HALIBUT WITH SAFFRON VANILLA CREAM SAUCE
A delightful, easy, yet FANCY meal. Perfect for a romantic occasion! I received this recipe at a cooking class by Chef Antoine Moussali from Andria's Countryside Restaurant in Edwardsville, Illinois. He suggests this with a side of Sauteed Broccoli Rabe (I have posted that recipe as well).

Steps:
- Wash the halibut and wrap in paper towels to dry thoroughly.
- Place cream and saffron in a small saucepan and heat on medium-low.
- Cut vanilla bean down the middle (lengthwise) and remove beans (the little black things) by sliding a butter knife down the length of the pod. Place beans AND pod into cream.
- Simmer cream for 20-30 minutes, stirring occasionally, until reduced to a thick cream sauce. If you do not want overpowering vanilla flavor, remove the vanilla pod after 10 minutes.
- Melt butter together with olive oil over med-high heat in a non stick pan.
- Sear halibut (cooking approximately 2-3 minutes on each side) until cooked. . .watch for the side of the fish to turn white (instead of translucent) and that's when it's done.
- Place two pieces of fish on each plate (propping one piece on the other) and drizzle a fair amount of sauce on and around the fish.

Steps:
- Arrange half of bread pieces in a lightly greased 11x7 inch baking dish.
- Arrange frozen berries in a single layer over bread.
- Top with remaining bread pieces.
- Whisk eggs and next 6 ingredients until smooth.
- Slowly pour egg mixture over bread, pressing down with a wooden spoon until bread absorbs mixture.
- Let stand 20 minutes.
- Bake covered at 350° for 30 minutes.
- Uncover, brush evenly with 2 tablespoons melted butter.
- Sprinkle evenly with 2 tablespoons sugar and bake 30 more minutes or until set.
- Remove from oven and let stand 30 minutes.
- Serve with Vanilla Cream Sauce.

- Stir whipping cream, sugar, and flour together in a saucepan.
- Add butter and cook stirring constantly, over medium heat until mixture is slightly thickened.
- Remove from heat and stir in vanilla.
- Serve warm.

- Bread Pudding:.
- Preheat oven to 350 degrees.
- Microwave butter in a small bowl until melted, about 1 minute. Add brown sugar and set aside.
- Combine eggs, milk,,vanilla and cinnamon in a large mixing bowl.
- Slice bread into 1 inch cubes and add to egg batter, mixing gently until all bread is soaking in batter.
- Spray a 9 inch square baking dish with vegetable spray. Transfer bread-egg batter into baking dish.
- Top with butter and brown sugar mixture; sprinkle with carmel bits and pecans.
- Bake, covered, for 1 hour or until golden and bubbly.
- Vanilla Cream Sauce:.
- Whisk whipping cream, sugar and flour in a small saucepan.
- Add butter and cook, stirring constantly over medium heat, until butter is melted and mixture begins to boil.
- Continue cooking and stirring for 3 minutes or until mixture is slightly thickened.
- Remove from heat and stir in vanilla.
- Spoon over individual portions of bread pudding and serve warm or at room temperature.
CRANBERRY APPLE PECAN BREAD PUDDING WITH VANILLA CREAM SAUCE

- Pudding:.
- in a medium bowl, toss sliced apples with lemon juice and set aside.
- in a large bowl, beat the eggs till frothy and light in color. Add the sugar, vanilla, nutmeg and cinnamon and beat till smooth.
- Stir in the butter, half and half and brandy.
- Toss the apples, cranberries, pecans with the bread cubes.
- Place the bread mixture in a greased 9x5 loaf pan (or individual custard cups). Pour the egg mixture evenly over the bread. Cover with foil and weigh down with a bag of rice or dried beans to encourage the bread to absorb the liquid. Refrigerate for 30-60 minutes.
- Preheat oven to 325. Remove the foil and weights and place the pudding in a larger pan with 1 inch of hot water. Bake for 55 minutes or till set.
- Increase oven temperature to 425 and bake 10 minutes more, till lightly browned. Serve warm with room temperature sauce.
- Vanilla Cream Sauce:.
- Combine milk (or cream) with flour and sugar in a saucepan. Add butter. Heat over medium high heat till it bubbles, stirring. Continue to heat gently till thickened. Stir in vanilla.

- Wash the apples and remove the core. Place the apples in a greased oven proof dish. Mix together the walnuts, raisins, apple jelly, honey and cinnamon and fill the apple centres. Place flakes of butter over the apples. Bake in a preheated oven at 200g C for about 30 minutes. They should be soft when cooked. If not eaten immediately, cover with aluminium foil.
