1 small watermelon (12 to 14 pounds), peeled and chopped
1 teaspoon apple cider vinegar
Handful fresh mint
1 liter sparkling water
Pinch flakey sea salt
Pinch chili powder

Steps:

  • Add the watermelon, vinegar and mint to a blender and blend to combine. Strain the mixture through a sieve into a pitcher. Add the sparkling water, a pinch of salt and chili powder and ice.

1/2 cup sugar
6 cups 1-inch dice watermelon
Zest and juice of 2 limes
Lime wheels, for garnish

Steps:

  • Add the sugar and 1/2 cup water to a small saucepan. Stir and bring to a simmer over medium heat until the sugar is melted, then turn off the heat and let cool.
  • Add the watermelon, lime zest and juice and 3 tablespoons of the cooled simple syrup to a blender. Blend until smooth. Pour into 4 small glasses.
  • Garnish each with a wheel of lime.

8 cups watermelon (cubed, seeded, and divided)
1 cup water, divided
1/3 cup sugar, divided
1/4 cup fresh lime juice
1 liter club soda or 1 liter seltzer water, well chilled
lime slice, for garnish

Steps:

  • Combine half the watermelon, half the water and half the sugar in a blender; puree.
  • Pour through a coarse strainer into a large container.
  • Repeat with the remaining watermelon, water and sugar.
  • Stir in lime juice.
  • Refrigerate until well chilled, about 4 hours.
  • To serve, stir in club soda (or seltzer) and garnish with lime.
  • MAKE AHEAD TIP: Prepare through Step 1, cover and refrigerate for up to 2 days.

1 tablespoon watermelon seeds

Steps:

  • Puree half of the fruit in a blender with 1 cup of the water.
  • Pour into a clear pitcher.
  • Add the remaining fruit and water to the blender, along with the sugar and lime juice; puree.
  • Combine with the juice in the pitcher.
  • Stir in the reserved seeds.
  • Refrigerate until chilled.
  • Serve over ice in clear glasses; garnish with lime.

1 cup silver tequila
1/4 cup triple sec
4 -6 limes, cut into wedges
ice, for serving

Steps:

  • Using a blender or food processor, puree the watermelon pieces in batches; strain into a large pitcher.
  • Stir in the tequila and triple sec and refrigerate until cold, about 1 hour.
  • Squeeze a few lime wedges into the agua fresca.
  • Serve over ice, with additional lime and watermelon wedges on the side.

2 cups watermelon, rind removed, seeded and chopped into cubes
2 tablespoons sugar
1 tablespoon lime juice

Steps:

  • In a blender or food processor, combine water, watermelon, sugar, and lime juice until smooth.
  • Pour mixture through a strainer into a pitcher, forcing through most of the pulp.
  • Chill at least 30 minutes before serving.
  • Serve with or without ice cubes.
  • As a decorative touch, add slices or chunks of watermelon.

1/4 cup (packed) fresh mint leaves
1/4 cup sugar or agave syrup
5 cups peeled, seeded, coarsely chopped watermelon (from about a 2 1/2-pound watermelon)
1/4 cup fresh lime juice
Mint sprigs (for serving)

Steps:

  • Combine mint leaves, sugar, and 1/4 cup water in a small pot. Bring to a boil and stir until sugar has dissolved. Transfer mixture to a heatproof container and chill, uncovered, until cool, about 30 minutes.
  • Strain mint syrup into a blender; discard mint leaves. Add watermelon and lime juice and blend until very smooth. Using a fine-mesh sieve, strain into a pitcher; discard solids. Add 2 cups water and stir well to combine. Serve with mint sprigs.

6 lbs watermelon, rind and seeds removed, cut into 1-inch chunks
1 cup orange juice
1/2 cup lime juice
1/4 cup lemon juice
1 1/2 cups cold water
1 tablespoon superfine sugar (castor sugar)
ice cube

Steps:

  • Working in batches if necessary, put the watermelon and citrus juices in a food processor and process until pureed.
  • Place a fine-mesh sieve over a large bowl and pour the puree into the sieve.
  • Using a rubber spatula, press down on the fruit to force the juice into the bowl.
  • Discard the pulp.
  • Stir the water and sugar into the juice.
  • Cover and refrigerate until well chilled.
  • Transfer to a chilled thermos.
  • Serve over ice.
