Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Number Of Ingredients 9

8 tablespoons (1 stick) unsalted butter
3/4 cup tahini
1/2 cup granulated sugar
1/2 cup packed dark-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
3/4 teaspoon baking soda
Sesame seeds (optional)

Steps:

  • Heat oven to 350 degrees. Line several baking sheets with parchment paper, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, tahini, and both sugars together until light and fluffy. Add egg and vanilla, and mix on medium speed until well combined.
  • In a medium mixing bowl, sift flour and baking soda together. Add to the butter mixture, and beat just to combine.
  • Scoop out 2 tablespoons of dough, and shape into a ball. Roll in sesame seeds, if desired, for added crunch. Place on one of the prepared baking sheets. Repeat with remaining dough, placing scoops 3 inches apart. Dip the tines of a fork in warm water; press the dough balls lightly with the back of the fork to flatten them slightly (dip the fork back in the water for each dough ball, to prevent sticking).
  • Transfer to the oven, and bake until golden brown, 18 to 20 minutes, rotating the baking sheets between the oven shelves halfway through baking. Transfer baking sheets to a wire rack to cool. Store in an airtight container at room temperature up to 1 week.

VEGAN SESAME TAHINI COOKIES (GLUTEN FREE)

Vegan Sesame Tahini Cookies (Gluten Free) image

Vegan Sesame Tahini Cookies (Gluten Free): just 7 ingredients for the best vegan tahini cookies-buttery-rich, crisp sesame coating, tender on the inside. Delicious sesame tahini cookies that are gluten free!

Provided by Demeter | Beaming Baker

Categories     Desserts

Time 37m

Number Of Ingredients 9

½ cup unsalted tahini
½ cup natural, unsalted creamy almond butter
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons warm water, whisked together, set for 15 minutes)
¼ cup + 3 tablespoons coconut sugar
2 tablespoons coconut flour
¾ teaspoon baking soda
½ teaspoon pure vanilla extract (optional)
¼ teaspoon salt (optional)
¼ cup sesame seeds

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a medium bowl, add all ingredients except sesame seeds. Using a rubber spatula, stir and fold until thoroughly mixed.
  • Pour sesame seeds into a shallow bowl. Using a medium cookie scoop, scoop and roll cookie dough into balls. Drop each ball into the bowl of sesame seeds. Roll and press until all dough balls are fully coated in seeds.
  • Place cookie dough balls onto the baking sheet, spaced evenly apart, with enough room to spread quite a bit-these cookies will bake up big. Using the palm of your hand or a spoon, gently flatten cookies to desired thickness. If desired, press together any large cracks that form around the edges of cookies-some cracks are natural & pretty!
  • Bake for 10-14 minutes. Mine took 12 minutes. Place cookie sheet on a cooling rack, and allow cookies to cool directly on the sheet for 15-20 minutes-do not remove from sheet for at least 15 minutes, as cookies are fragile. Then, using a spatula, gently transfer cookies directly onto the cooling rack to cool for about 30 minutes, or until completely cooled. Enjoy! Storing notes below.

TAHINI SHORTBREAD COOKIE RECIPE

Tahini Shortbread Cookie Recipe image

My family's favorite tahini cookies! Nutty, slightly sweet, and perfectly satisfying with the perfect crumbly texture. These shortbread cookies are made with a bit less butter than normal but don't lack any buttery goodness or tenderness, thanks to rich organic tahini paste! These cookies take just 5 ingredients, a couple bowls, and a hand mixer. So simple! But be sure to read the tips and step-by-step guide above.

Provided by Suzy Karadsheh

Categories     Dessert

Time 1h30m

Number Of Ingredients 7

1 3/4 sticks (7 oz) unsalted butter, at room temperature
1 cup sugar
1 cup tahini paste
2 cups all-purpose flour
1 tsp baking powder
pinch salt
Powdered sugar, optional

Steps:

  • In a large bowl combine the butter and sugar. Using a hand mixer on medium speed, combine until light and fluffy.
  • Now add the tahini and continue mixing on medium speed until well-incorporated.
  • In a separate mixing bowl, combine the flour, baking powder, and salt.
  • Transfer the dry ingredients to the tahini mixture, and mix until well-incorporated into a dough.
  • Take the tahini cookie dough out of the bowl and make it into a log (about 2 inches in diameter). Place the log on the short end of a large piece of plastic wrap. Roll the wrap twisting the ends in opposite direction so that the dough log is tightly wrapped. Refrigerate for at least one hour or overnight.
  • Preheat the oven to 350 degrees F.
  • Slice the dough into 1/3 to 1/2 inch rounds, and arrange on a very large baking sheet (or two baking sheets) lined with parchment paper.
  • Bake in the 350 degrees heated oven for 15 minutes or so until the cookies are light brown around the edges and set.
  • Remove from the heat and leave the cookies in the baking sheets to cool briefly (about 10 minutes). Then transfer to a cooling rack to completely cool. Dust with powdered sugar, if you like.

1/2 cup tahini
1 teaspoon vanilla extract

Steps:

TAHINI CHOCOLATE CHIP COOKIES RECIPE

Tahini Chocolate Chip Cookies Recipe image

Soft, chewy, nutty and just enough sweet! That's the story of these addictive tahini chocolate chip cookies. Rich tahini paste eliminates the use of butter, while adding a subtle nutty flavor that takes chocolate chip cookies to a whole new level of delicious.

Provided by Suzy Karadsheh

Categories     Dessert

Time 23m

Number Of Ingredients 10

1 cup tahini ((8 ounces), I used Soom Tahini )
1/2 cup granulated sugar
2/3 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
1 ¼ teaspoon kosher salt
¾ teaspoon baking soda
½ teaspoon ground cinnamon (more for dusting)
2 cups all-purpose flour
1 ½ cup bittersweet chocolate chips (I used 60% Cacao bittersweet chocolate chips by chiradelli)

Steps:

  • Heat the oven to 375 degrees F and position a rack in the middle. Line two large baking sheets with parchment.
  • In a large mixing bowl, combine the tahini, sugar, and brown sugar. Mix with a wooden spoon for a couple of minutes until well combined (the mixture will be crumbly).
  • Add the eggs, 3 tablespoons cold water, and the vanilla extract. Mix for another 2 minutes until well-incorporated (the mixture should be smooth and fudgy).
  • Stir in the salt, baking soda, and ground cinnamon. Add the flour and mix until combined. Add the chocolate chips and stir until well combined.
  • Scoop heaping 1 tablespoons of the dough and arrange them 2 inches apart on the prepared sheet pans. Wet the back of a spoon and use it to lightly flatten the tops of the cookie dough portions (you're looking for the dough to be about ½ inch in thickness give or take).
  • Bake on the middle rack for about 8 to 11 minutes, depending on how soft or crunchy you like your cookies. If you like your cookies on the softer side, pull them out sometime around the 8 or 9 minutes and let them cool on the sheet pan for a few minutes before transferring them to a wire rack Let the cookies cool completely on the baking sheets.
  • Dust with more ground cinnamon before serving (optional).

NUTTY PEANUT BUTTER & TAHINI (SESAME SEED) SOFT COOKIES

Nutty Peanut Butter & Tahini (Sesame Seed) Soft Cookies image

A warm, deep taste that really envelops the mouth, with two different levels of nutty flavour. A heavenly experience! I suggest using quality -crunchy- peanut butter (where the ingredients = 100% roasted peanuts ONLY). One bowl recipe.

Provided by gym tonic

Categories     Dessert

Time 13m

Yield 30-36 cookies

Number Of Ingredients 6

1/2 cup peanut butter
1/2 cup tahini
3/4 cup brown sugar
1/4 cup sugar (caster or superfine)
1 teaspoon vanilla
1 large egg, lightly beaten

Steps:

  • Preheat oven to 350F/175C & grease an oven tray.
  • In a large bowl mix sugars together.
  • Add remaining ingredients. NOTE: Do not pour tahini straight from container. Scoop from bottom as mixture separates & you don't want just the oil! If you buy a particularly runny tahini, use 1/4 cup tahini, 3/4 cup peanut butter.
  • Mix ingredients til well combined. If mixture is too sticky/runny add some flour/gluten-free flour to the mix.
  • Spoon 1 1/2 teaspoons of the mixture onto the greased baking tray. TIP: they will spread out while baking so don't crowd tray. You may need to do two batches.
  • With a fork, make a slight indent to flatten cookies.
  • Bake for 8 minutes for soft cookies, >10 (til browned) for crisper cookies.
  • Let cool for 10-15 before touching otherwise they will crumble.

CARAMELISED HONEY AND TAHINI COOKIES

Caramelised honey and tahini cookies image

Use up that jar of sesame paste in the back of your cupboard to bake these decadent honey and tahini biscuits. They're sweet, salty and totally addictive

Provided by Liberty Mendez

Categories     Afternoon tea, Treat

Time 30m

Yield Makes 18

Number Of Ingredients 10

150g honey
150g salted butter , cubed
75g dark brown soft sugar
75g caster sugar
100g tahini
1 large egg , plus 1 large yolk
250g plain flour
¼ tsp bicarbonate of soda
1 tsp sea salt flakes
1 tbsp mixed black & white sesame seeds

Steps:

  • Bring the honey to a boil in a small pan set over a medium-high heat. Boil for 5 mins until it has darkened and smells nutty - don't worry if it looks quite dark, this will add flavour. Whisk briefly, then remove from the heat and carefully whisk in the butter until melted. Transfer to a heatproof bowl and leave to cool.
  • Tip both the sugars, tahini, egg and yolk into the bowl with the honey mix, then beat to combine. In a separate bowl, mix the flour and bicarb together, then gradually pour the wet ingredients into the dry and mix until it comes together into a dough. Chill for 3 hrs, or overnight.
  • Heat the oven to 180C/160C fan/gas 4 and line two baking trays with baking parchment. Roll the dough into 18 even balls (weigh for accuracy, if you like - they should be around 45g each), and arrange on the trays spaced 5cm apart. Gently press down with the back of a spoon to slightly flatten the tops, then sprinkle over the sea salt flakes and sesame seeds and bake for 10-12 mins.
  • Tap the tray on a work surface to slightly flatten the cookies. Leave to cool on the trays for 10 mins, then transfer to a wire rack to cool completely. Will keep in an airtight container for up to three days.

  • Homemade Tahini. If you can’t find tahini in-store or have run out but have sesame seeds on hand, you can easily whip up your own homemade batch. All you will need are sesame seeds and a neutral flavor oil.
  • Sunflower Seed Butter. Sunflower seed butter makes a good alternative in most dishes. If you have sunflower seeds on hand you can also make your own sunflower seed butter.
  • Black Sesame Paste. Black sesame paste is a Japanese condiment also known as Kuro Neri Goma. It is used in sweet and savory dishes. Black sesame paste is made with 100% black sesame seeds in the same way regular tahini is made.
  • Cashew and Almond Butter. You can use any type of nut butter whether it be cashew, brazil, almond, or macadamia butter as a tahini substitute. The flavor profile won’t be exactly the same, but you will achieve the same rich creamy texture.
  • Peanut Butter. Peanut butter is one of the easiest replacements for tahini since you probably have it in your pantry already (unless you have an allergy).
  • Greek Yogurt. Greek yogurt won’t be an exact match for tahini, but it can be a creamy lower calorie alternative. Although Greek yogurt is thick and creamy, it doesn’t have the same palette-clinging density.
