These delectable tuna patties make a great lunch recipe. Pan seared until crisp and golden on the outside and warm and soft on the inside. Try topping with a slice of reduced fat cheddar cheese for an added flavor boost.

2 5 oz cans chunk light tuna in water ((drained))
3 scallions ((diced))
1/3 cup cilantro ((finely chopped))
1 jalapeno ((seeded and diced))
1/2 cup Panko breadcrumbs
1 egg white
1 tbsp reduced fat mayonnaise
2 tbsp plain, nonfat Greek yogurt
Juice from ½ a lemon
1 tsp olive oil
1 tsp paprika
1 tsp salt
1/2 tsp black pepper

Steps:

  • Heat oil in a large, nonstick skillet, set over medium high heat.
  • In a medium sized bowl, combine all remaining ingredients. Using a 1/3 cup measure of tuna mixture, tuna mixture, shape into 8 patties, and place into skillet, working in batches as necessary to avoid over-crowding pan. Using fingers or a spatula, gently flatten tuna patty to about ¼" thick.
  • Cook tuna patties until crisp and golden brown on each side, about 2 minutes per side.
  • Serve immediately.

I have never tried a tuna patty before believe it or not and wanted to tonight. However, once looking through a few recipes I quickly realized that A. they were a bit higher calorie/fat than I could justify since we are on WW, and B. I didn't have some of the ingredients to a lot of the recipes I did find. So I took a chance and created my own for my first one. It turned out GREAT! At least we think so..... For those that may be counting these are 8pts a piece on weight watchers.

3 5/8 ounces tuna (Sundried Tomato & Basil Tuna Sensations)
2/3 cup Italian seasoned breadcrumbs (divided)
1/3 cup fat free sour cream
1/3 cup fat-free cheddar cheese, shredded
1/3 cup green onion, thinly sliced
1/2 teaspoon buttermilk ranch salad dressing mix
1 egg white
2 reduced-calorie multigrain hamburger buns (I like the Sandwich Thins)
2 lettuce leaves
2 tablespoons light mayonnaise
olive oil flavored cooking spray

Steps:

  • Put 1/3 cup breadcrumbs into a shallow dish and set aside.
  • Combine the other 1/3 cup breadcrumbs, tuna, sour cream, cheddar, onions, dressing mix and egg white in a bowl and mix well with your hands.
  • Carefully divide the mixture in half and form into two patties coating them in the bread crumbs you earlier set aside.
  • Heat a skillet on medium heat and generously spray with the olive oil cooking spray. Cook patties on each side for 3-4 minutes until well browned.
  • Spread 1 T. of light mayo on the top section of each bun, and layer with a tuna patty then lettuce.
  • Enjoy!

4 cups cooked fettuccine

Steps:

  • In a large saucepan, combine all ingredients except pasta.
  • Bring to boil, simmer 10 minutes.
  • Server over hot fettuccine.

  • Cook potatoes in a saucepan of boiling salted water for 10 minutes or until tender. Drain, return to pan and stir to remove excess moisture. Remove from heat and mash.
  • Place mash, tuna, shallots, breadcrumbs and dill in a large bowl. Season with salt and freshly ground black pepper, mixing until well combined. Divide mixture into 12 portions, shaping each into a 1.5cm-thick patty. Place on a baking tray, then cover and refrigerate for 20 minutes.
