Oh So Good! These little cakes are so simple to make and your guests with think you spent ages on them. Good quality chocolate is key here. If you don't have souffle dishes or custard dishes, you could use muffin tins, but it would make more little cakes (then you could have TWO each!). Use heart shaped moulds for Valentine's Day and top with whipped cream and raspberry coulis. Mmmmm. Enjoy!

6 ounces bittersweet chocolate (good quality)
2/3 cup unsalted butter
1/3 cup white sugar
6 egg yolks
3 egg whites
1/3 cup all-purpose flour
2 tablespoons butter
2 tablespoons white sugar
1 1/2 teaspoons cocoa powder

Steps:

  • Preheat oven to 425 degrees.
  • Butter six 6-ounce custard cups, souffle dishes or other moulds.
  • Mix the 2 Tbsp sugar and cocoa powder together and dust the inside of each mould.
  • Set aside.
  • Melt chocolate and 2/3 cup butter together over low heat.
  • Cool slightly.
  • Beat together 1/3 cup sugar and egg yolks with electric mixer or hand beater until thick and creamy (about 4 minutes).
  • Pour into chocolate mixture and beat together for about 4 minutes until smooth and creamy.
  • In a separate bowl, beat egg whites on medium to high speed until they form stiff peaks (about 3 minutes).
  • Fold egg whites into chocolate mixture along with flour.
  • Pour into moulds.
  • Bake for 7 minutes until edges are set, but centre is still jiggly.
  • Cool for 5 minutes and carefully remove to serving dishes.
  • Serve with whipped cream or good quality French Vanilla or Coffee ice cream.

The dessert debuted in 1998, and now Chili's sells more than 6 million a year - not bad for a chain that started out as a lone Dallas hamburger joint. Steps:

  • Preheat the oven to 350 degrees F. Make the cakes: Brush four 1 1/4-cup brioche molds (or use 10-ounce ramekins or jumbo muffin cups) with the 2 tablespoons melted butter. Dust the molds with cocoa powder and tap out the excess.
  • Whisk the flour, baking soda, baking powder and salt in a small bowl. Bring the milk and 3/4 cup water to a simmer in a saucepan over medium heat; set aside.
  • Combine the vegetable oil, 4 tablespoons room-temperature butter and the sugar in a stand mixer and beat with the paddle attachment on medium-high speed until fluffy, about 4 minutes, scraping down the bowl and beater as needed. Add 1/2 cup cocoa powder and the vanilla; beat 1 minute on medium speed. Scrape down the bowl. Add 1 egg and beat 1 minute on medium-low speed, then add the remaining egg and beat 1 more minute.
  • With the mixer on low speed, gradually beat in the flour mixture, then the hot milk mixture. Finish mixing the batter with a rubber spatula until combined. Divide the batter evenly among the molds, filling each slightly more than three-quarters of the way.
  • Transfer the molds to a baking sheet and bake until the tops of the cakes are domed and the centers are just barely set, 25 to 30 minutes. Transfer the baking sheet to a rack; let the cakes cool until they pull away from the molds, about 30 minutes.

  • Preheat the oven to 400 degrees F.
  • Generously butter four 3/4-cup souffle dishes or custard cups. Arrange on a baking sheet.
  • Stir the chocolate and butter in heavy small saucepan over low heat until smooth. Remove from the heat; stir in the mescal. Cool 10 minutes, stirring occasionally.
  • Using an electric mixer, beat the eggs, yolks, 4 tablespoons sugar, molasses, 1 teaspoon canela powder and salt in medium bowl until very thick ribbons fall when beaters are lifted, about 6 minutes. 1/2 pound bittersweet chocolate, at least 60 percent, plus 8 (1-inch) squares
1/2 cup granulated sugar
3 large eggs
3 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F. Butter 4 (6-ounce) ramekins and set aside.
  • Over a double boiler, melt the butter and chocolate, whisking until smooth. Whisk in the sugar and transfer to a medium bowl. Whisk in the eggs and flour until smooth. Pour the batter into the prepared ramekins about 2/3 full. Place 1 of the small chocolate squares right in the middle of each cake and press down with your fingers so it rests in the middle of the ramekin. Bake the cakes until slightly puffy and set around the edges, 20 to 25 minutes. Don't worry if your cake tester comes out wet, the center should still be loose.

8 ounces bittersweet chocolate, chopped
1/2 teaspoon instant espresso powder
4 large eggs
4 large egg yolks
2/3 cup granulated sugar
4 teaspoons all-purpose flour, plus more for dusting molds
3 tablespoons Frangelico or hazelnut liqueur
1 cup fresh raspberries
1 cup fresh strawberries
Fresh mint, for garnish

Steps:

  • Butter and lightly flour 6 (6-ounce) ramekins. Tap out any excess flour.
  • In a small saucepan, bring to a boil 2 inches of water. In a large glass bowl, add butter, chocolate and espresso powder. Lower heat and place bowl over the simmering water. Slowly whisk mixture until the chocolate is almost completely melted. Remove bowl from heat and continue to whisk until all chocolate has melted. Allow to cool slightly.
  • In a large bowl, add eggs, yolks, and sugar. Using an electric mixer, beat until light and fluffy and pale in color. Reduce speed to medium-low and slowly pour in the chocolate mixture. Add the flour and mix until just combined. Do not overwork the batter.
  • Preheat oven to 450 degrees F.
  • Divide the batter between the molds. Line a baking sheet with parchment paper. Place chocolate molds onto baking sheet and place in oven for 7 minutes. If not baking immediately, cover chocolate molds with plastic wrap and refrigerate until ready to serve, up to 8 hours. When ready to bake, place refrigerated chocolate molds onto baking sheet and place in oven for 10 minutes. The top and sides should be cooked and dry and the inside will be runny.
  • Using oven mitts, carefully invert each mold onto a plate and let it sit for 10 seconds. Then lift 1 corner of the ramekin and the cake should slip out. Sprinkle about 1/2 teaspoon Frangelico over each cake. Spoon berries around the chocolate cake and garnish with mint. Serve warm.

  • In a saucepan over medium heat, melt the butter and chocolate together until the chocolate mixture is smooth. Set aside.
  • Meanwhile, beat together the eggs and sugar with a whisk or electric beater until pale and thick, about 5 minutes.

2 egg yolks
1/3 cup maraschino cherry, finely chopped
sweetened whipped cream, garnish
6 maraschino cherries, with stems

1/2 teaspoon shortening (do not use butter, margarine, spread or oil)

Steps:

  • Prepare Chocolate Dipped Cherries:.
  • Drain 6 maraschino cherries with stems. Pat dry with paper towels. Place 1/4 cup semi-sweet chocolate chips and 1/2 teaspoon shortening (do not use butter, margarine, spread or oil) in small microwave-safe bowl. Microwave at HIGH (100%) 45 seconds. Stir until chips are melted. Dip cherries into chocolate mixture. Place on wax paper-lined tray. Refrigerate until serving time.
  • FOR CAKES:.
  • Heat oven to 400 degrees F (200 degrees C).
  • Grease six 3/4-cup souffle dishes or 6-ounce custard cups.
  • Sprinkle inside of each with some of the 1 tablespoon sugar.
  • Place dishes in a 9 x 13-inch baking pan or a jelly-roll pan.
  • Melt butter in medium saucepan.
  • Remove from heat.
  • Whisk in cocoa, 1/3 cup sugar, whipping cream and vanilla.

  • Beat eggs, egg yolks and remaining 1/3 cup sugar in large bowl on high speed of mixer about 5 minutes or until slightly thickened and lemon-colored.

2 large eggs
2 large egg yolks
1/4 cup sugar
2 teaspoons all-purpose flour
Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 450 degrees. Butter and lightly flour four 4-ounce molds, ramekins, or custard cups. Tap out excess flour; set aside.
  • Place butter and chocolate in the top of a double boiler or heatproof bowl set over simmering water, and heat until the chocolate has almost completely melted. Meanwhile, beat together the eggs, yolks, and sugar until light and thick.

The recipe makes eight servings, and one key to success is leaving the batter to stand overnight. Then the cakes must be baked just long enough to hold a shape while the center remains soft. Don't worry if they overbake and set firm; they are still the very best of chocolate puddings.

4 eggs, separated
1/2 cup sugar

Steps:

  • Preheat oven to 350°. Grease six 6-oz. ramekins or custard cups with 2 teaspoons butter. Sprinkle sides and bottoms of each ramekin with 1 teaspoon sugar; set aside., In a double boiler or metal bowl over hot water, melt chocolate and remaining butter; stir until smooth. Remove from heat. In a large bowl, beat eggs, egg yolks and remaining sugar until thick and lemon-colored. With a spatula, fold half of the egg mixture into chocolate mixture just until blended. Fold in remaining egg mixture., Transfer to prepared ramekins. Place ramekins on a baking sheet. Bake 17-20 minutes or until a thermometer inserted in the center reads 160° and sides of cakes are set., Remove from oven; let stand for 1 minute. Run a knife around sides of ramekins; invert onto dessert plates. Serve immediately.

100g butter, plus extra to grease
100g dark chocolate, chopped
150g light brown soft sugar
3 large eggs
½ tsp vanilla extract
50g plain flour
single cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Butter 6 dariole moulds or basins well and place on a baking tray.
  • Put 100g butter and 100g chopped dark chocolate in a heatproof bowl and set over a pan of hot water (or alternatively put in the microwave and melt in 30 second bursts on a low setting) and stir until smooth. Set aside to cool slightly for 15 mins.
  • Using an electric hand whisk, mix in 150g light brown soft sugar, then 3 large eggs, one at a time, followed by ½ tsp vanilla extract and finally 50g plain flour. Divide the mixture among the darioles or basins.
  • You can now either put the mixture in the fridge, or freezer until you're ready to bake them. Can be cooked straight from frozen for 16 mins, or bake now for 10-12 mins until the tops are firm to the touch but the middles still feel squidgy.
  • Carefully run a knife around the edge of each pudding, then turn out onto serving plates and serve with single cream.
