Brownies:
Nonstick vegetable oil spray
1/2 cup (1 stick) unsalted butter, diced
3 ounces unsweetened chocolate, chopped
1 1/2 cups sugar
3 large eggs
1 tablespoon instant espresso powder
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
3/4 cup all purpose flour
White Chocolate Ganache:
6 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
5 tablespoons heavy whipping cream
1/4 teaspoon ground cinnamon

Steps:

  • For brownies:
  • Preheat oven to 325°F. Fold 16-inch-long piece of foil to 8x16-inch strip; place in 8x8x2-inch metal baking pan, leaving overhang on 2 sides. Repeat with another sheet of foil in opposite direction, lining pan completely. Spray foil with nonstick spray.
  • Stir butter and chocolate in heavy large saucepan over very low heat until chocolate is melted. Remove from heat; whisk in sugar, then eggs, 1 at a time. Whisk in espresso powder, vanilla, and salt; sift flour over and stir to blend well. Transfer batter to prepared pan.
  • Bake brownies until puffed and dry-looking and tester inserted into center comes out with some moist batter attached, about 35 minutes; cool completely in pan on rack.
  • For ganache:
  • Place white chocolate in medium microwave-safe bowl. Bring cream to simmer in small saucepan. Pour cream over chocolate in bowl. Let stand 30 seconds, then stir until chocolate is melted and smooth. If necessary, microwave on low power in 10-second intervals until white chocolate is melted completely. Chill until ganache is thick but still slightly pourable, about 25 minutes.
  • Using foil as aid, lift brownies from pan. Turn over onto sheet of parchment paper; peel off foil.
  • Pour ganache onto center of brownies; spread to edges (some may drip over). Sprinkle with cinnamon. Chill until ganache is set, at least 2 hours. DO AHEAD: Can be made 2 days ahead. Cover and keep chilled.
  • Cut brownies into 4 strips. Cut each strip crosswise into 5 or 6 pieces, or cut each strip into 6 triangles. Arrange brownies on platter and serve.

3 sticks (1 1/2 cups) unsalted butter
6 ounces bittersweet chocolate (64-percent cacao), chopped
1/4 cup heavy cream
1 cup all-purpose flour (see Cook's Note)
1 1/4 cups Dutch-process cocoa
1 3/4 cups granulated sugar
1/2 cup packed dark brown sugar
1 3/4 teaspoons kosher salt
1 tablespoon pure vanilla paste or extract
2 teaspoons instant espresso powder
6 large eggs, chilled

Steps:

  • Arrange a rack in the center of the oven and preheat to 350 degrees F. Spray a 13-by-9-inch baking pan, preferably metal, with nonstick baking spray. Line the pan with parchment paper leaving a 2-inch overhang on the longer sides. Lightly coat with nonstick spray.
  • Melt the butter in a large saucepan over medium heat, swirling occasionally, until the butter is a deep golden color, about 5 minutes; the butter will hiss and spit as the whey evaporates so be careful. As the foam subsides the butter will go from a canary yellow color to golden. When it does, take it off the heat. Add the chocolate and cream to the butter and let it sit, stirring occasionally, until the chocolate is melted.
  • Sift the flour and cocoa powder through a fine-mesh sieve into a medium bowl. Beat the granulated sugar, brown sugar, salt, vanilla, espresso powder and eggs in the bowl of a stand mixer fitted with the whisk attachment. Start on low speed and gradually increase to high speed until the eggs are pale, very thick and fluffy, about 8 minutes (start your timer when you get to high speed). Do not be tempted to skimp on the mix time; this step is key to getting the signature shiny, crackled brownie top. Reduce the speed to low and slowly pour the warm chocolate into the eggs; beat until completely incorporated. Gradually add the dry ingredients and beat until just combined; do not overmix. Use a rubber spatula to scrape the sides and bottom of the bowl and fold until the batter is completely combined.
  • Scrape the batter into the prepared pan. Bake until the brownies are glossy and just barely firm, and an instant-read thermometer inserted into the center registers 205 degrees F, 25 to 35 minutes. Don't let the thermometer touch the bottom of the pan or you will get a much higher reading. (The cook time will be at the higher end of the range if using a glass or ceramic baking dish.)
  • Let the brownies cool completely to allow the crumb to set before slicing, about 3 hours.
  • Use an offset spatula to loosen the brownies from the sides of the pan. Use the parchment overhang to lift the brownies out of the pan. Remove the parchment and cut into 24 squares.

Steps:

  • Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
  • Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.

My Fudgy Cappuccino Brownies are getting rave reviews. This is a simple recipe that builds on several great flavors. The key is to combine Sweet Ricotta & Chocolate Spread by Villa Reale with softened cream cheese, and swirl it into a dark chocolate brownie batter. Add some espresso powder to the brownie batter and the result is an amazing treat.

1 8 ounce package cream cheese (room temperature)
4 tablespoons Sweet Ricotta & Chocolate Spread by Villa Reale
1 egg
1 18.2 ounce box dark chocolate brownie mix
1 egg
1/3 cup water
½ cup canola oil
1 tablespoon powdered espresso
¼ cup mini-chocolate chips

Steps:

  • Grease a 9"x9" square baking pan. Line with parchment with overlap handles. Preheat the oven to 350 degrees F.
  • With a hand mixer, mix cream cheese and egg for 3 minutes until smooth. Mix in by hand the Sweet Ricotta & Chocolate Spread.
  • Make brownie mix according to the package. Add the espresso powder with the water.
  • Pour ⅔'s of the brownie batter into the prepared pan. Dollap big spoonfuls of the cream cheese mixture on top. Dollop the rest of the brownie batter on top of that. With a butter knife swirl the two mixes until you get a pleasing pattern. Do not over mix. Sprinkle mini-chips on top.
  • Bake for 30-45 minutes, depending on how fudgy you like them. They should be a little wet in the middle when removed from oven. Let cool one hour.
  • Remove the brownies from the pan with the parchment handles. Cut into squares with a sharp knife. It is easiest to dip the knife in hot water occasionally to get clean cuts.
  • Serve chilled or room temperature.

¼ cup instant coffee granules

  • Preheat the oven to 375 degrees F (190 degrees C). Grease and flour four 8x8-inch baking pans.
