1/3 cup chopped parsley
1/3 cup chopped basil
2 garlic cloves, minced
4 teaspoons extra virgin olive oil
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 1/2 lbs large shrimp, peeled and deveined

Steps:

  • To prepare the marinade, combine the parsley, basil, garlic, oil, salt and pepper in a zip-close plastic bag. Add the shrimp. Refrigerate, turning the bag occasionally, 1 hour to overnight.
  • Spray a nonstick ridge grill pan with nonstick spray and set over medium-high heat. Working in batches, if necessary, grill the shrimp until they are just opaque in the center and lightly browned on the outside, 2-3 minutes on each side.

1 3/4 lbs large shrimp, peeled and deveined
2 tablespoons fresh lime juice
1/2 teaspoon ground cumin
1/4 teaspoon ground ginger
2 garlic cloves, minced
1 tablespoon olive oil
1/4 cup fresh cilantro, chopped
1 teaspoon lime zest
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine fist 5 ingredients in a large bowl; toss well.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add shrimp mixture, and saute' 4 minutes or until shrimp is done.
  • Remove from heat; stir in cilantro and remaining ingredients.

Stir in oregano and garlic. Transfer 2 tsp lemon-oregano oil to small bowl. Add shrimp to remaining oil in bowl and toss until coated. Thread shrimp onto skewers (or use grill basket).
  • Grill shrimp until just cooked through, about 2 minutes on each side. Transfer shrimp to platter. Drizzle shrimp with reserved 2 tsp lemon-oregano oil.
