If you have left over cooked roast and don't know what to do with it, here is a nice little recipe I found in Taste of Home. I like to add a few tablespoons of sour cream just before serving, but it is up to you.

2 -3 cups cooked beef, julienned
1 small onion, chopped
2 garlic cloves, minced
1 teaspoon vegetable oil
1 (10 ounce) can cream of mushroom soup
1/2 cup milk
1/2-1 cup mushroom, sliced
2 tablespoons ketchup
1 teaspoon beef bouillon
pepper

Steps:

  • In saucepan over medium heat, saute onion in oil about 5 minutes.
  • Add garlic and cook 2 minutes longer, then add mushrooms and cook til tender.
  • Add roast beef and cook until heated through.
  • In a small bowl, mix soup, milk, ketchup and bouillon then add to the meat mixture. Bring just to a boil and then reduce heat to simmer.
  • Cook uncovered 8-10 minute.
  • If using sour cream, stir in just before serving.
  • Serve over noodles or mashed potatoes.

1 pound beef sirloin, cut into 2-by-1-by-1/8-inch strips
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
12 ounces button mushrooms, quartered
1 medium yellow onion, thinly sliced
1 tablespoon tomato paste
2 tablespoons all-purpose flour
2 cups beef broth, homemade or low-sodium canned
1/4 cup sour cream
2 teaspoons Dijon mustard
2 teaspoons freshly squeezed lemon juice
1 tablespoon chopped flat-leaf parsley leaves
Kosher salt
One 12-ounce package wide egg noodles
2 tablespoons unsalted butter
Freshly ground black pepper

Steps:

  • For the stroganoff: Preheat a large skillet over medium heat for 3 to 4 minutes. Raise the heat to high and heat 1 tablespoon oil. Season half the beef with salt and pepper, add to the skillet, arranging it in a single layer, and cook without stirring until well-browned and still pinkish inside, 1 to 2 minutes. (It is key to only partially cook the meat at this stage, since it will be finish cooking later in the sauce.) Transfer to a large plate and set aside. Repeat with the remaining oil and beef. Discard any excess oil.
  • Return the skillet to medium-high heat. Melt 2 tablespoons of the butter and, when the foaming begins to subside, add the mushrooms and cook, stirring occasionally, until well-browned, about 7 minutes. Season with salt and pepper to taste. Using a slotted spoon, transfer to the plate with the beef.
  • Heat the remaining 4 tablespoons butter in the skillet; when the foaming begins to subside, add the onion and cook, stirring, until lightly caramelized, about 5 minutes. Add the tomato paste and cook, stirring, until lightly browned, about 1 minute more. Whisk in the flour and cook, stirring, for 1 minute. Pour in the beef broth and, whisking constantly, bring to a full boil. Remove from the heat. Whisk in the sour cream, mustard and lemon juice and season with pepper to taste. Set the sauce aside covered.
  • Meanwhile, for the noodles: Bring a large pot of water to a boil, salt generously, and cook the noodles until tender but not mushy. Drain and transfer to a large bowl. Toss with the butter and season with pepper.
  • Add the beef and any juices, mushrooms and parsley to the sauce and reheat over medium heat until just hot. (Do not boil.) Divide the noodles among 4 plates and top with the stroganoff. Serve immediately.

2 pounds top sirloin roast, trimmed
Kosher salt and fresh cracked black pepper
3 tablespoons garlic infused olive oil
1 onion, chopped
2 cups good quality beef stock
1 1/2 cups sour cream

Steps:

  • Cut the beef against the grain into narrow 2-inch long strips about 1/2-inch thick. Pat dry and season with salt and pepper, to taste. In a large saute pan, heat 2 tablespoons of the infused olive oil over medium-high heat. Add the prepared beef and brown on all sides, about 3 to 5 minutes. Remove the meat from the pan and set aside. Add another tablespoon oil to saute pan, if needed, and add the onions. Cook until light golden, stirring and adding 1/4 cup of beef stock to deglaze the pan. Stir in the remaining beef stock and the beef with any resting juices back to the skillet and simmer for 10 minutes. Stir in the sour cream and just heat through, do not boil. Taste for seasoning and adjust, as necessary. Transfer the stroganoff to a serving platter and serve. Enjoy!

150 ml sour cream ((or crème fraiche if you prefer))
2 tablespoons parsley (chopped (plus extra for garnish))
Rice, bread or mashed potato
Kale (or another green vegetable such as spinach, cabbage or broccoli)

Steps:

  • Put a tablespoon of olive oil in a large frying pan and then add the onions. Cook for about 3 minutes until softened.
  • Add the sliced mushrooms and turn up the heat. Cook for a further 2 minutes.
  • When the onions and mushrooms are lightly browned, add the garlic, paprika, salt and pepper, plus the leftover beef and any juices. Cook over a low heat for a further 3 minutes. Add a splash of water if it gets too dry.
  • Finally, add the sour cream and heat gently until it just starts to bubble. Turn the heat off and sprinkle in the chopped parsley. Serve with the rice and kale, or whatever accompaniments you prefer.

This classic recipe appeared in a 1963 Times article by Craig Claiborne about the increasing popularity of beef stroganoff (the article featured not one, but two slightly different recipes for the dish.) Mr. Claiborne reported that "the meat-and-cream dish is of Russian provenance, likely named for a noted Russian gourmet, Count Paul Stroganoff, a dignitary in the court of Czar Alexander III." Stroganoff may not be considered haute cuisine any longer, but the rich stew, dotted with mushrooms and laced with sour cream, is still deeply satisfying and the perfect antidote to a chilly day. 2 tablespoons salted butter
8 ounces mushrooms (quartered)
1 cup diced onion
2 cloves garlic (minced)
1/4 cup white wine (or sherry)

2 cups beef broth
3 tablespoons all purpose flour
1/4 cup sour cream
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat the butter (or olive oil) in a large skillet over medium heat. Add the mushrooms and saute until the mushrooms have given off their liquid and have started to caramelize.
  • Add the onion and continue cooking until the onion is soft. Add the garlic and cook an additional minute.
  • Deglaze the pan with the white wine, add the dried thyme, and simmer until the wine has reduced by about half.
  • Meanwhile, make a slurry with the all-purpose flour and about 1/2 a cup of the beef broth. Use a whisk to break up any lumps.
  • Add remainder of the beef broth to the skillet and whisk in the flour slurry, whisking frequently to prevent lumps from forming. Let the mixture simmer for 3-4 minutes until rich and thickened.
  • Add the leftover roast beef and cook over low heat until the beef is heated through. Turn off the heat.

Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.

This is a family favorite I use what is left over from a roast. It is so easy to make and always comes out wonderfully! For a hot dinner ready when you get home from work this is great just throw everything in the crock pot and let is do the cooking for you! Plus it uses up that left over roast if you have carrots or potatoes cooked in with the roast you can throw those in also if you wish. Hope you enjoy!

Okay there are probably lots of different versions of this recipe, But this one is the easiest your going to find! It uses up your leftover roast beef, and I have even used left over grilled steak. Serve it over egg noodles and it is sooo yummy. A family favorite of mine since I was a kid. Not sure where the recipe came from, but my thought is Canadian living from many, many years ago.

1 (8 ounce) can mushrooms
2 tablespoons ketchup

2 lb beef sirloin, cut into 2 in cubes
salt, to taste
freshly ground black pepper, to taste
½ cup flour, divided
2 tablespoons canola oil
2 tablespoons unsalted butter
1 large yellow onion, thinly sliced
1 lb cremini mushroom, sliced
2 tablespoons cognac
2 cups beef broth
½ cup sour cream
½ cup fresh parsley, chopped
4 cups egg noodle, buttered, rice or potatoes, for serving

Steps:

  • In a medium bowl, season the beef with salt and pepper and toss to coat.
  • Add ¼ cup (30 g) of flour, and toss the beef cubes until they are fully coated.
  • In a large pan over medium-high heat, heat the canola oil until it shimmers. Place about half of the beef cubes in the pan. Sear the beef on one side until it develops a deep brown crust, 3-5 minutes. Then flip and sear on the other side for 3-5 minutes. Then, stir the beef until evenly browned on all sides. Remove the beef from the pan. Repeat with the remaining meat.
  • Melt the butter in the leftover meat drippings.
  • Add the onion, season with salt and pepper, and cook until the onions are soft and slightly golden, about 5 minutes.
  • Add the sliced mushrooms and cook until deeply browned and tender, about 10 minutes.
  • Add the cognac and scrape the brown bits, releasing them from the bottom of the pan. Cook and stir until the cognac is fully incorporated, about 2 minutes.
  • Sprinkle the remaining ¼ cup (30 g) flour into the pan and stir to coat the the caramelized veggies.
  • Add the beef broth and stir it into the flour and vegetables. Bring the liquid to a boil, then reduce to low heat and simmer for 10 minutes. The sauce should be thick enough to coat the back of a spoon.
  • Once the sauce is thickened, turn off the heat. Put two scoops of hot gravy into a bowl with the sour cream. Mix the two together to slightly warm, or temper, the sour cream. Then add the sour cream mixture to the rest of the gravy and stir it in until fully combined.
  • Sprinkle the stroganoff with chopped parsley and serve with buttered egg noodles, rice, or potatoes.
  • Enjoy!

3 ounces butter
2 tablespoons light olive oil
1 medium white onion, finely diced
1 garlic clove, crushed
1 carrot, finely diced
5 ounces button mushrooms, sliced
12 ounces filet of beef
1 tablespoon mild paprika
5 tablespoons beef stock
1/2 lemon, juice of
1/2 teaspoon dried thyme
1 pinch salt & fresh ground pepper
2/3 cup heavy cream
1 cup basmati rice
2 cups water
1 ounce butter
1 pinch salt

Steps:

  • Place 2oz of the butter and 1tbsp of olive oil into a pan and melt over a low heat.
  • Add the diced carrot and onion and cook for 3-4 mins to soften. Add the garlic and cook for a further 1-2 minutes Add the mushrooms and cook gently for a further 5 minutes
  • Finely slice the beef into finger-sized slithers. Mix with the ground paprika and stir fry in a separate pan over a high heat in the remaining oil for 2 mins to seal and brown.
  • Add half the beef stock and lemon juice to the beef and bring to a simmer. Add the vegetables to the pan, bring to a gentle simmer and cook for 2-3 minutes
  • Add the remaining butter and stir in the cream. Bring up to simmering point but do not allow to boil. Season to taste.
  • Meanwhile, place the rice and water in a medium sized pan. Bring to a gentle simmer, cover and cook until all the liquid has been absorbed then add the butter.
  • To serve, divide the rice between two serving plates and spoon over the stroganoff.

2 lbs of medium to rare cooked lean Roast Beef
Dash of salt
Dash of black pepper
4 ounces of butter
3 tablespoons of all-purpose flour
3 cups no salt beef broth
1 heaping teaspoon dijon mustard
12 ounces fresh button mushrooms
1/4 cup sour cream
1/4 red wine
1 large shallot chopped
6 garlic cloves
2 tablespoons of olive oil

Steps:

  • 1. Clean the mushrooms by brushing off all dirt and particles. 2. Slice and cut the roast beef into strips ½ inch thick by 2 inches long. 3. In a large, heavy skillet, melt 2oz of butter on medium heat. Sautee the mushrooms with a dash of salt and pepper for about 5 minutes, or until they are nice and golden brown and their liquid has been released and cooked off. Remove and place in a container to the side. 4. Melt 2oz butter with 2oz of olive oil, and add the beef strips. Stir until cooked and remove to a container. 5. Melt the remaining 2oz of butter and cook the shallots and garlic till brown. 6. Sprinkle with the flour. 7. Pour 2 cups of broth in the pan and boil stirring constantly. 8. Lower the heat and stir in the mustard. 9. Add the meat and mushrooms and remaining broth. Cover and simmer for 50-60 minutes until the meat is tender. 10. Five minutes before serving, stir in the sour cream and red wine. 11. Salt and pepper to taste, serve over wide flat noodles (Pappardelle is my favorite)

  • Cook slowly until heated through.
