DARK CHOCOLATE BROWNIES
Steps:
- Preheat the oven to 350 degrees. Coat a 9 x 13inch baking pan with cooking spray.
- Melt the chocolate and butter in a double boiler or heatproof bowl set over a pot of barely simmering water, stirring occasionally.
- In a medium bowl, whisk together the flour, cocoa, salt, and baking soda.
- In a large bowl whisk the eggs and sugar until smooth. Add the yogurt, oil and vanilla and whisk to combine. Add the chocolate-butter mixture and whisk until blended. Add the flour mixture and mix until just moistened.
- Transfer the mixture to the prepared pan and sprinkle with nuts if using. Bake for 20-25 minutes, until a wooden toothpick inserted in the center comes out with a few moist crumbs. Cool completely in the pan on a wire rack. Cut into 24 squares.

- Preheat oven to 325°F. Butter 8-inch square baking pan. Stir chocolate and butter in heavy medium saucepan over low heat until melted and smooth. Cool to room temperature.
- Combine 2/3 cup flour, 1/2 teaspoon baking powder and 1/4 teaspoon salt in small bowl. Whisk 1 cup sugar, eggs and vanilla extract in medium bowl until mixture is very thick, about 3 minutes. Whisk in melted chocolate mixture, then flour mixture. Stir in white chocolate. Transfer to prepared pan.
- Bake brownies until tester inserted into center comes out with moist crumbs attached, about 28 minutes. Transfer brownies in pan to rack; cool completely. (Can be prepared 1 day ahead. Store airtight at room temperature.)
- Cut brownies into 16 squares. Serve brownies with strawberries.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan. Melt white chocolate and butter in the top of a double boiler, over barely simmering water. Stir occasionally until smooth. Set aside to cool.
- In a large bowl, using an electric mixer, beat eggs until foamy. With the mixer still running, gradually add the sugar and vanilla. Drizzle in the melted white chocolate mixture. Combine the flour and salt; fold into the white chocolate mixture using a rubber spatula or wooden spoon. Fold in chocolate chips. Spread the batter evenly into the prepared pan.
- Bake for 25 minutes in the preheated oven, or until a toothpick inserted in the middle comes out clean. Cool pan on a wire rack before cutting into bars.

These are very rich and sinful brownies, with chunks of white and dark chocolate mixed in. The recipe came from an old newspaper clipping I had in my recipe box, and when I made them, they were a huge hit. To get the 40 brownies, cut them 5 rows by 8 rows.

- In a double boiler or metal bowl placed over a pan of simmering water, melt the butter with 12 oz white chocolate until smooth, set aside.
- In a large mixing bowl, beat eggs, salt, and vanilla.
- Add sugar and flour, beat until smooth.
- Pour in the melted chocolate mixture, mix well, then fold in remaining 8 oz chopped white chocolate and chopped dark chocolate.
- Pour into a well greased 9"x13" pan.

BLACK AND WHITE BROWNIES

- Preheat oven to 350 degrees F.
- Melt chocolate and 1/2 cup butter and set aside to cool.
- To make the cream cheese batter, with a whip attachment cream 6 tablespoons butter than add the cream cheese and continue mixing. Add the sugar, beat until fluffy then beat in the eggs, then flour, and vanilla. Set aside.
- For the chocolate batter, in a separate bowl whip the eggs and sugar until fluffy. Stir together the flour, baking powder, salt, and mix into egg mixture. Mix in the melted chocolate and butter, and the extracts.
- In a rectangular pan, lined with parchment, spread half the chocolate mixture. Spread the cream cheese layer over that to cover, then drop remaining chocolate batter by spoonfuls on top then swirl with a knife. Bake for 40 minutes. Cool and cut into bars.

- Preheat oven to 350 degrees.
- Grease a 9x13-inch baking pan.
- In a medium saucepan, heat the brown sugar and butter'til butter is melted.
- Dissolve the instant coffee in hot water and add to butter mixture.
- Remove from heat and cool to room temperature.
- While butter mixture is cooling, whisk eggs and Kahlua together in a mixing bowl.

- Heat oven to 180C/160C fan/gas 4. Grease and line a 20 x 30cm tin with baking parchment. Finely chop 150g of the dark chocolate, and roughly chop the remaining dark chocolate and the white chocolate. Put the finely chopped chocolate in a bowl and melt over a small pan of gently simmering water, or in the microwave. Set aside to cool a little.
- Put the butter and 350g of the sugar in a bowl, and beat until light and fluffy. Add 4 of the eggs, one at a time, beating well between each addition, then sift in the flour, cocoa, baking powder and a good pinch of salt. Finally, stir in the melted chocolate and the chopped chocolate chunks. Scrape the mixture into the prepared tin and smooth the surface.
- Working quickly, tip the cream cheese into a bowl and beat to soften with a spatula. Add the remaining egg, flour and sugar, and mix until just combined. Spoon blobs of the cream cheese mixture onto the brownie until all used up, and use the end of a cutlery knife or a skewer to swirl the 2 mixtures together to create a marbled effect. Bake for 30 mins until just set - it should still have a little wobble when it comes out of the oven, and a skewer inserted into the centre should come out with sticky crumbs. Cool completely in the tin before cutting into squares to serve.

- Preheat oven to 350°F.
- Grease and flour a 13x9x2 baking dish and set aside (can use a mix of cocoa and flour to prevent white edges around finished brownies) In a big bowl (preferably by hand, NOT mixer), combine well the sugar, flour, cocoa, baking soda, salt and cinnamon.
- Add melted butter, eggs, vanilla, and Kahlua, and stir just until blended (do not overmix).
- Fold in chopped nuts, if you are using them.
- Put batter in prepared baking dish, evening out the batter with a spatula.
- Bake for 40- 45 minutes or until the edges of brownies begin to pull away from the sides of the dish.
- Remove from the oven and put dish on wire rack to cool.
- Immediately sprinkle dark chocolate chips over top of hot brownies.
- Lighly place a sheet of aluminum foil over dish to hold in and reflect heat.
- After about 5 minutes, when chips are melted, spread over the brownies with a spatula.
- Immediately sprinkle white chocolate over the frosting, and lightly cover dish with the foil again.
- After about 2 minutes, when chocolate is melted, gently swirl them into the dark chocolate to create a marbleized look.
- Let cool 2 hours before cutting.
