This is a yummy easy recipe. 1 breast is 4 pts. I often used the flash frozen breasts for this. I use 4 4oz breasts.

1 (1 1/4 ounce) package taco seasoning
16 ounces boneless skinless chicken breasts
1 cup salsa
1/4 cup fat free sour cream

Steps:

  • Place chicken breasts and taco seasoning in a seal able plastic bag; shake to coat well.
  • Spray casserole dish with Pam.
  • Place breasts in casserole.
  • Bake 30 minutes at 375 degrees.
  • Top with salsa about 5 minutes before breasts are done.
  • Top with sour cream before serving.

1 lb boneless skinless chicken breast
1/2 cup Frank's red hot sauce
1/2 cup I Can't Believe It's Not Butter® Spread
1/4 teaspoon celery seed
1 tablespoon white vinegar
1/2 teaspoon Tabasco sauce
1/2 teaspoon red pepper flakes
1/4 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon Worcestershire sauce

Steps:

  • For the sauce: In a small saucepan over low heat, mix together everything but the chicken. Let this mixture simmer, stirring occasionally, while you prepare chicken.
  • For the chicken: Bring large saucepan to boil. Cut chicken into strips and boil until cooked through. When cooked, put chicken in a serving bowl or dish. Pour sauce over chicken and let sit for a few minutes.
  • Variation: Cut chicken into strips. Lightly coat chicken with sauce. Bake in preheated 375 degree F oven for 15-20 minutes, until cooked through. Remove to platter and coat with remaining sauce.
  • 4-5 WW points per serving.

  • In a large skillet, bring the oil over medium-high heat. Add the parsley and stir into the oil. Add the chicken to the pan and stir to coat in the oil. Cook, stirring occasionally, for 4-6 minutes or until the chicken is cooked through. If the chicken has released water while cooking, drain the liquid from the pan. Add the Buffalo wing sauce to the chicken and stir to combine. Reduce the heat to low and cook for another 2-3 minutes until the sauce is mostly absorbed. Remove from heat and set aside.
  • In a mixing bowl, combine the coleslaw mix and the blue cheese dressing and stir until coated. Set aside.
  • Using shears or a knife, slice each Foldit in half at the seam to make two rounds. Mist a griddle pan or large skillet with cooking spray over medium heat and place the Foldit rounds on the pan. Mist the tops with cooking spray and cook for about 2 minutes. Flip the rounds and cook for another 1-2 minutes until the Foldits are warm and lightly browned. *If you’re not serving all the tacos at once, just warm as many Foldits as you’re using.*
  • To build each taco, start with a warm Foldit round and top with a couple small pieces of torn lettuce. Add a heaping tablespoon of blue cheese coleslaw and top with 1 ounce of the cooked chicken. Top the chicken with a strip each of carrot and celery and serve.
