CRISPY COCONUT COOKIES
This recipe was passed along to me a number years ago when I made mention I was looking for new recipes to add to my collection for Christmas baking. This excellent crispy cookie is not only great at Christmas, it's one of those simple delights great to serve for any occasion ... one of those 'looks simple but you can't just eat one' kind of cookie. I suspect the cream of tartar makes for a crispy light cookie. NOTE: any fine coconut can be used when making these cookies, do not substitute with medium or coarse coconut, they just do not work for these cookies. Fine coconut is readily available in the baking section of most stores.

Steps:
- Cream shortening with sugar.
- Add beaten egg and extract.
- Sift flour, baking soda, cream of tartar and add gradually to creamed mixture.
- Add the fine dessicated coconut and mix throughly.
- Roll into small balls, put on a greased cookie sheet, press down with a fork.
- Bake for 15 minutes at 325, cookie should be nicely colored.
- A reminder that ovens vary, so do watch your cookies!
- Yield will depend on the size cookie you make, so mine is a general yield for amount of flour used.
COCONUT FLOUR COOKIES
A 100% coconut flour cookie for those who cannot eat wheat products or who prefer using other types of flour. This recipe also uses coconut sugar and coconut oil and so it has a nice light coconut flavor. This is also a very simple recipe that most people will have no problem making...and enjoying.

Steps:
- Blend together coconut oil and coconut sugar using an electric mixer or a fork in a mixing bowl until fluffy. Add eggs and vanilla extract; mix thoroughly. Combine coconut flour and salt in a separate bowl; pour into the mixture and blend well. Fold in pecans.
- Form dough into a ball and wrap in waxed paper or plastic wrap. Refrigerate for at least 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll dough into small balls, 1 to 1 1/2-inches wide. Place balls a few inches apart on a baking sheet. Sprinkle a tiny bit of coconut sugar on top of each cookie and flatten using the bottom of a glass to 1/4-inch thickness.
- Bake in the preheated oven until edges start to brown slightly, about 8 minutes.

- Sift and measure 1/2 teaspoon baking powder, 1/2 teaspoon vanilla, and 2 cups Wheaties®. Blend shortening and sugar. Add beaten eggs. Add coconut. Sift flour, soda, baking powder, and salt together and add to mixture. Blend in vanilla and then Wheaties®. Roll in balls the size of a walnut and bake 12 minutes in 400°F oven.

WHOLE WHEAT COCONUT COOKIES
These crunchy, crispy cookies are made with whole wheat flour and are egg-free - they're not boring, tasteless health cookies, though! The combination of cognac, anise, coffee, and walnuts is unusual and sooo tasty! Also very quick to make! You can play around with the amount of flour: with 200 ml you get thin cookies, and closer to the 225 ml the cookies no longer spread much so you get a thicker crunch.

- Preheat oven to 175°C Line a cookie sheet with parchment paper.
- Beat butter and sugar until light and fluffy.
- Add the rest of the ingredients and mix. The dough is quite stiff and crumbly, but you should still be able to form it into balls that stick together.
- Roll dough into 1 inch balls and place on the cookie sheet.
- Bake in the preheated oven for about 15 minutes or until golden. Allow to cool on the cookie sheet for a while and then transfer carefully on a wire rack to cool completely (the cookies are very fragile when hot).
- Dust warm cookies with powdered sugar.

WHEATIES COOKIES
These are my all time favorite cookies. My grandmother has been making these longer than I have been around! I believe that her mother got the recipe on a trip to California. Be sure not to brown them, you DO NOT want to over bake them. The yield is approx along with the servings, the recipe is so big!

- Cream the butter and sugars.
- Add eggs one at a time.
- Add vanilla.
- Continue to cream while you combine all the dry ingredients, minus the Wheaties and chocolate chips. Run a whisk through to incorporate everything.
- Slowly add flour mixture to wet ingredients.
- Using a wooden spoon and some elbow grease, pour in the Wheaties and chocolate chips and combine.
- Drop onto lightly buttered (that's what Grandma did!) cookie sheet.
- Bake at 350°F for approximately 8 minutes or until very light brown. DO NOT OVER BAKE.
