WATERMELON FETA SALAD WITH BLUEBERRIES
Watermelon Salad is a gorgeous AND healthy summer salad! It has juicy watermelon, salty feta cheese, and sweet blueberries! You can add crunchy cucumbers and fresh mint for amazing flavor. Toss the whole thing in lime dressing and it will sing!

Steps:
- Prepare ingredients- Dice watermelon and rinse blueberries. Crumble feta. Julienne fresh mint.
- Assemble Salad - Add watermelon, blueberries, feta, and mint to a large bowl.
- Make Dressing- Whisk lime juice, olive oil, honey, and salt and pepper together.
- Dress salad & Toss - Drizzle dressing over salad and toss to coat.
- Serve - This salad is best served immediately after dressing.

WATERMELON BLUEBERRY SALAD WITH BALSAMIC DRESSING
I really wanted to showcase the 18 year aged balsamic I recently purchased so I have made this quick and fresh watermelon blueberry salad. The balsamic brings out the freshness of the watermelon and blueberries and saltiness of the feta cheese. This is a great side dish to bring to a cookout or a wonderful light refreshing snack to eat whenever you want! I'm sure this won't be a problem but try to eat it up the same day you make it otherwise the liquid from the watermelon and dressing will make the cheese wet. Here is a little more about the oil and vinegar used in this recipe: Koroneiki Olive Oil: Koroneiki is a Greek olive that is small in size but high in levels of poly-phenols, the natural antioxidants found in plants that may reduce the risk of heart disease and cancer. This olive oil is very robust and a great staple olive oil for any cook's kitchen. Aged Balsamic Vinegar: It is aged 18 years in chestnut, oak, mulberry cherry and ash barrels. It is very rich and dense Uses: The applications are endless for this vinegar. Excellent for salad dressings, marinades, glazes, pan sauces, soups, pickling, grilling, over ice cream, cheese, and fresh fruit.

- Arrange rinsed arugula on a plate or two plates if serving individually. Place the watermelon balls/cubes on top. Thinly slice radishes and add them to the salad.
- Crumble the feta cheese with your fingers and sprinkle it on the salad. If your feta cheese is too soft, put it under very cold running water for about 10 seconds. This will firm it up. Sprinkle the salad with blueberries.
- Prepare the dressing: mix olive oil, lime juice, soy sauce, sesame oil, ginger, and chilli flakes in a jar, close it and shake it well. Season with salt and pepper to taste. You can adjust the amount of chili flakes according to your taste. Pour the dressing just before serving. Sprinkle the salad with sesame seeds. Serve and enjoy!
