ROASTED JALAPEñO SALSA RECIPE

Intensely flavored pan-roasted jalapeño salsa which packs some heat. The peppery flavor of the jalapeños is front and center and enhanced by onion, garlic, cilantro, and lime juice. It's easy to make and a great addition to your salsa repertoire.

9 large jalapeño peppers
1/2 large white onion
3 cloves garlic
12 sprigs of cilantro
juice of 2 limes
1 tsp. salt + to taste salt
2 tbsp. cooking oil

Steps:

  • Heat a dry pan to medium-hot and add the jalapeños, onion, and garlic.
  • Cook until the peppers are completely blackened, about 20 minutes. Remove from the pan.
  • Cut the stems off of the jalapeños and place them in your blender.
  • Remove the garlic cloves from their husks and add to your blender.
  • Add the onion and cilantro, 1/4 cup of water, lime juice, and 1 tsp. salt.
  • Blend for 30 seconds.
  • Heat 2 tbsp of cooking oil to medium-hot in the same pan that you roasted the jalapeños.
  • Pour the blended salsa into the hot oil. This step is called "seasoning" the salsa.
  • After 1 minute in the hot oil, reduce the heat to low and simmer for 15 minutes. This deepens and intensifies the flavor.
  • After 15 minutes, take and adjust the salt if needed.

4-5 jalapeños (seeded, deveined and cut in large chunks)
1 medium sized bunch of cilantro (which is about a little over 1 cup of packed cilantro leaves)
2 garlic cloves
Juice of 2 limes
½ to ¾ cup of olive oil or avocado oil (for a more neutral taste) (adjust based on how thick you want the salsa)
Salt to taste

Steps:

  • Place all the ingredients in a mini food processor or blender, mix/blend until all the ingredients are completely crushed and the sauce is smooth. Make sure the sauce is blended well enough so that the olive oil is well mixed into the salsa.
  • Use immediately or refrigerate until ready to use. The salsa is best if used the same day it's prepared.

10 fresh jalapeno peppers
2 tomatoes
1 white onion, quartered
¼ cup chopped fresh cilantro, or more to taste
2 cloves garlic, smashed
1 lime, juiced

  • Place jalapenos in a saucepan with enough water to cover. Bring to a boil. Simmer until jalapenos soften and begin to lose their shine, about 10 to 12 minutes. Steps:

1 tablespoon lime juice
1 1/2 teaspoons kosher salt
1 tablespoon extra-virgin olive oil
2 tablespoons chopped cilantro
1/3 cup finely chopped red onion, rinsed in cool water and drained

Steps:

  • Bring a medium pot of water to a boil and cook tomatoes and garlic 2 minutes. Drain and rinse with cool water. Peel and core tomatoes.
  • In a food processor or blender, blend first seven ingredients until mostly smooth. Transfer tomato mixture to a mixing bowl and fold in cilantro and onion. Taste, adjust seasoning, and serve.

1 cup finely chopped sweet Spanish onions or 1 cup vidalia onion
1 tablespoon minced fresh cilantro
1/2 teaspoon dried oregano
1/4-1/2 cup vegetable oil
2 tablespoons red wine vinegar

Steps:

  • In a mortar, crush the garlic, chile peppers, and salt and make a paste, using a circular motion with the pestle.
  • Transfer mixture to a serving bowl.
  • Add the remaining ingredients and stir to combine.
  • Will keep in the refrigerator for 2-3 days.

4 tablespoons cider vinegar

1 1/2 shallots, coarsely chopped
1 garlic clove, coarsely chopped
1/4 cup extra-virgin olive oil

Steps:

  • Cover potatoes with salted cold water by 1 inch, then simmer until just tender, 10 to 15 minutes. (Potatoes will continue to cook after draining; do not overcook or they will break apart.)
  • Drain potatoes and rinse under cold water until slightly cooled. Halve lengthwise and while still warm gently toss with 1 tablespoon vinegar. Cool potatoes to room temperature, then season with salt and pepper.
  • While potatoes cook, coarsely chop jalapeños and pulse in a food processor with cilantro, shallots, garlic, oil, and remaining 3 tablespoons vinegar until finely chopped.

ROASTED JALAPEñO-TOMATO SALSA WITH FRESH CILANTRO

1 1/2 pounds ripe tomatoes (about 10 medium), preferably plum
2 to 3 fresh jalapeño chiles (1 to 1 1/2 ounces), stemmed
Half of a small white onion (2 ounces), sliced 1/4 inch thick
4 garlic cloves, peeled
1/4 cup water
1/3 cup chopped fresh cilantro, loosely packed
1 generous teaspoon salt
1 1/2 teaspoons cider vinegar

Steps:

  • 1. Heat the broiler. Lay the whole tomatoes and jalapeños out on a broiler pan or baking sheet. Set the pan 4 inches below the broiler and broil for about 6 minutes, until darkly roasted - even blackened in spots - on one side (the tomato skins will split and curl in places). With a pair of tongs, flip over the tomatoes and chiles and roast the other side for another 6 minutes or so. The goal is not simply to char the tomatoes and chiles, but to cook them through while developing nice, roasty flavors. Set aside to cool.
  • 2. Turn the oven down to 425 degrees. Separate the onions into rings. On a similar pan or baking sheet, combine the onion and garlic. Roast in the oven, stirring carefully every couple of minutes, until the onions are beautifully browned and wilted (even have a touch of char on some of the edges) and the garlic is soft and browned in spots, about 15 minutes total. Cool to room temperature.
  • 3. For a little less rustic texture or if you're canning the salsa, pull off the peels from the cooled tomatoes and cut out the "cores" where the stems were attached, working over your baking sheet so as not to waste any juices. In a food processor, pulse the jalapeños (no need to peel or seed them) with the onion and garlic until moderately finely chopped, scraping everything down with a spatula as needed to keep it all moving around. Scoop into a big bowl. Without washing the processor, coarsely puree the tomatoes - with all that juice that has accumulated around them - and add them to the bowl. Stir in enough water to give the salsa an easily spoonable consistency. Stir in the cilantro.
  • 4. Taste and season with salt and vinegar, remembering that this condiment should be a little fiesty in its seasoning. If you're planning to use your salsa right away, simply pour it into a bowl and it's ready, or refrigerate it covered and use within 5 days.

SPICY CHIPOTLé-LIME SALSA

It was named "Shut You Up" Salsa, but also was nicknamed "Sneak Attack Salsa" and "Delayed Reaction Salsa"

1 cup diced tomato, Drained
10 ounces chipotle chiles in adobo (I make my own, but you can usually find them canned, in the Intl isle of the supermarket.)
1 lime, juice of
2 fresh red chili peppers, stemmed
3 garlic cloves, peeled
1/4 cup onion, Diced
1/4 cup crushed red pepper flakes
1/8 cup chopped fresh cilantro
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons ground black pepper
2 teaspoons ground cumin
10 -12 dashes TABASCO® brand Chipotle Pepper Sauce

Steps:

  • Combine lime juice, chili peppers, garlic, onion, and cilantro, in a food processor or blender. Blend until the mixture is uniform. (Doing these items first is important. If don't, you will get unwanted chunks.).
  • Add Tomato, and Chipotlés, blend until smooth.
  • Add garlic powder, onion powder, crushed red pepper, black pepper, and "Chipotlé Tabasco" sauce.
  • Blend mixture until smooth.
  • Let sit 3-6 hours, or even better, overnight for flavors to blend.

3 -4 fresh green jalapeno chiles
1/2 cup extra virgin olive oil
1/4 cup fresh cilantro, minced finely
2 tablespoons fresh lime juice
salt
pepper

Steps:

  • Roast the jalapenos either by charring the chilies over an open flame or broiling them until blackened on all sides. Place chilies in a paper bag and seal. Let sweat for 15 minutes.
  • Peel, seed (and devein if desired) the chilies; mince finely.
  • In a small, non-reacitive bowl combine the chilies with the olive oil and fresh cilantro. Stir in the lime juice.
  • Season with salt and pepper. Cover salsa and let stand at room temperature.
  • Can be prepared up to 6 hours in advance. Use sparingly.
  • The United States' Government has declared this salsa a weapon of mass destruction.
