- To prepare the marinade, combine the parsley, basil, garlic, oil, salt and pepper in a zip-close plastic bag. Add the shrimp. Refrigerate, turning the bag occasionally, 1 hour to overnight.
- Spray a nonstick ridge grill pan with nonstick spray and set over medium-high heat. Working in batches, if necessary, grill the shrimp until they are just opaque in the center and lightly browned on the outside, 2-3 minutes on each side.

- Heat oil in a large nonstick skillet over medium-high heat.

- Coat grill rack or grill pan with nonstick spray. Preheat outdoor grill or grill pan to medium-high. In medium bowl, stir oil, lemon zest and juice, salt, and black pepper. Stir in oregano and garlic. Transfer 2 tsp lemon-oregano oil to small bowl. Add shrimp to remaining oil in bowl and toss until coated. Thread shrimp onto skewers (or use grill basket).
- Grill shrimp until just cooked through, about 2 minutes on each side. Transfer shrimp to platter. Drizzle shrimp with reserved 2 tsp lemon-oregano oil.
