh ground black pepper, plus more to taste
15 ounces cannellini beans, drained and rinsed
1/4 cup fresh flat leaf parsley
2 tablespoons fresh lemon juice (from about 1/2 a lemon)
1 garlic clove

Steps:

  • Preheat oven to 400 degrees.
  • Cut each pita half into 8 wedges and arrange over a large baking sheet.
  • Brush the pita wedges with 2 tbs of the oil, then sprinkle with the oregano and 1 tsp each of the salt and pepper.
  • Bake for 8 minutes, then turn wedges over and bake until they are crisp and golden, about 8 minutes longer.
  • Meanwhile, in the bowl of a food processor, combine the beans, parsley, lemon juice, garlic, and the remaining salt and pepper.
  • Pulse on and off until the mixture is coarsley chopped.
  • With the machine running (puree), stream in the remaining 1/3 C olive oil until the mixture is creamy.
  • Season the dip with more salt and pepper to taste.
  • Serve with warm or room temp pita crisps.
