WATERMELON POPSICLES
You don't need an expert to tell you that watermelon is just about the most refreshing thing you could possibly eat in the middle of summer. Luckily, there are many worthy and refreshing things to do with watermelon that are somewhere between simple slicing and full-blown cooking.

Steps:
- Cut the watermelon into small chunks (discarding the rind), and put them in a blender with the sugar and lime juice. Process until smooth, adding enough water (or fruit juice) so that the mixture liquefies. Pour into popsicle molds, and freeze.

Recipe from one of my favorite chefs Paulette Mitchell who says: "Among the splendid gifts of summer is the watermelon. In addition to savoring the juicy wedges straight from the market, try making these colorful, refreshing popsicles for adults using the freezing forms seasonally stocked in gourmet shops and in the kitchen department of your local discount store. Buy several sets, so you can multiply the recipe. For quick preparation, look for seedless watermelon, available during the summer in most supermarkets."

- Purée all of the ingredients in a blender until smooth. (If necessary, first remove the scattered watermelon seeds.).
- Fill 4 popsicle forms with the mixture and freeze until firm.
- Or, you can use small drink cups; fill with the watermelon mixture and freeze for 1 to 2 hours until slushy, insert wooden sticks, and then freeze solid.

WATERMELON-TEQUILA POPTAILS

- Pour 1 cup of tequila in each of two 9-by-13-inch baking dishes. Add the watermelon slices and let soak for 10 minutes in the fridge, flipping halfway through.
- Mix together the sugar, salt, chipotle powder and lime zest in a bowl.
- Remove the watermelon from the tequila and put each piece on an ice-pop stick. Sprinkle a few pinches of the seasoning over the watermelon.
SPIKED WATERMELON POPS

- In a blender, combine the watermelon, sugar, and vodka. Blend until the mixture is smooth. Add the mint and pulse once to combine. Pour the mixture into the pop molds. Insert the wooden sticks all the way down the inside the molds. Freeze for at least 10 hours or preferably overnight.
- To unfreeze the ice pops, insert the molds in hot water for 5 to 10 seconds. Serve immediately.

- Working in batches, place watermelon and sugar (if using) in a blender. Puree until completely liquefied, stirring watermelon as necessary so all cubes are blended and mixture is smooth. Pour into twelve 3-ounce ice-pop molds or plastic cups. Insert sticks or wooden spoons into puree, and freeze until solid, at least 8 hours.
