- Add ham to a food processor and pulse until it is in small pieces but not a paste, more like crumbs.
- Add all the ingredients together in a large bowl and stir well.
- Serve chilled, at least 2 hours of refrigerating (this helps hold it together).

- Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.
HAM SPREAD
This recipe uses leftover ham with onion and dill pickle relish for a delicious sandwich spread or dip for crackers. You can substitute 10 green olives with pimentos for the dill pickle relish.

I got the recipe from the website for vegetarian food products, for the Worthington, Loma Linda and Cedar Lake brands of imitation meat products. Although we do eat meat, we love these recipes as well. I think you will like them too if you try them. Make sure you don't chop ingredients too fine or it won't mix well and it will be too gooey. You can find these meatless products in a natural health food store or online through vegefood.com The cooking time is the chilling time.

ANDREA'S EASY HAM SALAD (FOR SANDWICHES)
I'm not so great at baking whole hams, but I love when my Mom sends me leftover ham that she has cooked. Hubby loves ham salad sandwiches, and whenever we get ham, his first question is always "Are you going to make that ham salad?" It's just been a matter of experimentation to come up with it. It's quick and easy, with common ingredients. Hope you enjoy it as we do. I'm not really sure how many sandwiches this makes--enough for a couple of days for our small family. Let me know if the servings are off. (And I guess it depends on how thick you like your sandwiches.) Can be served on any type of bread, but I have found rye really complements ham salad.

- Melt the butter in a heavy-based frying pan and fry the almonds until golden brown.
- Stir in the sugar and cook for 1 minute, stirring continuously, until the sugar dissolves and the almonds are well coated.
- Tip on to a greased baking sheet and leave to cool.
- About 30 minutes before ready to serve, cover the bottom of a serving bowl with broken sponge fingers or sponge cake.
- Pour the sherry, brandy and orange zest and juice over the sponge and leave to soak for 30 minutes.
- Whip the cream until it just holds its shape, and then gently fold in the yogurt.
- Spoon the mixture on top of the sponge.
- Roughly chop the almonds, sprinkle on top and serve immediately.

Yes, this is the REAL DEAL, folks -- this is the super great-tasting ham salad spread that you used to be able to buy at the mom and pop stores back in the '50s and '60s. It makes a lot but it will go fast. I could eat these ham salad sandwiches on sesame-seed buns with a little lettuce every day of the week. Don't use cheap bologna in this recipe or you'll be disappointed -- I like to use Kahn's Club Bologna. Also, you'll need some sort of meat grinder to make this -- a food processor does NOT yield a good consistency. I use my Kitchen-Aide Grinder attachment. Enjoy!
