SUMAC CHICKEN BREASTS

I have taken this recipe from Moxie's Sumac Salmon #61262 because we loved it so much and wanted to try sumac with chicken. It worked! Just love the flavour of sumac, wish it hadn't taken me so long to discover it. Marinating time isn't included in prep. time - I didn't have time to marinate for more than 15 minutes tonight and it was still wonderful.

Ingredients

2 chicken breasts
2 tablespoons ground sumac
4 tablespoons balsamic vinegar
salt & pepper, to taste
lemon wedge, to garnish

Steps:

Rub sumac into the chicken breasts and pour balsamic vinegar over and marinate for 30 to 60 minutes in the fridge.
Spray oven tray with olive oil spray or use baking paper lined tray and bake in 180degC (350degF) oven for 20-30 minutes or until cooked, depending on thickness of chicken breast.
This can also be cooked on the stove top or bbq.

Prep time includes marinating time, and cooking time will depend on the thickness of your salmon, heat of your grill, etc."

Ingredients

3/4 lb salmon (steaks or salmon fillets)
1 teaspoon ground sumac
1 tablespoon balsamic vinegar
olive oil
lemon wedge

Steps:

Sprinkle sumac over the fleshy sides of the salmon (not the skin part).
Pour balsamic vinegar on top.
Marinate refrigerated 30 minutes to 2 hours.
Just before cooking, drizzle or spray a light coating of olive oil on the fish, to keep it from sticking.
Pan fry, broil, or grill until done.
Serve with lemon wedges.

A simple sheet pan dinner with salmon fillets, crunchy croutons, garlicky broccolini, and quartered oranges is livened up with sumac, a spice popular in Middle-Eastern cuisines. It brings a tart and tangy flavor to fish and meats, vegetables, and even desserts.

6 tablespoons extra-virgin olive oil, plus more for serving
1 tablespoon ground sumac, plus more for serving
2 teaspoons minced garlic (from 1 to 2 cloves)
Kosher salt and freshly ground pepper
12 ounces Broccolini, tough stems removed
3 mandarin oranges or tangerines, quartered
2 cups torn rustic bread, crusts removed (from 1/4 loaf)
4 skin-on salmon fillets (each 1 inch thick), preferably wild
3 ounces feta, crumbled (3/4 cup)
1 cup mixed tender herbs, such as cilantro, mint, and parsley

Steps:

Preheat broiler with rack 6 inches from heating element. Stir together oil, sumac, garlic, and 1/2 teaspoon salt. On a rimmed baking sheet, toss Broccolini and oranges with 3 tablespoons sumac mixture. Season with salt and pepper; spread into a single layer.
Broil, stirring once, until beginning to brown in places, 4 to 5 minutes. Toss bread with 2 tablespoons sumac mixture. Season fish with salt and pepper; brush with remaining sumac mixture.
Push Broccolini and oranges to one side of sheet; add fish to other side, skin-sides down; scatter bread evenly over everything. Broil, stirring bread once, until salmon is cooked through and bread is crisp, 4 to 5 minutes more. Squeeze some of oranges over everything. Serve salmon, Broccolini, oranges, and bread topped with feta and herbs, sprinkled with sumac and drizzled with oil.

Finely chop the smoked salmon slices. Set aside. Chop and prepare the herbs and shallots as well.
Using a small whisk - whisk the cream cheese, sour cream, lemon juice, horseradish and sumac together until fluffy and well-mixed.
Add the herbs and smoked salmon and fold them through. Place the dip in a serving bowl. Keep refrigerated (covered) until needed.
