Deliciously grilled salmon on a cedar plank gets that much better covered in a creamy dill sauce.

2 salmon, fillets, (about 1 lb total)
2 Tbsp olive oil
½ tsp grated lemon, rind
2 Tbsp lemon, juice
1 Tbsp chopped fresh chives
1 Tbsp chopped green onion
2 tsp Dijon mustard
1 pinch salt
1 pinch pepper
½ cup sour cream
2 Tbsp finely chopped cucumber
½ tsp dried dill, weed
1 Tbsp chopped fresh dill
2 tsp minced fresh chives
2 tsp minced green onion
2 tsp Dijon mustard
1 pinch salt
1 pinch pepper

Steps:

  • Soak two 12- x 7-inch (30 x 18 cm) untreated cedar planks in water for at least 30 minutes or for up to 24 hours.
  • Place 3 salmon fillets on top of each plank.
  • In small bowl, whisk together oil, lemon rind and juice, chives, mustard, salt and pepper; brush some over salmon.
  • Place planks on grill over medium-high heat; close lid and cook, brushing with remaining lemon mixture for about 20 minutes or until fish flakes easily when tested with fork.
  • Meanwhile, in small bowl, combine sour cream, cucumber, dill, chives, salt and pepper.
  • Serve planks on platter with dill sauce.

West Coast Sockeye salmon filets (with skin on and bones removed)
¼ ounce fresh dill (3-4 sprigs)
½ tsp kosher salt
¼ tsp coarse peppercorns
½ cup maple syrup
1 piece cedar plank, for grilling salmon

Steps:

  • Place salmon on cedar plank skin-side down.
  • Sprinkle with salt and coarse peppercorns.
  • Heat BBQ to 225ºF - (this can also be done in an oven).
  • BBQ on cedar plank for 15 minutes.
  • Brush with maple syrup and add dill on top.
  • Continue to BBQ for 5 more minutes.
  • Give one final brush with maple syrup prior to removing from BBQ.
  • Remove from BBQ and service.

Out on the west coast, we get an abundance of salmon, so I am always looking for a different recipe. Our local paper has been pushing out some fantastic recipes, and this one is up in that category!

1 tablespoon hoisin sauce
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 tablespoon butter, melted
1/2 teaspoon dark sesame oil
2 -2 1/2 lbs salmon fillets
1/2 teaspoon kosher salt
1/4 teaspoon black pepper, freshly grounded

Steps:

  • Cedar Plank: Take an untreated cedar plank, about 16x8 inches, weighted down and soaked in water for at least an hour, preferably longer.
  • Mix first 5 ingredients in a small bowl for glaze. Place salmon, skin side down, on large cutting board and remove any pin bones.
  • Cut salmon in half lengthwise but not through to the skin. Then cross crosswise to make 6 - 8 servings, but again, do not cut through to the skin.
  • Brush glaze evenly over salmon flesh and in between individual servings. Season evenly with salt and pepper.
  • Preheat grill. Place soaked plank over direct medium heat and close lid. After a few minutes when the plank begins to crackle and smoke begins to escape from grill, place salmon, skin side down, in centre of plank.
  • Close lid and let salmon cook until lightly browned, about 15 - 25. (Hint: move plank over indirect heating will prevent flareups, but cooking may be longer).
  • Remove plank from grill using tongs.
  • Serve.

This particular recipe is a supermarket "freebie" from the seafood department, generously provided by Heritage Salmon. Serve with new, baby red potatoes, asparagus spears and a salad of mixed greens.

8 (6 ounce) salmon fillets, skinless
2 cedar planks, soaked in water for 4 to 6 hours
1 tablespoon dry barbecue spice
sea salt
1 large lemon
1 cup fresh dill, chopped
1/2 cup shallot, chopped
2 garlic cloves, chopped
2 green onions, chopped
3 tablespoons cracked black pepper
2 tablespoons olive oil
1 lemon, juice of

Steps:

  • Preheat grill to high.
  • Sprinkle BBQ seasoning on salmon fillets.
  • Combine ingredients for crust mixture and spread generously over the flesh side (not skin side) of each fillet.
  • Season soaked cedar planks with sea salt, and place on grill.
  • Close lid and heat for 3 to 5 minutes, until they start to crackle and smoke.
  • Lift lid carefully and place salmon fillets on hot planks, skinned side down.
  • Close lid and bake planked salmon for 12 to 15 minutes for medium doneness.
  • Squeeze lemon over fillets.
  • Check periodically to ensure the planks are not on fire.
  • Use spray bottle to extinguish any flames.
  • Carefully remove planks from grill and transfer salmon to serving platter.

2 tablespoons brown sugar
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon basil
1 tablespoon paprika
1 tablespoon tarragon
3 lbs salmon (or steelhead trout)
cedar plank, soak for a minimum of 1 hour

Steps:

  • Cedar Plank: the longer you soak the plank the more uses you have out of it. They can be used a number of times as long as they are not too charred and the fish fits on the plank.
  • Rub: Combine the ingredients and sprinkle over the fish. Grill for 15 - 20 minutes or until the fish flakes.

  • Then in a ziplock bag or airtight container add the soya sauce, worcestershire sauce, olive oil, minced garlic, garlic powder and salmon. Make sure the salmon is coated completely for a minimum of 30 minutes prior to BBQing.
  • Once the salmon has marinade, remove and discard all the marinade. On a cutting board, season the salmon very lightly with a bit of salt and the pepper. Then generously coat the salmon on both sides with brown sugar using your hands to pat it down to form a light crust.
  • Turn the BBQ on to medium heat, then turn down to low- medium heat before adding the planked salmon on top. Shut the lid and allow it to cook anywhere from 15-20 minutes.
