- Squeeze lemons into a large pitcher; add squeezed lemon quarters. Add mint and sugar; mash with a wooden spoon until mint is bruised and sugar is dissolved.
- In a blender, puree watermelon in batches until smooth; pour through a fine-mesh sieve into pitcher (you should have about 8 cups of juice). Stir to combine. (Refrigerate, covered, up to 3 days.) Add vodka, if using; serve over ice.

- Cut the top off the watermelon and hollow it out using a large spoon, fishing out any pips along the way. Mash the flesh through a sieve into a bowl. Put the flesh in a blender (or use a tall jug and hand blender) with the lemon juice and sugar, whizz to a purée, then stir in the soda.
- Heap some ice into the hollowed-out watermelon and fill it with the lemonade mixture. Serve the rest in a jug with the lime slices and mint. Have a bowl of extra crushed ice on the side so people can help themselves.

- Place all the ingredients in a large saucepan and pour over 350ml cold water. Bring to the boil, stirring often, then leave to cool. Pour through a sieve, pressing down with a spoon to extract all the juices. The syrup can now be stored in the fridge for up to 1 week. - Cut the rind off the watermelon and then cut it into bite size chunks. Place watermelon into a blender and blend for about 1 minute, until it’s completely liquid. You may need to help it get started at first but eventually it will all blend.
- Place a mesh strainer over a large bowl and pour watermelon juice in the strainer. Let juice drain out. You can pick up the strainer and rock it from side to side to encourage more juice to come out but you don’t want to use a spoon to press down everything in the strainer. If you do that it will allow some of the pulp to get through and you don’t want that. Once it’s just pulp left in the strainer you can dump that out and strain the rest of the juice.
- If there’s lots of bubbles on top of the watermelon juice, or if some of the pulp got though, use a spoon to scoop it off the top. You may want to let it sit for a few minutes to let things settle down before doing this.
- Pour the fresh lemon juice into the watermelon juice and mix until combined. You can use as little or as much lemon juice as you like. I usually use about 1/3 cup. Enjoy watermelon lemonade over ice and garnish with fresh herbs or a lemon wedge, if desired!
