WATERMELON-MINT WATER

- Place 4 cups 1/2 inch-cubed watermelon (about 1 1/4 pounds; lightly smashed) and 6 sprigs mint (lightly crushed) in a pitcher. For still infused water, add 2 quarts of water. For sparkling water, add 1 quart of seltzer during prep and a second quart just before serving. Refrigerate 2 to 4 hours to allow the ingredients to infuse. Stir well and strain, discarding the solids. For serving, add fresh watermelon and mint sprigs for garnish and plenty of ice. The infused water will keep refrigerated for up to 2 days.

- Working in 2 batches, puree watermelon in a food processor. Strain puree through a sieve and strain out solids, forcing liquid out with a wooden spoon. Discard solids. Combine the watermelon puree, lime juice, mint and sugar in a 9 by 13-inch metal pan. Place mixture in the freezer, scraping thoroughly with a fork every 20 to 30 minutes for about 2 1/2 hours, or until the granita resembles coarse crystals. Scrape 1 last time and spoon into parfait glasses or bowls. Top with a mint sprig.

- Puree the watermelon chunks in a blender or food processor until smooth; strain the juices from any remaining solids and set aside, discarding the solids.
- Heat 1 cup of heavy cream with the sugar in a saucepan over medium-low heat until warmed. Stir the mint leaves to the warmed cream. Cover the saucepan and remove from heat. Allow the mixture to steep at room temperature for 1 hour. Strain into a bowl; discard the mint leaves.
- Whisk the egg yolks in a bowl until gently beaten. Slowly pour the mint-infused cream into the egg yolks, whisking constantly to prevent cooking the egg; scrape the mixture back into the saucepan and place over medium heat. Stir constantly, scraping the bottom while cooking, until the mixture thickens and coats the spatula; pour the mixture through a strainer into a bowl along with 1 cup heavy cream. Mix the watermelon juice into the cream mixture.
- Pour into an ice cream maker and freeze according to manufacturer's instructions.

- Stir the sugar, 2 tbsp water, lime zest, and 1 1/2 tbsp lime juice together in a small heavy saucepan over high heat until the sugar dissolves and the syrup comes to a boil. Let cool completely, and then refrigerate until cold.
- Strain the chilled sryup into a small bowl and stir in the mint. Allow to infuse for at least 5 minutes.
- Pour cold syrup over watermelon chunks and serve.

- In a blender add the watermelon, fresh lime juice and zest (if using). Blend until no watermelon chunks remain to make more room in your blender for the ice (about 20 seconds). Next, add ice and blend again for about 20 seconds. The longer you blend the less frosty it will be so it just depends on your preference.
- Add mint and blend for 10-20 seconds (too much blending can make the mint taste bitter or soapy)
- Taste and add more lime juice for more tanginess and/or more mint for more sweet, fresh, herby flavor. I sometimes add more ice on really hot days when I want it extra frosty. This recipe is pretty forgiving in terms of the ratios so find what works best for you. If it is not sweet enough add a little maple syrup. To thin it add add water.
- Serve immediately. The longer you wait, the more you will notice the icy slushie part rising to the top of the glass and the juicy part sinking to the watermelon. You can always refresh it with a quick whirl in the blender with a handful of ice cubes.
