2 tablespoons olive oil
1 small onion, chopped
1 jalapeno pepper, seeded and finely chopped
2 cloves garlic, minced
1 teaspoon lemon zest
⅛ teaspoon ground coriander
1 mango - peeled, seeded and diced
1 (8 ounce) can pineapple tidbits, drained
¼ cup lemon juice
2 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a nonstick skillet over medium-high heat, and cook and stir the onion and jalapeno pepper until tender, about 5 minutes. Stir in the garlic, lemon zest, and coriander; cook until fragrant, about 1 minute.
  • Push the onion and pepper mixture to the edges of the pan, and add the mango and pineapple to the center of the pan. Cook, without stirring, until the fruit begins to caramelize, about 5 minutes. Pour the lemon juice into the pan, and bring to a boil, stirring and scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Remove from heat; stir in the butter, and stir to combine all ingredients evenly. Season to taste with salt and black pepper; serve warm.

2 teaspoons diced green bell pepper

1 lemon, juiced
1 1/2 teaspoons honey
1 teaspoon rice wine vinegar
Salt and freshly ground black pepper
2 cups chicken stock
1 cup white rice
1 teaspoon salt
1 tablespoon butter
1 teaspoon dried Italian seasoning or 1/4 teaspoon dried oregano and 1/4 teaspoon dried thyme and 1/2 teaspoon dried parsley
2 tablespoons grapeseed oil
1 large white onion, diced
1 tablespoon Madras curry powder
1/4 cup all-purpose flour
3 cups vegetable stock
1 ounce fresh ginger root (about 1 1/2-inch piece)
2 cloves garlic, lightly crushed with the side of a knife blade and minced
2 carrots, peeled and cut into 1/2-inch slices
1 head cauliflower, separated into florets
1 head broccoli, separated into florets
1 yellow squash, cut into 1/4-inch thick slices
2 zucchini, cut into 1/4-inch thick slices
1 (6- ounce) package edamame (Japanese lima-type beans)
1 (6-ounce) package fresh frozen corn
1 (6-ounce) package frozen okra, defrosted and sliced crosswise into 1/4-inch pieces
2 tablespoons tomato paste
1 (14 to 16-ounce) can chopped tomatoes
1 leek tender white and green parts only, soaked in salt water and agitated to remove grit, sliced on the bias into 1/4-inch thick strips
1 jalapeno pepper, stem and seeds removed and sliced
Salt and freshly ground black pepper

Steps:

  • For the mango salsa, combine mango, onion, red and green bell peppers, chives, lemon juice, honey, vinegar, salt, and pepper in a nonreactive bowl and chill.
  • Bring chicken stock to a boil in a medium saucepot. Add rice, salt, butter and Italian seasoning. Return to a boil, cover and let simmer for 20 minutes. Remove pan from heat and let stand for an additional 5 minutes covered before removing lid.
  • In a separate large wok or heavy-bottomed saucepan, heat the oil over medium high heat, add the onions and cook until lightly browned, about 5 minutes. Lower the heat to medium, stir in the curry powder and flour to combine with the onions and let cook for about 5 minutes. Stir in the vegetable stock and let cook for 10 minutes to make sure the curry powder begins to lose its grittiness. Then add fresh ginger, garlic, carrots, cauliflower, and broccoli, mix well and cook for 10 minutes.
  • Add the zucchini, edamame, corn, okra and tomato paste, tomatoes with their juice, leek, jalapeno, and salt and pepper, to taste. Bring slowly to a boil, then simmer, stirring occasionally, for 10 minutes.
  • Place some rice in the middle of a serving dish and spoon vegetable curry over. Top with mango salsa.

6 boneless, skinless chicken thighs
1 cup long-grain white rice
One 16-ounce jar mango salsa
Kosher salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat a large cast-iron skillet over medium-high heat.
  • Sprinkle the chicken thighs with salt and pepper on both sides. Add 2 tablespoons oil to the skillet and sear the chicken thighs until browned well, 2 to 3 minutes per side. Remove the chicken to a plate.
  • Add the rice, 1 1/2 cups water and 1 cup of the mango salsa. Stir and bring to a boil. Add the chicken back to the top of the rice, reduce to a simmer, cover and cook until the chicken and rice are cooked through, 17 to 20 minutes.
  • Serve up a pile of rice, topped with the chicken and garnished with additional mango salsa.

Nonstick cooking spray
Salt and freshly ground black pepper
1 medium red onion, cut into small dice
1 small jalapeño, stemmed, seeded, and chopped fine

1 large mango, seeded and skin removed (see Healthy Tips) cut into small dice
Grated zest and juice of 2 limes
2/3 cup chopped fresh cilantro
1 small avocado, seeded, peeled, and sliced

Steps:

  • Preheat a grill or grill pan over high heat.
  • Spray the chicken breasts lightly with cooking spray, and season them with salt and pepper to taste. Grill the chicken until it is just cooked through, about 3 minutes per side. Transfer the chicken to a platter, and cover it with foil to keep it warm.
  • Meanwhile, heat a large nonstick sauté pan over medium-high heat. When it is hot, spray the pan with cooking spray, and add the onion. Season with salt and pepper and cook, stirring occasionally, until almost tender, 5 to 6 minutes. Add the jalapeño, tomato, and mango, and cook the salsa, stirring it occasionally, until it is just heated through, 4 to 5 minutes.
  • Add the lime zest, lime juice, and cilantro to the salsa. Season to taste with salt, if desired. Serve the chicken with the warm salsa and avocado slices on top.

  • Here's a quick and easy way to separate a mango from its skin. Using a paring knife, make a cut through the mango, sliding the knife next to the pit and along one side of the mango. Repeat on the other side of the pit, which will leave you with two large pieces. Working with one piece at a time, make crosshatch cuts through the fruit just to the peel, but not through it. Bend the peel back and carefully slide the knife between the peel and the fruit to remove the meat from the peel. Cut up any large pieces and discard the skin.
