Opposite flavors attract in this composition of peppery watercress and honeyed strawberries, and the result is a unanimous hit. It takes just a few minutes to assemble the opus of bright colors and flavors that include feta, toasted sesame seeds, and roasted tamari almonds.

- Toast sesame seeds in a small skillet over medium-high heat, shaking frequently, until fragrant and golden brown, 1 to 2 minutes. Transfer to a plate; let cool.
- Meanwhile, whisk together oil and vinegar in a large bowl. Season with salt and pepper. Add watercress, strawberries, almonds, sesame seeds, and feta. Toss gently to combine; season to taste. Serve immediately.

Steps:
- Lightly toast sesame seeds in a dry skillet and set aside.
- Remove leaves from watercress and reserve in large mixing bowl.
- Coarsely chop larger stems borrowing smaller stems to measure ½ cup stems in saucepan with just enough water to cover.
- Bring stems to a quick boil, drain and plunge into ice water.
- Drain stems well, squeezing out all moisture, and place in blender.
- Add salt, pepper, vinegar and oil; purée.
- Finely mince remaining stems and mix with dressing.
- Pour stems and dressing over leaves, adding half the sesame seeds.
- Garnish with daikon and carrot; sprinkle with remaining sesame seeds and serve.

- Mash the garlic and 1/2 teaspoon salt with a fork in the bottom of a large salad bowl. Stir in the mayonnaise, anchovy paste and mustard. Whisk in the lemon juice, then the olive oil. Stir in 2 tablespoons Parmesan and season with salt and pepper.
- Add the watercress to the bowl and toss to coat in the dressing. Top with the almonds and remaining 1/4 cup Parmesan.

- Trim the stalks from the watercress. Wash and spin dry the leaves. Rinse the endive and slice it lengthwise into thin slivers. Place the endive in a salad bowl with the watercress.
- Remove the pith from the orange segments and cut them into small pieces.
- In a small bowl, combine the garlic with the soy sauce, the vinegar and the sesame and olive oils. Crush the garlic into the dressing with a fork, and then remove it. Season the dressing to taste with salt and pepper.
- Toss the salad in the dressing and serve.

- Drain tofu on paper towels in refrigerator for at least 1 hour.
- After tofu is drained, cut into 1" blocks.
- Heat pot of lightly salted water.
- Cut 2 inches off bottom of watercress and discard.
- Cut watercress into 3" pieces.
- When water comes to boil, add cut watercress and parboil for 30 seconds.
- Drain and cool in ice bath.
- Meanwhile, make Oriental Salad Dressing: Combine all other ingredients - soy sauce, rice vinegar, ginger, sesame oil, sugar, sesame seeds and blend.
- Arrange drained and cooled watercress on a platter with tofu, tomato, and fish.
- Drizzle with Oriental Salad Dressing at time of serving.
