BABY BANANAS IN ORANGE SAUCE (BENIN)

A different way to use bananas as a dessert topping. The orange sauce coats the bananas and brightens up vanilla ice cream and cake. Steps:
- Heat orange juice, brown sugar, and lemon juice in a skillet for about 15 minutes on low (there should be small bubbles breaking the surface, but not quite a simmer). The orange juice will reduce and thicken into a syrup.
- Peel bananas and add to syrup. Cook for a few minutes per side, making sure to warm through.
- Serve immediately with ice cream, pound cake, or plain. Both would be all the better!

Steps:
- Whisk dulce de leche sauce and liqueur in small saucepan over low heat until sauce is just warm. Whisk lemon juice, sugar, cinnamon, and nutmeg in large bowl to blend; add bananas and toss to coat.
- Melt butter in large skillet over medium-high heat. Add bananas; sauté until heated through and beginning to brown, turning gently with heat-resistant rubber spatula, about 5 minutes. Transfer 2 bananas to each of 6 plates. Drizzle warm sauce over. Sprinkle with crushed amaretti and serve.

DULCE DE LECHE BANANA CREAM PIE
I am crazy about bananas! It is my favorite fruit for desserts, for snacks, for salads -- mmmm love em! This is a five ingredient recipe from All You Magazine and I don't want to lose it! ***Please note, this recipe is a little labor intensive - cooling time is not listed but pie should be refrigerated at least 2 hours. ***

- Pour condensed milk into a large, heatproof bowl and set over a pot of simmering water to make dulce de leche. Cook, checking water level and adding water as necessary. Stir milk occasionally and cook until it is very thick and golden brown, about 2 1/2 hours.
- Bake crust according to package directions. Cool on a wire rack.
- Slice 2 bananas. Spread half of warm dulce de leche in crust; top with sliced bananas. Spread remaining dulce de leche over bananas. Chill until cold, at least 2 hours.
- Just before serving, combine heavy cream and sour cream in a bowl. Whip, using a mixer on high speed, until soft peaks form. Spread over pie. Slice remaining banana and use to garnish pie. Cut pie into wedges and serve.
DULCE DE LECHE BANANA CREAM DESSERT
Who doesn't love Dulce de Leche? The stuff is wonderful and when it's married to whipped cream and bananas it's even more addicting. Dulce de Leche is also very easy to make. There are several good methods here on Recipezaar such as this slow cooker method Recipe #413493, or this oven method Recipe #260051, or the method used here. This dessert is similar to the Scottish Banoffee Pie (or cake).

- Remove the label from UNOPENED can of sweetened condensed milk, place it in a sauce pot, cover the can completely with water and boil for a minimum of two hours with a lid on the pot. Check from time to time and add water as needed to keep the can completely covered with boiling water.
- DO NOT OPEN THE HOT CAN!
- After boiling for a minimum of two hours, remove the pot from heat and place it in the sink, add cold water to the pot to stop the boiling process. Let the tap run so the hot water spills out of the pan and is replaced with cold tap water. Leave the can to cool.
- Whip the cream in a chilled bowl until it is light and fluffy. Set in refrigerator.
- When the can is cool enough to handle, carefully open and spread the Dulce de Leche over the bottom of the crust.
- Add a layer of sliced bananas over the Dulce de Leche.
- Then spread on a layer of whipped cream -- then another layer of sliced bananas. Then add the final layer of whipped cream.
- Dust the top with cocoa powder, chocolate curls, or crushed toffee.
- This is very rich and will serve several people--but you might not want to share! It's that good.

VEGAN DULCE DE LECHE CARAMEL SAUCE

- Place all ingredients in a pot or a large sauce pan (a deeper pot works better in case of accidental boiling over). Bring to a low boil (watch out that it doesn't boil over - this thing can bubble up pretty quickly!), stirring occasionally.
- Reduce heat to low and leave to simmer for 2 1/2 - 3 hrs, stirring occasionally. Somewhere between the 2 and 3 hour mark keep a closer eye out on the mixture until it looks and feels like it's got the right thickness and consistency. It should reduce roughly by half by the time it's ready.
- When it's at the right consistency, remove from heat and transfer to a glass jar. Allow it to cool at room temperature. Store in the fridge if you're not using it immediately. You can prepare this recipe a few days in advance if you're planning on using it in something.
- Note: It will turn a nice brown color.

Steps:
- Preheat the oven to 450°F
- In a very large ovenproof skillet, melt the butter
- Add the bananas and cook over high heat until lightly browned, 2 to 3 minutes.
- Add the dulce de leche, vanilla beans and seeds and cinnamon sticks and cook over moderate heat just until the dulce de leche is melted.
- Remove skillet & carefully add the rum to the skillet and stir gently just until combined.
- Transfer the skillet to the oven and bake for 5 minutes, or until the bananas are just tender and bubbling.
- Carefully pick out the cinnamon sticks and vanilla beans.
- Serve the bananas and sauce over vanilla ice cream with chopped & toasted macadamia nuts, if desired.
- Enjoy!

- Melt butter in large skillet on medium heat. Add sugar; cook until melted, stirring occasionally. Gradually mix in sour cream; cook on low heat 1 min.
- Cut bananas lengthwise, then crosswise in half. Add, cut sides down, to skillet; cook 1 min., basting occasionally with sauce from bottom of skillet. Stir in nuts.
