WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.
FRESH WATERMELON MARGARITA
Steps:
- Gather the ingredients.
- If desired, rim two double old-fashioned glasses : Mix the salt and chili powder in a shallow dish, wet the rim by wiping it with a lime wedge, then dip or roll it into the chili salt.
- In a cocktail shaker, muddle the watermelon cubes into a juicy pulp.
- Fill the shaker with ice and add the tequila, triple sec, and lime juice.
- Shake well .
- Use both a cocktail strainer and a mesh strainer to fine-strain the drink over fresh ice into the prepared glasses.
- Garnish with watermelon and lime wedges and a sprig of mint. Serve and enjoy.

WATERMELON-LIME GELATIN SQUARES

- Puree the watermelon, sugar, lime juice and Sambuca in a blender until smooth, working in batches if necessary. Pour through a fine-mesh sieve into a large liquid measuring cup.
- Pour 1 cup of the watermelon mixture into a small saucepan and bring to a boil. Meanwhile, pour another 1 cup of the watermelon mixture into a large bowl and sprinkle the gelatin on top; let stand 1 minute. Pour the hot watermelon mixture into the bowl and stir until the gelatin dissolves. Stir in the remaining watermelon mixture from the measuring cup.
- Spray an 8-inch-square cake pan with cooking spray, wiping out the excess. Pour in the watermelon mixture. Skim the foam from the surface and refrigerate the gelatin until slightly thickened, about 20 minutes. Arrange the mint leaves on top in rows, then push them just below the surface. Refrigerate until fully set, at least 4 hours.
- Unmold the gelatin: Invert onto a cutting board, then re-invert onto another cutting board and cut into squares.
WATERMELON, LIME AND MINT GRANITA

- Working in 2 batches, puree watermelon in a food processor. Strain puree through a sieve and strain out solids, forcing liquid out with a wooden spoon. Discard solids. Combine the watermelon puree, lime juice, mint and sugar in a 9 by 13-inch metal pan. Place mixture in the freezer, scraping thoroughly with a fork every 20 to 30 minutes for about 2 1/2 hours, or until the granita resembles coarse crystals. Scrape 1 last time and spoon into parfait glasses or bowls. Top with a mint sprig.

- Freeze 2 cups cubed watermelon until solid. Meanwhile, bring 3/4 cup each sugar and water to a boil, stirring to dissolve the sugar. Transfer to a pitcher and refrigerate until cold. Puree 4 more cups cubed watermelon in a blender; strain into the pitcher. Stir in 1 cup lime juice (from about 9 limes) and 2 cups cold seltzer. Add the frozen watermelon and some lime slices.

- Put the watermelon pieces in a freezerproof container and freeze overnight until solid. The next day, prepare the garnish for the rim of each glass. Combine the sea salt flakes, sugar, chilli flakes and lime zest in a small bowl. Set aside.
- When you want to serve, put the frozen watermelon, tequila, triple sec, lime juice and honey in a food processor or blender and blitz until smooth. Run a lime wedge around the rims of four glasses, then dip in the garnish mix. Pour the drink into the glasses. Serve immediately.

- Place kosher salt in a saucer. Prepare a glass by slicing one lime in half and rubbing the cut edge over the rim of the glass. Lightly dip it into the salt.

- To make watermelon juice, scoop half a small watermelon into a blender and puree until well blended. Then strain through a fine mesh strainer and place juice in a jar. Refrigerate until ready for use.
- To make watermelon ice cubes, cube the other half of the watermelon into ice cube-sized pieces and place on a baking sheet. Make sure they're not touching of they'll stick together. Freeze for 4-5 hours or overnight or until very firm.
- To make margaritas, add watermelon juice, lime juice, tequila, and triple sec to a cocktail shaker or pitcher and shake vigorously or stir.
- Next, run the quarter of a lime around two serving glasses and then dip in margarita salt. Fill 3/4 of the way full with watermelon ice cubes (or regular ice cubes if preferred).
