If you're looking for a new star for your next cheese platter, you've got to try this gorgeous walnut tapenade.

Number Of Ingredients 7

½ cup sundried tomatoes
1 cup walnuts (toasted in shallow tin for 8-10 minutes at 180°C)
½ cup parmesan (finely grated)
½ cup fresh parsley
2 cloves garlic
½ teaspoon salt
½ cup extra virgin olive oil or avocado oil

Steps:

  • Soak sundried tomatoes in boiling water for 10 minutes then drain.
  • Put freshly toasted walnuts in a clean tea towel, cover and rub to remove most of the skin.
  • Place soaked tomatoes, walnuts, parmesan, parsley, garlic, salt and a pinch of freshly ground black pepper in a pestle and mortar or blender and grind into a chunky paste. Add oil and mix or blend until well combined.
  • Taste and adjust seasoning if needed. Place in an airtight container and refrigerate until ready to use. This will keep well for up to two weeks.

Number Of Ingredients 12

1 cup chopped stemmed dried Calimyrna figs
1/3 cup water
1/3 cup chopped pitted Kalamata olives or other brine-cured black olives
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon drained capers, chopped
1 1/2 teaspoons chopped fresh thyme
2 5.5-ounce logs soft fresh goat cheese (such as Montrachet), each cut crosswise into 1/2-inch-thick rounds
1/2 cup chopped toasted walnuts
1/4 cup toasted walnut halves
Fresh thyme sprigs (optional)
Assorted breads and/or crackers

Steps:

  • Combine chopped figs and 1/3 cup water in heavy medium saucepan. Cook over medium-high heat until liquid evaporates and figs are soft, about 7 minutes. Transfer to medium bowl. Mix in olives, olive oil, balsamic vinegar, capers, and chopped thyme. Season tapenade to taste with salt and pepper. (Can be made 3 days ahead. Cover and refrigerate. Bring to room temperature before serving.)
  • Arrange overlapping cheese rounds in circle in center of medium platter. Stir chopped walnuts into tapenade; spoon into center of cheese circle. Garnish with walnut halves and thyme sprigs, if desired. Serve with breads and/or crackers.

1/3 cup chopped pitted kalamata olive
2 tablespoons extra virgin olive oil
1 cup chopped calimyrna fig

Steps:

  • Serve with great crackers.

10 cloves garlic
2 lemons, juice of
1 (10 ounce) can black olives
1 cup chopped parsley
8 green onions, coarsely chopped
1 tablespoon chopped basil
1 cup walnuts
2 cups finely chopped grated parmesan cheese
3/4 cup olive oil
1 loaf baguette, sliced in thin rounds

Steps:

  • Press the garlic into the lemon juice or if you don't have a garlic press, mince and put it into the lemon juice, while you prepare the other items.
  • Put the rest of the ingredients into a food processor and process into a finely chopped paste.
  • Put in a bowl and mix in the garlic, lemon juice and olive oil well.
  • Serve with bread slices.
